This is the style of kugel we'd get in a New York City area Jewish deli, and that my relatives would make for holidays. There seems to be endless variations of this noodle pudding now, but for me this is the authentic original version. Refrigerate leftovers.

- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
- Mix cottage cheese, sour cream, sugar, raisins, eggs, salt, cinnamon, and nutmeg together in a large bowl. Mix in cooked noodles. Pour into the prepared baking dish.

- Preheat oven to 350. Grease an 8-inch square baking dish.
- Cook noodles until tender, drain.
- Put noodles in a large bowl, add the butter, and stir until butter is melted.
- Beat together eggs, sugar, vanilla and salt. Stir in the ricotta and sour cream or cream cheese. Stir into the noodles and add the raisins.

- Heat oven to 350 degrees F.
- Butter a large 13x10-inch (4 quart) baking dish; set aside.
- Cook noodles according to package directions. Drain and return to saucepan along with butter; mix well to coat the noodles.
- In a medium bowl, stir together the eggs, cream, sugar, salt, sour cream and pineapple.
- Cut the sweet potatoes into small chunks then add to the egg mixture.
- Stir sweet potatoes into the noodle mixture, mix well then transfer to the prepared baking dish. Sprinkle with pumpkin pie spice.

JERUSALEM SWEET-HOT NOODLE CASSEROLE/ YERUSHALMI KUGEL
This is a very unique dish that can be found all over Jerusalem. It is a noodle casserole with carmelized sugar and lots of black pepper. Serve this warm as a different kind of side dish. I originally got this recipe from a community cookbook that was given to me along with all the other brides that got married that same year. Recipe is from Susie Gale with only a minor change.

- Cook and drain noodles except for about 3 tablespoons of water. Cover and set aside.
- Boil the white sugar and oil. When the oil begins to separate and turn a deep brown and mushroom up a bit add the noodles stirring constantly. Make sure all the noodles turn brown.
- Mix in eggs, cinnamon, brown sugar, salt and pepper again stirring constantly.
- Pour noodle mixture into baking pan and bake at 375 for about an hour or until the top is slightly crispy.

- Butter a 13 x 9-inch baking dish.
- Cook egg noodles in a pot until tender-firm, about 6-7 mins; drain and set aside.

SWEET NOODLE PUDDING/KUGEL (NUT TOPPING)
I like the way this sounds but haven't tried it yet. It's from Marcia Saltzman in Pingry Cooks. It has chopped nuts in the topping which is a bit different from the usual. If making for company, make sure there are no peanut allergies! You need to have this in the refrigerator all day or or night before baking so plan accordingly.

MY OWN SPICY SWEET NOODLE KUGEL
I love kugel, a Jewish noodle pudding. I used the ingredient list for RSC#18 to inspire this one. Instead of raisins, I used mango. The allspice & ginger add a nice little kick. This is very easy to assemble. My family really loved this & I hope you do, too!

- Preheat oven to 350°F Grease a 9x13 pan.
- Cook noodles until al dente, drain. Place in a large bowl, add butter & stir until melted.
- Combine diced mango, cream, ginger & 1t allspice in a small saucepan. Bring to a boil. Turn off heat & allow to steep.
- Add sour cream, cottage cheese, 1 1/2c sugar, beaten eggs & mango/cream mixture to noodles. Stir well until combined. Pour into greased 9x13 pan.
- Combine 1T sugar, cinnamon & 1/2t allspice in small bowl. Sprinkle over top of kugel. Bake 35-45 minutes until set & browned on top.
- Allow to sit for a few minutes then enjoy!
MICROWAVE SWEET NOODLE KUGEL
What really brought me to this recipe is that it uses uncooked noodles. The standing time is very important, because if you are too impatient the noodles will come out a little too al dente to your liking.

- Mix with UNCOOKED noodles.

- Preheat oven to 400°F. Wrap sweet potatoes individually in foil and roast in the oven until soft and completely cooked through, about 1 hour and 10 minutes. Let cool completely. Peel skin off sweet potatoes using your hands (and a table knife, if it helps), then puree with the bourbon in a blender or food processor until completely smooth. This should yield about 3 cups of puree. If you yield more than 3 cups, set the excess aside for another use or discard. (If you want, you can do this ahead and refrigerate the puree for up to 2 days.) Lower oven to 350°F. In a pot of heavily salted water, cook the egg noodles al dente (about 5 minutes, or 2 minutes less than the package directions say). - Grease a 9"x13" glass baking dish and set aside.
- Cook the noodles according to the directions on the box. Cook the noodles only to the al dente stage.
- Drain them, return them to the cooking pot and add the melted margarine. Mix well and set aside to cool.
- Peel the apples, cut them in quarters, remove the core and seeds and slice the apples into the noodles. Add the raisins, cinnamon, sugar, honey and salt. Mix well.
- Gently beat the eggs together and mix into the noodle mixture.
- Pour into the greased pan. Cut a piece of aluminum foil and spray one side with non-stick cooking spray. Cover the kugel tightly and bake at 350°F for about 30 minutes.

- 1. Preheat the oven to 350°. In a large pot of boiling salted water, c egg noodles until al dente. Drain the noodles, reserving 1 cup of the c water. Add the chopped sour cherries to the reserved cooking water stand for 5 minutes. 2.
