Brats, Onions, and Apples image

A very hearty meal that's good in the autumn or winter. Lots of flavor and very much a comforting meal after a long day in the cold. It pairs well with coleslaw.

1 tablespoon olive oil
4 bratwurst
2 apple, cored and sliced
1 sweet onion, sliced
2 (12 fluid ounce) cans or bottles beer
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a skillet over medium heat. Cook bratwurst in hot oil until browned, 2 to 3 minutes per side. Remove bratwurst to a plate, reserving drippings in the skillet.
  • Stir apple and onion slices into the reserved drippings; cook and stir until the onion softens, about 6 minutes. Return bratwurst to the skillet, nestling them into the onion mixture. Pour beer over the sausages; season with salt and pepper.
  • Bring the beer to a simmer, reduce heat to medium-low, and cook until the the bratwurst is no longer pink in the center, 25 to 30 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

I found this recipe in the local newspaper and it is to die for. It's one of my husband's most requested dishes. The woman who came up with it, Lorie Roach, won first place in a contest by making it. We completely understand why.

6 slices pepper bacon
6 bratwursts, cut into bite-sized pieces (about 1 lb.)
1 medium sweet onion, chopped
2 large granny smith apples, peeled & chopped
1/2 medium green bell pepper, chopped
1/2 medium red bell pepper, chopped
2 garlic cloves, minced
1/3 cup brown sugar
2 (16 ounce) cans chickpeas, drained
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1 1/2 cups shredded white cheddar cheese

Steps:

  • In a large pot, cook bacon over medium until crisp. Crumble and set aside.
  • Add brats to pot and cook until browned and crispy around edges.
  • Add onion, apples, peppers and garlic. Cover and cook about 5 minutes, until veggies are soft.
  • Sprinkle with brown sugar and cook until sugar is melted, stirring well.
  • Add chickpeas, onion powder, garlic powder, salt and pepper. Cook, uncovered for about 10 minutes, stirring often.
  • Remove from heat.
  • Serve with shredded cheese and bacon bits.

8 sausages
2 tablespoons butter
2 medium onions, halved and sliced
3 large apples - peeled, cored, and cut into thin wedges
2 tablespoons apple cider or red wine vinegar
2 tablespoons brown sugar, packed
salt and pepper to taste

Steps:

  • Prepare grill for high heat.
  • With a fork, poke sausages several times. Place in a pot, cover with water, and simmer over medium-high heat until cooked through, about 7 minutes. Remove from heat, and set aside.
  • Warm butter in a skillet over medium heat. Stir in onions, and cook until soft and translucent. Stir in apples, vinegar, and brown sugar; cook, stirring gently, until caramelized, about 10 to 15 minutes. Season with salt and pepper.
  • Meanwhile, place sausages on grill (or under broiler), and cook until well browned. Serve on a mound of caramelized apples and onions.

I needed to make something for dinner and thought I'd try brats in the crock pot. They turned out great! All the kids had 2 and wanted more, LOL! I didn't have any beer so I tried pouring apple juice over it all and it turned out just as tasty. You could use beer if you like. No need to fire up the grill. It cooks all day while you're at work and is ready when you get home!

8 bratwursts
2 tablespoons olive oil or 2 tablespoons canola oil
2 garlic cloves, minced
1 large onion, sliced into rings
2 apples, cored and sliced into rings
2 cups apple juice or 2 cups beer

Steps:

  • Place onion rings into bottom of the crock pot and add apple rings.
  • Heat oil in a large skillet and add brats and garlic. Brown on all sides, poke a couple holes, and transfer to the crock pot.
  • Pour the apple juice or beer over all, cover, and cook on low for 6-8 hours.
