SWEET-PICKLED CUCUMBER CHIPS

Number Of Ingredients 9

1 1/2 cups distilled white vinegar or apple-cider vinegar
1 1/4 cups sugar
1/2 teaspoon mustard seeds
1/2 teaspoon whole black peppercorns
1/4 teaspoon celery seeds
1/4 teaspoon celery seeds
Coarse salt
16 ounces Kirby cucumbers, trimmed and cut into 1-inch rounds
1/2 small white onion, cut into 1/4-inch wedges

Steps:

  • Combine vinegar, sugar, spices, and 2 tablespoons salt in a saucepan. Bring to a boil, stirring until sugar is dissolved. Fill clean containers tightly with cucumbers and onion. Add boiling brine to cover completely. Let cool completely. Cover, label, and refrigerate at least 1 week before serving, or up to 3 months.

PICKLES:
cucumbers, dill size or smaller
1 Tbsp salt per quart
1 tsp alum per quart
SYRUP:
3 c white sugar
1 1/2 Tbsp mixed pilkling spices
1 1/2 c water
green food coloring as desired

Steps:

  • 1. PICKLES: Wash and cut cucumbers in round slices. Put in quart jars.
  • 2. For each quart add alum and salt and fl\ill with cold cider vinegar. Seal, but not tightly, let stand 2 to 3 months or longer.
  • 3. Anytime after that drain and cover with the following syrup
  • 4. SYRUP: Mix, bring to boil, let boil 2 to 3 minutes and pour over the cucumbers that have been packed into quart jars. Seal. Ready in two weeks.
  • 5. Do not add any more vinegar.
  • 6. Before using set jar in the refrigerator for a couple of hours. They are crisp like ice.

Yield 10 cups chips (2 cups dip).

2 cups sour cream or plain yogurt
2 teaspoons lemon juice
1/2 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon dill weed
1/8 teaspoon pepper
1 large cucumber
3 large sweet potatoes
Oil for deep-fat frying
2 teaspoons seasoned salt

Steps:

  • In a small bowl, combine the first six ingredients. Peel cucumber and remove seeds. Place cucumber in a food processor; cover and process until finely chopped. Remove half of cucumber; set aside. Process remaining cucumber until pureed; add chopped and pureed cucumber to sour cream mixture. Refrigerate for at least 1 hour., Cut sweet potatoes into 1/16-in.-thick slices. Place in a large bowl; cover with cold water. Soak for 30 minutes., Drain; pat dry with paper towels. In an electric skillet or deep fryer, heat oil to 375°. Fry potatoes in batches for 2-3 minutes or until golden brown, stirring frequently. Remove with a slotted spoon; drain on paper towels., Immediately sprinkle with seasoned salt; serve with dip. Store leftover chips in airtight containers.

How to make Sweet Cucumber Chips

Number Of Ingredients 8

2 pounds pickling cucumbers (4 to 5 inches long)
2 1/2 cups distilled white vinegar (5% acidity)
2 cups sugar
1/4 cup McCormick® Onions, Minced
2 tablespoons non-iodized salt
1 tablespoon McCormick® Celery Seed
1 tablespoon McCormick® Mustard Seed
1 teaspoon McCormick® Turmeric, Ground

Steps:

  • Wash cucumbers well with cold water. Trim ends and cut into 1/8-inch thick slices. Place cucumber slices into 4 hot sterilized pint or 8 half-pint canning jars.
  • Mix remaining ingredients in medium saucepan. Bring to boil on medium-high heat, stirring to dissolve sugar and salt. Reduce heat to low; simmer 5 minutes.
  • Ladle over cucumbers, leaving 1/4-inch headspace. Stir each jar well. Cool. Cover with metal lids and screw on bands.
  • Refrigerate pickles. Shake jars once a day for 3 to 5 days to redistribute seasonings and blend flavors. Store in refrigerator up to 2 months.
