1 tablespoon coconut oil
1 large onion, chopped
4 cloves garlic, minced
1 tablespoon minced fresh ginger, or more to taste
1 tablespoon curry powder, or more to taste
2 teaspoons ground coriander
2 teaspoons ground cumin
8 cups vegetable broth
1 cup dry red lentils, rinsed and drained
1 head cauliflower, broken into florets
2 cups cubed sweet potato
3 cups fresh spinach

Steps:

  • Heat coconut oil in a large saucepan over medium heat. Add onion and garlic and saute until translucent, 5 to 6 minutes. Stir in ginger, 1 tablespoon curry powder, coriander, and cumin and saute until fragrant, about 2 minutes more. Pour in broth and lentils and stir to combine. Bring mixture to a low boil; reduce heat and simmer for 5 minutes.
  • Stir in cauliflower and sweet potato. Cover, reduce heat to medium-low, and simmer until cauliflower and sweet potato are tender, 20 to 25 minutes. Season with salt and pepper and add more curry powder if desired. Stir in spinach and cook until wilted, 3 to 5 minutes.

2 1/2 pounds sweet potatoes (4 medium), peeled and cut into 2-inch pieces
1 head cauliflower (2 pounds), cored and cut into large florets
2/3 cup whole milk
1 stick unsalted butter
Pinch of freshly grated nutmeg
Pinch of cayenne pepper

Steps:

  • Bring a large pot of salted water to a boil. Add sweet potatoes and return to a boil, then reduce heat and simmer 8 minutes. Add cauliflower; return to a boil, then reduce heat and simmer until potatoes and cauliflower are very tender, 10 to 12 minutes. Drain and return vegetables to pot. Place over medium heat and cook, stirring, until a film forms on bottom of pot, 1 to 2 minutes.
  • Combine milk, butter, nutmeg, and cayenne in a small pot. Bring just to a simmer. Add to cauliflower-potato mixture and mash. Season with salt and pepper. Serve immediately, or keep warm in a heatproof bowl set over a pot of simmering water up to 1 hour. Mash can be rewarmed by adding about 1/4 cup milk and stirring over low heat.

Steps:

  • In a large, heavy pot, warm olive oil over medium-high heat until hot but not smoking. Add onions and cook, stirring, until softened and just turning golden, 5 to 8 minutes. Adjust the heat to prevent browning. Add saffron and stir to coat.
  • Add cauliflower, season generously with salt and pepper and cook for 2 to 3 minutes, uncovered, stirring frequently.
  • Add brown sugar, currants, raisins, lemon zest and juice, cider vinegar and 1 tablespoon sherry vinegar. Turn up heat and cook, stirring occasionally, until cauliflower is just tender, about 5 to 8 minutes more.

1 large sweet potato , skin left on, scrubbed and cut into medium chunks
1 cauliflower , cut into large florets, stalk diced
1 tbsp garam masala
3 tbsp groundnut oil
2 garlic cloves
200g puy lentils
thumb-sized piece ginger , grated
1 tsp Dijon mustard
1½ limes , juiced
2 carrots
¼ red cabbage
½ small pack coriander

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the sweet potato and cauliflower with the garam masala, half the oil and some seasoning. Spread out on a large roasting tray. Add the garlic and roast for 30-35 mins until cooked.
  • Meanwhile, put the lentils in a saucepan with 400ml cold water. Bring to the boil, then simmer for 20-25 mins until the lentils are cooked but still have some bite. Drain.
  • Remove the garlic cloves from the tray and squish them with the blade of your knife. Put the garlic in a large bowl with the remaining oil, ginger, mustard, a pinch of sugar and one-third of the lime juice. Whisk, then tip in the warm lentils, stir and season to taste. Coarsely grate the carrots, shred the cabbage and roughly chop the coriander. Squeeze over the remaining lime juice and season to taste.
  • Divide the lentil mixture between four bowls (or four containers if saving and chilling). Top each serving with a quarter of the carrot slaw and a quarter of the sweet potato and cauliflower mix.

A few years back my best friend and I took a brief road trip to Scottsdale, Arizona, and stayed in a beautiful desert resort that had a well-known steakhouse on site. I was intrigued to see a cauliflower steak on the menu and ordered it. I was absolutely blown away and wanted to create my own version at home. The savory cauliflower steak pairs beautifully with the sweetness from sweet potatoes, and the chimichurri seals the deal!

