Use this master sweet dough recipe to make all kinds of different desserts like cinnamon rolls, sticky buns, doughnuts and more!

Number Of Ingredients 7

8 ounces milk (110ºF)
10 grams dried instant yeast ((3 teaspoons))
25 ounces all-purpose flour (or bread flour)
8 ounces butter (softened)
4 ounces sugar
1 teaspoon salt
3 large eggs (room temperature)

Steps:

  • Warm milk to 110ºF. Add in 1 Tablespoon of your sugar and then the yeast and whisk to combine. Set aside for 5 minutes.
  • Add your flour to your mixing bowl and then add in your milk/yeast mixture. Stir on low to combine
  • While mixing on low, add in your sugar, eggs, butter and salt until combined
  • Increase the speed to medium and let mix until the dough cleans the sides of the bowls and feels elastic and smooth. The dough should bounce back when you touch it with your finger. This can take 8 - 12 minutes *do the window test - see blog post for details*
  • Shape the dough into a smooth ball and then place it into a greased bowl. Cover with a tea towel and let rise for 90 minutes in a warm place ***optional***(I pre-heat my oven to 170ºF for five minutes then TURN THE OVEN OFF. It should be barely warm inside. Place a bowl of warm water in the back of the oven and your covered bowl of dough into the oven and shut the door)
  • You can now shape the dough into rolls, make cinnamon rolls, sticky buns etc. See the blog post above for links to other recipes.

Number Of Ingredients 9

1/2 c milk
1/2 c sugar
1 1/2 tsp salt (can use less)
1/4 c butter, melted
1/2 c warm water (105-115 degrees)
2 pkg Fleischmann's active dry yeast
2 large eggs, beaten
4 1/2 c all-purpose flour, may need a bit more or less, see directions
additional butter for coating bowls used and brushing on tops of baked rolls

Steps:

  • 1. Scald milk (bring just to a boil and remove from heat immediately).
  • 2. Stir in sugar, salt, and butter. Set aside and allow to cool to lukewarm.
  • 3. In a large bowl mix warm water and yeast. Stir until dissolved.
  • 4. Stir in lukewarm milk mixture.
  • 5. Add beaten eggs.
  • 6. Stir in half the flour. Beat until smooth. Add remaining flour gradually, mixing as you go. You may need a bit more or less than the total 4 1/2 cups called for in the recipe, depending on the humidity and other factors.
  • 7. Your dough should be elastic and slightly stiff but not dry.
  • 8. Turn dough out onto a floured board and knead until smooth and very elastic. This usually takes 8-10 minutes.
  • 9. Butter the inside of a large mixing bowl. Put dough in bowl and turn dough over a couple of times to coat it all with the butter.
  • 10. Cover bowl and place in a warm place so it can rise.
  • 11. It will take about 1 hour to double in bulk.
  • 12. At that time punch dough down and turn out onto a lightly floured board to shape.
  • 13. At this point, you can shape and fill as desired. To make dinner rolls, pinch off about 2-3 tablespoons of dough and shape into a ball. Place each one in a buttered muffin tin or baking pan, barely touching each other, do not crowd rolls.
  • 14. Cover prepared rolls and allow to rise in a warm place until doubled in bulk, again about 1 hour.
  • 15. Rolls should now touch each other. (A little more rising will occur during baking.)
  • 16. Preheat oven to 350 degrees when rolls are about 10 minutes from being ready for baking. When ready to bake place rolls in the oven and bake for 20-25 minutes. They should be browned nicely and smell so good and yeasty!
  • 17. Brush tops of rolls with melted butter immediately when removed from the oven.
  • 18. Allow rolls to sit for at least 10-15 minutes before eating.

3 cups all-purpose flour, divided
1/4 cup sugar
1 package (1/4 ounce) quick-rise yeast
1/2 teaspoon salt
1/2 cup milk
1/2 cup butter, softened
1/4 cup water
1 egg

Steps:

  • In a bowl, combine 2 cups flour, sugar, yeast and salt. In a saucepan, heat milk, butter and water to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg and remaining flour; beat until smooth. Shape into a ball. Do not knead. Cover and let rest for 10 minutes. Use for Braided Coffee Cake or Coffee Cake Ring.

I have been making cinnamon rolls and dinner rolls with this recipe since I was about 13. This recipe came from the Betty Crocker Picture Cookbook in the 60's.

1/2 cup warm water
2 (1/4 ounce) packages active dry yeast
1 1/2 cups milk, lukewarm
1/2 cup sugar
2 teaspoons salt
2 eggs
1/2 cup shortening
7 -7 1/2 cups flour

Steps:

  • Mix water and yeast in large mixing bowl.
  • Stir until dissolved.
  • Add milk, sugar salt, eggs, shortening and 1/2 of the flour.
  • Mix until smooth and pour out onto floured surface. Knead while adding the additional flour. Knead until smooth and elastic( about 5 minutes).
  • Round up in greased bowl with greased side up. Cover with damp cloth.
  • Let rise in warm place until double (about 1&1/2 hours).
  • Punch down; let rise again until almost double.
  • Dough is ready to to make into cinnamon rolls or dinner rolls now.

SWEET DINNER ROLLS

This dough makes wonderful dinner rolls but can also be used to make cinnamon rolls. Mixing it in your bread machine but bake the rolls in the oven. They're light, soft and sweet.

½ cup warm water (110 degrees F/45 degrees C)
½ cup warm milk
1 egg
⅓ cup butter, softened
⅓ cup white sugar
1 teaspoon salt
3 ¾ cups all-purpose flour
1 (.25 ounce) package active dry yeast
¼ cup butter, softened

Steps:

  • Place water, milk, egg, 1/3 cup butter, sugar, salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough/Knead and First Rise Cycle; press Start.
  • When cycle finishes, turn dough out onto a lightly floured surface. Divide dough in half. Roll each half into a 12 inch circle, spread 1/4 cup softened butter over entire round. Cut each circle into 8 wedges. Roll wedges starting at wide end; roll gently but tightly. Place point side down on ungreased cookie sheet. Cover with clean kitchen towel and put in a warm place, let rise 1 hour. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  • Bake in preheated oven for 10 to 15 minutes, until golden.

Came across this recipe in one of my Grandmothers old recipe books. It makes one of the softest, yet not sticky doughs I have ever worked with. This is THE ONLY dough I will use for my cinnamon rolls, and fruit rolls.

Number Of Ingredients 8

2 (4 1/2 teaspoon) packages yeast
1 1/2 cups warm water
1 cup lukewarm milk
1 cup soft margarine or 1 cup butter
2 eggs, beaten
1/4 cup sugar
1 teaspoon salt
4 1/2 cups flour (approx.)

Steps:

  • Soften yeast in water in large bowl.
  • Add milk, margerine, eggs and sugar.
  • Stir in 1/2 of flour.
  • Add salt to second half of flour and stir well.
  • Turn out onto lightly floured surface and knead till smooth, using flour as needed, but sparingly as dough needs to stay soft.
  • Let rise till double in a warm place (I often put my bowl in a sink of hot water if Im in a hurry).
  • shape as desired, or makes 18 cinnamon rolls.
  • Bake 350 till golden or desired brown-ness.
