1 (7-ounce) jar marshmallow cream (clouds)
1 1/2 cups white sugar (princess's diamonds)
2/3 cup evaporated milk (mountain snow)
1/4 cup butter (candy bricks)
1/4 teaspoon salt (the lost sea)
3 cups milk chocolate chips (from the milky way)
1/2 cup chopped nuts (hidden forest)
1 teaspoon vanilla extract (magical island)

Steps:

  • Line an 8 by 8-inch pan with aluminum foil. Set aside.
  • In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter, and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly until thick.
  • Remove from heat and pour in the milk chocolate chips. Stir until chocolate is melted and mixture is smooth. Stir in nuts and vanilla. Pour into prepared pan. Chill in refrigerator for 2 hours or until firm. Cut to small squares and wrap in the "dream" or parchment paper.

This recipe is courtesy of Sweet Dreams Bakery in Memphis --- I have made this cake using 1/4 cup oil and 3/4 cup buttermilk and it was still fantastic! --- it is advised to use only a high-quality baking cocoa powder for this it will make a huge taste difference --- no eggs in this cake, and it only gets better with age, you may make a day in advance cover with a cake dome and let stand at room temperature.

3 cups all-purpose flour
2 cups sugar
1/2 cup sifted unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups cold water
1 cup corn oil
1 tablespoon pure vanilla extract
1 1/2 cups mini chocolate chips, divided
1/2 cup unsalted butter, plus
2 tablespoons unsalted butter, room temperature
5 cups confectioners' sugar, sifted
1/2 cup full-fat milk (I used half and half cream)
2 teaspoons vanilla
3/4 cup sifted unsweetened cocoa powder, plus
3 tablespoons sifted unsweetened cocoa powder

Steps:

  • For the cake; set oven to 350°F.
  • Set oven rack to second-lowest position.
  • Butter and flour three 9-inch cake pans or butter and line bottoms with parchment paper.
  • In a medium bowl sift first 5 ingredients into a medium bowl.
  • In a large bowl mix the water, oil and vanilla, then whisk in dry ingredients until well blended.
  • Divide the batter evenly between the pans.
  • Sprinkle 1/2 cup chocolate chips over the batter in each pan.
  • Bake cakes about 25-30 minutes or until they test done.
  • Cool completely.
  • For frosting; beat the butter in a large bowl until fluffy.
  • Gradually beat in 3 cups confectioners sugar.
  • Beat in 6 tablespoons milk and 2 teaspoons vanilla.
  • Add in sifted cocoa and remaining 2 cups confectioners sugar; beat until well blended (adding in more milk if needed to achieve desired consistency).
  • Place 1 cake layer on a plate, chocolate chip side up, then spread about 2/3 cup frosting over the cake.
  • Top with second cake layer chocolate chip side up, then spread 2/3 cup frosting over.
  • Top with remaining cake layer chocolate chip side up, then spread frosting over sides and top of the cake.
  • Decorate as desired.

1 cup unsalted butter
1 1⁄2 cups light brown sugar, firmly packed
1 egg, room temperature
1 teaspoon vanilla
2 cups unbleached flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground ginger
1⁄2 teaspoon salt
12 ounces semi-sweet chocolate chips
1 cup chopped walnuts
1 cup powdered sugar

Steps:

  • Cream butter and mix in brown sugar, egg and vanilla. Combine flour, baking soda, cinnamon, ginger and salt and blend into butter mixture. Fold in chocolate chips and walnuts (Sometimes I leave these out or substitute pecans.). Refrigerate until dough is firm. Preheat oven to 375ºF. Lightly grease baking sheets. Break off small pieces of dough and roll into 1" rounds. Dredge in powdered sugar. Arrange on prepared baking sheets at least 2" apart. Bake 10 minutes. Cool 5 minutes on the sheets before transferring to racks to cool completely. Store in airtight container.

1 teaspoon vanilla
2 cups unbleached all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground ginger
½ teaspoon salt
1 12 oz package semisweet chocolate chips
1 cup chopped walnuts
1 cup powdered sugar

Steps:

  • Cream butter using electric mixer. Beat in brown sugar, egg and vanilla. Combine flour, baking soda, cinnamon, ginger and salt. Blend into butter mixture. Fold in chocolate chips and walnuts. Refrigerate until firm. (Can be prepared 1 day ahead). Preheat oven to 375F. Lightly grease baking sheets. Break off small pieces of dough, roll between palms into 1 inch rounds. Dredge rounds in powdered sugar. Arrange rounds on prepared sheets, spacing at least 2 inches apart. Bake 10 minutes. Let cool 5 minutes on sheets. Transfer to racks and cool. Store in airtight container.

Sweet Potato Dreams image

Lynn House, most recently of the Chicago bar Blackbird, drew on her Southern background for this rich cocktail. "One of my greatest memories as a child was making pies with my grandmother for the holidays," she said. "There would be apple, pecan, pumpkin and, of course, sweet potato pies." To her beloved sweet potatoes, Ms. House adds rum, maple syrup, cream and cinnamon. "Adding the whole egg to the cocktail turns it into a flip, which is a very traditional holiday drink," she said. The result is a creamy and comforting dessert drink, with an almost puddinglike texture.

1 8-ounce can diced sweet potatoes in light syrup
2 ounces spiced rum
1 egg
1/2 ounce maple syrup, preferably grade B
Whipped cream, slightly sweetened
1 cinnamon stick, or pinch ground cinnamon, for garnish

Steps:

  • Empty the can of sweet potatoes, including syrup, into a blender. Purée.
  • In a cocktail shaker, combine 2 heaping teaspoons of the purée with the rum, egg and maple syrup. Shake vigorously without ice. Half-fill shaker with ice and shake again. 1 small potato, peeled and chopped
2 tablespoons butter
1 small leek, chopped (1 to 1 1/2 cups)
2 large carrots, finely chopped
1/2 teaspoon grated fresh ginger or 1/8 teaspoon powdered; or 1/2 teaspoon curry
1/4 teaspoon thyme
1/8 teaspoon nutmeg
1/4 teaspoon salt
1/2 teaspoon pepper
1/2 stalk celery, chopped
2 1/2 cups milk
Garnish: carrot curls and croutons

Steps:

  • Boil the potato in 2 cups of water until tender, about 15 minutes. Drain, save the broth, and set the potato aside.
  • Melt the butter in a soup pot on medium heat.
  • Add the leek, half the carrots, the ginger, thyme, nutmeg, salt, and pepper. Sauté for 5 minutes, stirring with a wooden spoon.
  • Add the celery, the remaining carrots, the cooked potato, and the potato broth.
  • Add 1 cup water, and stir.
  • Bring to a boil, then reduce heat and simmer, covered, until the carrots are tender, about 20 minutes.
  • In a blender or a bowl, blend or mash 2 cups of the soup with the milk until thick and silky smooth.
  • Return the blended soup to the soup pot, and stir.
  • Ladle into bowls and garnish.