1 large head cauliflower
Pink Himalayan salt or kosher salt and freshly ground black pepper
1/4 cup olive oil
1 tablespoon fresh lemon juice
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon ground coriander
2 medium Japanese sweet potatoes or white sweet potatoes, peeled and chopped
Pink Himalayan salt or kosher salt and freshly ground black pepper
1/3 cup soy milk or other plant-based milk, warm
1 clove garlic
3/4 cup extra-virgin olive oil
1/2 cup vegan red wine vinegar
1/2 cup finely chopped cilantro leaves
1/4 cup finely chopped parsley leaves
1 shallot, finely chopped
1 red jalapeño, seeded and finely chopped
4 cloves garlic, finely chopped
1 tablespoon finely chopped fresh thyme
1 tablespoon finely chopped fresh oregano
1 tablespoon fresh lemon juice
1 teaspoon pink Himalayan salt or kosher salt

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • For the cauliflower: Remove the outer green leaves from the head of cauliflower and trim the stem. Using a large knife, cut the cauliflower in half lengthwise, through the core. Cut a 1 1/2-inch thick steak from each half (save the remaining cauliflower for another use).
  • Place the steaks on the prepared baking sheet and season with salt and pepper on both sides.
  • Whisk the oil, lemon juice, paprika, garlic powder and coriander together in a small bowl. Brush half of the mixture on the top of the steaks, flip them and brush the remaining mixture on the other side. Roast the steaks until golden brown, about 15 minutes, flipping halfway through.
  • For the mashed sweet potatoes: While the cauliflower roasts, bring a small saucepan of water to a boil. Add the sweet potatoes and a pinch of salt and cook until fork tender, 10 to 12 minutes. Drain, return to the saucepan and cover to keep warm.
  • Just before serving, with the back of a fork or potato masher, mash the potatoes until smooth. Add the warm soy milk and continue to mash. Grate the garlic clove into the saucepan, add a pinch each of salt and pepper and stir to combine. Keep warm.
  • For the chimichurri: Combine all the chimichurri ingredients in a small bowl and stir to combine. Set aside.
  • Spread the mashed potatoes on plates and top with cauliflower steaks. Drizzle with some of the chimichurri. Serve and enjoy!

1/3 cup plus 3 tablespoons vegetable oil, plus more for greasing
1 head cauliflower, cut into small florets (about 6 cups)
1/2 cup plus 1 tablespoon cornstarch
1 1/2 teaspoons kosher salt
1 teaspoon ground black pepper
3/4 cup sugar
1/2 cup rice vinegar
1/4 cup soy sauce
1/4 cup ketchup
1 tablespoon garlic powder
1/4 cup thinly sliced scallions, for garnish
1 tablespoon white sesame seeds, for garnish
Cooked white rice, for serving (recipe follows)
1 1/2 cups long grain white rice

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil and lightly grease with oil.
  • Combine the cauliflower and 3 tablespoons of the oil in a large resealable plastic bag. Seal and shake until well coated. Add 1/2 cup of the cornstarch, 1 teaspoon salt and the pepper, then reseal and shake until well coated.
  • Heat the remaining 1/3 cup oil in a large skillet over medium-high heat. Once hot, add the cauliflower and fry, tossing to cook on all sides, until deep golden brown in spots, about 10 minutes. Transfer the fried cauliflower to the prepared baking sheet and bake until the cauliflower starts to get crispy, 10 to 15 minutes
  • While the cauliflower bakes, prepare the sauce. Whisk together the sugar, vinegar, soy sauce, ketchup, garlic powder and the remaining 1/2 teaspoon salt in a medium saucepan. Place over medium-high heat and bring to a boil; the sauce should thicken slightly.
  • Whisk together the remaining 1 tablespoon cornstarch with 2 tablespoons cold water in a small bowl until fully dissolved. Add the cornstarch slurry to the boiling sauce, reduce the heat to low and cook until thickened, about 30 seconds.
  • Transfer the cauliflower to a large bowl and add half of the sauce. Toss until the cauliflower is well coated, then add the remaining sauce and toss. Garnish with the scallions and sesame seeds and serve with rice.
  • Place the rice and 2 1/4 cups cold water in a medium saucepan. Put the pan over medium-high heat. Bring to a boil, reduce to a simmer, cover and cook until the rice is tender, 18 to 20 minutes. Remove the lid and fluff the rice before serving.

