Combination Burritos image

Another one of my mother-in-law's recipes...she could and did make a burrito out of anything. This is just one of her quick recipes that she taught me to cook for his lunches when we were first married.

1 1/2 lb ground beef
1/2 small onion, diced
1 Tbsp garlic, chopped
1 large jalapeno, diced
1/2 tsp garlic salt
1 Tbsp black pepper
1/2 tsp chili powder
1 tsp dried coriander
1 tsp ground cumin
1 can(s) (15 oz) refried beans
1/2 c water or beef broth
2 c shredded mexican blend cheese
10 - 12 flour tortillas, heated between two moist paper towels until pliable.

Steps:

  • 1. In a large non-stick frying pan, break up the ground beef and add onion, garlic, Jalapeno pepper, coriander and cumin. Break up the ground beef with a wooden spoon and cook until it is no longer pink and the onions are beginning to get tender.
  • 2. Add the refried beans and the water; stir and cook until well heated. Add 1 cup of the shredded cheese and heat until melted.
  • 3. Tear off a piece of wax paper of aluminum foil and lay 1 tortilla in the middle. Spoon 2 tablespoonfuls of meat mixture down the center of the tortilla. Sprinkle some more cheese on the meat. Fold one side of the tortilla over the meat and pull it tight against the meat; fold each end up towards the middle and continue rolling into a burrito. Wrap the tortilla in the wax paper or foil and place seam down in a warm, covered pan.
  • 4. These are great served with Spanish rice corn chips and pica de gallo (see my Pica de Gallo recipe on this site).
