This is a great chicken recipe using chicken drumettes. Note: you may double the sauce, if you have a lot of chicken pieces or like extra sauce.

8 chicken drumettes
2 eggs, beaten
¼ cup all-purpose flour for coating
3 tablespoons soy sauce
3 tablespoons water
1 cup white sugar
½ cup vinegar

Steps:

  • Dip chicken in egg beat, then flour. Fry in a large skillet until crispy, about 15 minutes. Drain and place in a 9x13 inch baking dish.
  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Sauce: In a small bowl combine the soy sauce, water, sugar and vinegar. Mix together and pour over chicken.
  • Bake in the preheated oven for 30 minutes, or until cooked through and juices run clear.

Coating the wings with this baking powder rub yields perfectly crispy, golden brown, and tender wings. They're just waiting to be sauced to your preference, and this time it'll be sweet and sour sauce. Put out plenty of napkins, because they are sticky.

1 ½ pounds chicken wings, tips discarded
2 tablespoons baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon paprika
½ cup white vinegar
¼ cup pineapple juice
¼ cup ketchup
1 tablespoon brown sugar
1 tablespoon reduced-sodium soy sauce
1 teaspoon Sriracha sauce
1 teaspoon sesame oil
1 tablespoon cornstarch
1 tablespoon water
¾ teaspoon sesame seeds
1 stalk green onion, sliced

Steps:

  • Preheat the air fryer to 380 degrees F (190 degrees C). Spray basket with cooking spray.
  • Pat chicken wings dry with a paper towel. Whisk together baking powder, salt, pepper, and paprika; pour into a resealable plastic bag. Place some of the chicken wings into the bag and give it a good shake until wings are well coated. Shake off excess baking powder mixture and repeat with remaining wings until all wings are coated.
  • Place chicken wings in the air fryer basket, and cook, flipping halfway through, 22 to 23 minutes.
  • Meanwhile, combine vinegar, pineapple juice, ketchup, brown sugar, soy sauce, Sriracha, and sesame oil in a small saucepan over medium heat. Stir well and bring to a boil. Boil for about 2 minutes. Reduce heat to a simmer. Stir cornstarch and water together in a small bowl, pour into the saucepan, and quickly whisk until sauce thickens, about 1 minute. If sauce is too thick, thin out with a little water.
  • Increase air fryer temperature to 400 degrees F (200 degrees C) and cook wings until cooked through and crispy brown, about 2 more minutes.
  • Pour sauce into a large bowl and add the cooked wings. Toss to coat well. Garnish with sesame seeds and green onion and serve immediately.

3/4 cup pineapple juice
1/3 cup reduced-sodium soy sauce
1/4 cup sweet Marsala wine
1/4 packed cup light brown sugar
2 tablespoons sesame oil
2 cloves garlic, minced
2 tablespoons chili powder
1 to 1 1/2 teaspoons crushed red pepper flakes
3 pounds chicken drumettes
Vegetable oil cooking spray
Kosher salt
1 1/2 teaspoons ground arrowroot powder or 1 tablespoon cornstarch
1/4 cup chopped fresh cilantro leaves

Steps:

  • In a medium bowl, whisk together the pineapple juice, soy sauce, Marsala wine, brown sugar, sesame oil, garlic, chili powder, and red pepper flakes until the sugar is dissolved. Put the chicken drumettes in a 1-gallon size, resealable plastic bag. Add the pineapple liquid to the chicken and seal removing as much air as possible from the bag. Marinate the chicken for 3 hours in the refrigerator.
  • Put an oven rack in the center of the oven. Preheat the oven to 450 degrees F. Line a baking sheet with foil and spray it liberally with vegetable cooking spray.
  • Remove the chicken from the marinade and arrange in a single layer on the prepared pan. Season the chicken with salt, to taste, and bake until the skin is caramelized and very dark in spots, about 30 to 35 minutes.
  • Meanwhile, put the marinade into a small saucepan. Whisk in the arrowroot or cornstarch, if using, and bring to a boil over medium heat (in order to kill bacteria). Reduce the heat to a low boil and cook until thick, about 5 minutes. Cool for 10 minutes.
  • Using a pastry brush, brush some of the cooked marinade over the chicken or pour it into a small bowl and serve on the side. Arrange the chicken on a platter, sprinkle with chopped cilantro and serve.

1/2 cup soy sauce
1/2 cup white vinegar
1/2 cup clover or wildflower honey
3 garlic cloves, smashed and peeled
2-inch piece peeled fresh ginger, thinly sliced
3 pounds chicken wings, cut in half at joint (wing tips removed)
1 teaspoon sesame seeds, toasted
2 teaspoons chopped fresh chives (optional)

Steps:

  • Preheat oven to 475 degrees. In a small saucepan, whisk together soy sauce, vinegar, honey, garlic, and ginger. Bring to a simmer over medium-high and cook, stirring occasionally, until mixture thickens and is reduced by half, 30 minutes. Pour through a fine-mesh sieve into a large bowl; discard solids. You should have 2/3 cup sauce.
  • Meanwhile, arrange chicken wings in a single layer on a rimmed baking sheet. Bake until golden, crisp, and cooked through, 35 minutes. Drain fat from sheet and, with tongs, transfer wings to bowl with sauce. Toss until wings are coated and most of sauce is absorbed, about 3 minutes. To serve, sprinkle with sesame seeds and chives, if desired.

2/3 cup brown sugar
1/4 teaspoon dry mustard
1/2 cup marsala wine
1/2 cup soy sauce
2 garlic cloves, minced
onion powder

Steps:

  • Pre-heat oven to 350°F Spray a 13x9 pan with cooking spray. Place drumettes into pan and sprinkle with Salt,pepper and onion powder.
  • Cook in 350°F for 30 minutes.
  • Meanwhile in a small saucepan mix brown sugar,dry mustard, Marsala,soy sauce and minced garlic. Bring to boil over medium heat than turn down to simmer while drumettes cook. Stir sauce occasionally.
  • After 30 minutes turn oven down to 325 degrees and pour sauce over wings turning wings to coat with sauce.

6 tablespoons unsalted butter
1 cup honey
2 tablespoons distilled white vinegar
2 tablespoons Worcestershire sauce
1/2 cup chopped pecans
2 tablespoons ground ancho chile* (or chipotle powder)
2 teaspoons garlic powder
Salt and freshly ground black pepper
2 pounds chicken drumettes

Steps:

  • Preheat oven to 350 degrees F.
  • In a small saucepan, add the butter and melt over medium-low heat. Stir in the honey, and cook until the mixture bubbles, about 3 minutes. Remove from the heat, and stir in the vinegar, Worcestershire sauce, pecans, ground ancho and garlic powder. Season the marinade, to taste, with salt and pepper.
  • ** Arrange the drumettes on a baking sheet, and brush each with the marinade. Bake until the chicken is cooked through, about 25 minutes. Baste once, halfway through baking time. Transfer to a serving platter and serve hot.
  • *Cook's Note: The ancho chile is a dried poblano chile. It is also sold as "pasilla" in the US. It is a deep red color, and the flavor ranges from mild to pungent. The rich, slightly fruit flavored ancho is the sweetest of the dried chiles. Anchos are often sold whole and can be stemmed, seeded then ground at home in a coffee or spice grinder. They can also be found at most supermarkets, Latin specialty markets or online.
  • **Cook's Note: Cover your baking sheet with tin foil for easy clean up and to prevent marinade from burning in the oven.
