While cinnamon swirl bread is a natural for breakfast, we love it so much we enjoy it all day long. This is a nice twist on traditional cinnamon swirl yeast breads. -Helen Richardson, Shelbyville, Michigan

2 cups all-purpose flour
1-1/2 cups sugar, divided
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 large egg, room temperature
1/4 cup canola oil
3 teaspoons ground cinnamon
GLAZE:
1/4 cup confectioners' sugar
1-1/2 to 2 teaspoons whole milk

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour, 1 cup sugar, baking soda and salt. Combine buttermilk, egg and oil; stir into dry ingredients just until moistened. In a small bowl, combine cinnamon and remaining sugar. , Grease the bottom only of a 9x5-in. loaf pan. Pour half the batter into pan; sprinkle with half the cinnamon-sugar. Carefully spread with remaining batter and sprinkle with remaining cinnamon-sugar; cut through batter with a knife to swirl., Bake 45-50 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pan to a wire rack to cool completely. Combine confectioners' sugar and enough milk to reach desired consistency; drizzle over loaf.

This easy, basic, yeast, sweet-bread recipe uses only eight ingredients and can be made into dinner rolls, cinnamon rolls or sticky buns.

1 cup milk
⅓ cup white sugar
⅓ cup butter
1 tablespoon active dry yeast
4 cups all-purpose flour
½ teaspoon salt
2 eggs
2 tablespoons vegetable oil

Steps:

  • In a small saucepan over medium heat, combine the milk, sugar and butter. Heat until slightly warm to the touch then remove from heat and stir in the yeast. Let stand until foamy, about 10 minutes.
  • In a large bowl, stir together the flour and salt. Mix in the eggs, oil and the yeast mixture. Mix until dough pulls away from the sides of the bowl. Turn dough out onto a floured surface and continue to knead until the dough is smooth and elastic, about 10 minutes. Grease a large bowl with 1 tablespoon of oil. Place the dough into the bowl and turn once to coat. Cover and let stand in a warm place until double in size, about 1 hour.
  • Use remaining oil to grease a cookie sheet or 9x13 inch pan. For plain rolls, punch down dough and divide into 12 equal pieces. Roll the pieces into balls and place them into the greased pan side by side. Let dough rise for 20 to 25 minutes, or until almost double. Preheat oven to 375 degrees F (190 degrees C).
  • Bake for 20 to 25 minutes in the preheated oven, until rolls are golden brown.

For the cinnamon/sugar blend use:
1 box yellow cake mix
1 small box instant vanilla pudding mix
4 eggs (add one at a time)
3/4 cup oil
3/4 cup water
1 tsp. vanilla extract
1/2 cup brown sugar
1 Tbsp cinnamon

Steps:

  • Place the first six ingredients together in a mixing bowl and blend on high for 8 minutes. I love my KitchenAid blender, it makes everything so much easier. Grease two loaf pans generously with Pam. Fill each pan half way and then sprinkle the cinnamon/sugar blend in a layer. Then top off with the rest of the batter and sprinkle the loaf with the remaining sugar blend. I swirled a knife thru each loaf to marble the cinnamon throughout and to make it pretty when it is cut. I then baked the loaves for 45 minutes in a 350 degree oven. Cool and then glaze with frosting. For the glaze you will need: 1 1/2 cups powdered sugar 2 Tbsp milk Add the milk I Tbsp at a time and add a little more if you need to reach the desired consistency. Drizzle over the loaf and enjoy! Beautiful and yummy, this is a great snack for any time of the day!
