SWEET BOURBON BARBECUE SAUCE



Sweet Bourbon Barbecue Sauce image

This tomato-based sauce has a sweet yet tangy flavor from the bourbon. This is a great barbecue sauce for most meats.

3/4 cup/180 mL ketchup
1/2 cup/120 mL maple syrup
1/4 cup/60 mL bourbon
2 tablespoons/30 mL vegetable oil
2 tablespoon/30 mL cider vinegar
1 tablespoon/15 mL Dijon-style mustard
1-2 cloves garlic (minced)
1/4 teaspoon/1.25 mL salt
1/4 teaspoon/1.25 mL black pepper

Steps:

  • Gather the ingredients.
  • Heat oil in a saucepan. Add garlic and cook for 15 to 20 seconds until it becomes fragrant.
  • Add ketchup and maple syrup, cider vinegar, and bourbon. Simmer over low heat for 4 to 5 minutes, stirring often.
  • Add Dijon mustard, salt, and black pepper. Simmer for 3 to 4 more minutes. Remove from heat and let the sauce cool for 5 to 10 minutes before using. Use sauce as a baste while meat is on the grill or serve on the side once grilled meat is plated.

  • Gather the ingredients.

BOURBON STREET RIB-EYE STEAK

After eating this style of steak in a restaurant a few times, I worked on making my own marinade. The results are tender and do not have an overbearing bourbon taste. This marinade is very different from the only other one I have seen on this site.

1 cup water
⅔ cup bourbon whiskey
½ cup soy sauce
¼ cup packed brown sugar
3 tablespoons Worcestershire sauce
2 tablespoons lemon juice
4 (6 ounce) beef rib-eye steaks

Steps:

  • Whisk together the water, bourbon whiskey, soy sauce, brown sugar, Worcestershire sauce, and lemon juice in a bowl, and pour into a plastic zipper bag. Add the rib-eye steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours or overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove the rib-eye steaks from the marinade, and shake off excess. Discard the remaining marinade. Grill the steaks on high, 1 to 2 minutes per side, to sear the meat. Move the steaks to a cooler part of the grill and cook for an additional 2 to 3 minutes per side, if desired.

Kentucky is famous for it's bourbon/whiskey (it is two different things) and we use it for everything from curing a cough (it is GREAT and I promise I'll post the recipe)to making someone's mood a little happier. This recipe is delicious and works well on grilled beef.

1/4 cup pineapple juice
2 tablespoons soy sauce
1 teaspoon Bourbon (I use more)
2 tablespoons brown sugar
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
1/2 cup oil

Steps:

  • Combine all the ingredients in a bowl. Place your meat in a zip top bag and pour into the bag. Zip up and refrigerate overnight, turning the bag every so often.
  • Heat the grill to med-high heat and grill as usual. Remove the meat and discard the marinade. Cook as usual.