Steps:

  • Preheat oven to 450 degrees. Let chicken stand at room temperature 1 hour. Pat dry, then rub with oil and season with salt and pepper. Place on a rimmed baking sheet.
  • Toss together sweet potatoes, cauliflower, pancetta, rosemary, and oil; season with salt and pepper. Spread around chicken (they won't be in a single layer). Roast 25 minutes; remove from oven.

3/4 cup unsweetened light coconut milk, divided
1/2 cup sweet chili sauce, plus more for dipping
1 lime
salt and pepper
1-1/2 lbs chicken breasts
1 medium-sized head cauliflower, grated (6-8 cups)
1-1/2 Tablespoons coconut oil
1/4 cup fresh cilantro, chopped

Steps:

  • Combine 1/2 cup coconut milk, sweet chili sauce and the juice of 1/2 lime in a large Ziplock bag. Add salt and pepper then squish to combine. Add chicken breasts then marinate for 30 minutes - 1 hour in the refrigerator. Preheat grill to medium-high, making sure grates are well greased. Grill chicken breasts for 4-5 minutes on the first side, then 3-4 minutes on the second side, depending on how big they are and how well done you like them. Remove to a plate to rest for 5 minutes. Meanwhile, heat coconut oil in a very large skillet over medium/medium-high heat (6 out of 10.) Add cauliflower, season liberally with salt and pepper, and then saute until tender, 5-7 minutes. Squeeze in juice from remaining lime half then add 3-4 Tablespoons coconut milk, depending on how coconutty you want it. Add cilantro then stir to combine. Taste then add salt and pepper if necessary. Scoop onto plates then top with chicken and serve with extra sweet chili sauce for dipping.

1 sweet potato, peeled and sliced 1/4 inch thick (about 1/2 pound)
1/2 head cauliflower, cut into medium florets (about 1pound)
2 tablespoons extra virgin olive oil
coarse salt

2 tablespoons red wine vinegar (can also use sherry vinegar)
4 chicken breast halves, boneless and skinless (6-8 ounces each)
1 cup low sodium chicken broth
1/2 tablespoon unsalted butter, cold

Steps:

  • Preheat oven to 450 degrees. On a rimmed baking sheet, toss sweet potato and cauliflower with 1-1/2 tablespoons of oil and season with salt and pepper. Roast until cooked through and browned on one side, about 25 minutes. Transfer to a bowl and gently toss with 1 tablespoon vinegar.
  • Meanwhile, in a large nonstick skillet, heat 1/2 tablespoon oil over medium-low heat. Season chicken with salt and pepper. Cook until golden and cooked through, 30-35 minutes, flipping chicken halfway through. Transfer chicken to a plate and tent with foil to keep warm.
  • To skillet, add broth, thyme, and 1 tablespoon vinegar. Cook over medium-high, scraping up browned bits, until reduced by half, 3-5 minutes. Return chicken and any accumulated juices to skillet and turn chicken to coat with sauce. Remove from heat and stir in butter. Serve chicken with vegatbles and pan sauce.

cauliflower greens (optional)
1 lemon wedge

Steps:

  • Run cauliflower florets through the food processor until it resembles grains of rice.
  • Season chicken with paprika, salt, and pepper; allow to come to room temperature.
  • Heat half the coconut oil in a skillet over medium heat. Stir sweet potato into hot oil until coated; add cinnamon and nutmeg. Cover skillet and cook until potatoes are slightly tender, about 4 minutes. 2 large orange fleshed sweet potatoes
1 small cauliflower, broken into florets
3 tablespoons snipped chives
salt and pepper
3 ounces cheddar cheese, grated
2 ounces butter
2 ounces plain flour
1 1/4 pints milk

3 ounces parmesan cheese, grated
salt and pepper
freshly grated nutmeg

Steps:

  • Bake the sweet potatoes in a hot oven until tender. Set aside to cool for a few minutes. Put the cauliflower into a microwavable bowl, add a few TBS of water, cover with cling film and cook in the microwave for 5 minutes on high. Drain and set aside.
  • Prepare the cheese sauce as below. Preheat your grill.
  • Cut the sweet potatoes into wedges and lay them in the bottom of a greased oven proof dish. Drain the cauliflower and spoon it over the sweet potatoes. Spoon the hot cheese sauce over top (you may not need it all). Sprinkle with the grated cheese and the snipped chives. Grill for three to four minutes until golden and bubbling. Enjoy!
  • To make the cheese sauce: Melt the butter in a saucepan and stir in the flour, stirring until smooth. Let cook over low heat for one minute to cook the flour then slowly stir in the milk, whisking until smooth.
