SPICY SWEET ONION RINGS
These are truly something different...an onion ring recipe calling for condensed milk & chipotle peppers! The original version in Southern Living magazine used 1/4 cup of jalapeños, but I like the slightly smoky flavor the chipotles add. Our family likes these served with ranch dressing.

Steps:
- Peel the onion& slice into 1/4 inch slices: Separate into rings.
- Combine flour& cornmeal, mix well.
- Combine beaten egg, sweetened condensed milk,& club soda: stir into flour/cornmeal mixture.
- Finely mince 1 or 2 chipotle peppers (depending on size& desired heat level) and stir into batter mixture.
- Dip onion rings into batter coating well, shake lightly, and fry in deep hot oil (350-375°F): avoid overcrowding.
- Fry until golden brown& drain the rings on paper towels.

CRISPY FRIED ONION RINGS

Steps:
- In a shallow bowl, whisk the first 5 ingredients. Separate onion slices into rings. Dip rings into batter. In a deep-fat fryer, heat 1 in. of oil to 375°. In batches, fry onion rings until golden brown, 1 to 1-1/2 minutes on each side. Drain on paper towels. Serve immediately.

SUNNY'S EASY ONION JAM
Steps:
- In a medium saucepan on medium-low heat, add the pearl onions, vinegar, sugar, shallots, red onions, a pinch of salt, a few grinds of pepper and 1/4 cup water. Stir to combine, then cook until the onions are completely tender and caramelized, 40 to 45 minutes.
- Add the thyme and scallions to the cooked onions and refrigerate until ready to use. Serve on nachos, burgers, hot dogs, etc.
TEMPURA BATTERED ONION RINGS
Steps:
- Fill a large Dutch oven or fryer with oil and preheat to 350 degrees F.
- Sift dry ingredients into a large mixing bowl and make a well in the center. Crack the egg yolk into a separate bowl and break it up with a fork. Add this to the well in the middle of the flour and slowly pour in the beer as you whisk. Gradually make wider circles with the whisk to incorporate the dry ingredients from the edges - this will minimize the chance of lumps. Continue until all the dry ingredients are mixed and the batter is of a smooth consistency.
- Take the onion rings and remove the thin membrane found between the layers; (otherwise the batter won't stick as well). In a large dish add some rice flour, and season with salt and pepper, to taste. Coat each ring in the flour. Dip in the batter and fry in hot oil in batches until golden. Drain on paper towels and season with salt.
RAJUN' CAJUN ONION RINGS
Steps:
- In a large bowl, whisk together the sour cream, the milk and the hot sauce. Add the onion rings and set aside while you season the flour. In a large baking dish or pie plate, combine the celery salt, onion powder, garlic powder, mustard powder, paprika, chili powder, white pepper, salt and the flour.
- Heat about 3 inches of oil to 350 degrees F in a large Dutch oven.
- Remove the onion rings from the liquid mixture and dredge in the flour mixture. Repeat the process to double coat the rings. Place the onion rings into the oil in batches and fry until golden brown and crispy, about 5 minutes. Drain the onion rings on a paper towel lined plate and season with salt while still hot, then transfer to a serving platter. Serve with the Crab Burger and Celery Root Remoulade.
SOUTHWESTERN ONION RINGS
These light crispy onion rings are sliced thin and spiced just right with garlic powder, cayenne pepper, chili powder and cumin. My family likes them alongside grilled burgers. They're even good as leftovers. -Tamra Kriedeman, Enderlin, North Dakota

- Cut onions into 1/4-in. slices; separate into rings. Place in a large bowl; cover with buttermilk and soak for 30 minutes, stirring twice. , In a shallow dish, beat eggs and water. In another shallow bowl, combine the flour, salt, chili powder, cayenne, sugar, garlic powder and cumin. Drain onion rings; dip in egg mixture, then roll in flour mixture., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry onion rings, a few at a time, for 1 to 1-1/2 minutes on each side or until golden brown. Drain on paper towels.
