SWEET-AND-SOUR KRAUT
Folks who aren't fond of the "sour" in sauerkraut will enjoy this vacation sweetened with brown sugar and priced at 29 cents a serving. "This side dish sounds strange, but it's really good-even cold," assures Margery Bryan of Moses Lake, Washington.

Steps:
- In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; drain, reserving 1 tablespoon drippings. Saute onion in the drippings until tender. , Stir in sauerkraut, tomatoes, brown sugar and bacon. Bring to a boil. Transfer to a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 30-35 minutes or until bubbly.

AWESOME SWEET AND SOUR KRAUT!
This is a good homemade sourkraut that is good served almost anytime, almost anywhere! Look for sweet-sour apples, such as Gala or Braeburn. Enjoy!

Steps:
- Combine the seasoning mix ingredients in a small bowl.
- Heat the oil in a 6 quart pot over high heat just until the oil begins to smoke, about 4 minutes.
- Add the onions and cook, stirring occasionally, until they start to brown, about 8 minutes.
- Stir in the cabbage, apples, garlic, and ginger and cook, stirring frequently, for 4 minutes.
- Add the vinegar and scrape up all the brown bits on the bottom of the pot.
- Stir in the wine, brown sugar, and the seasoning mix.
- Cover, reduce the heat to medium, and cook, stirring occasionally, until the cabbage is tender and cooked down very well, about 25 to 30 minutes.
- Can be served hot or cold, almost anytime, almost anywhere.
BRATWURST WITH SWEET-AND-SOUR KRAUT AND DARK BREAD

- In a medium skillet, bring 1 inch of water to a boil, reduce heat to simmer, pierce the casings of 4 pieces of bratwurst and set into a medium skillet. Simmer sausages 10 minutes, then remove to a cutting board, pour water out of pan and return pan to stovetop, adjusting heat to medium high heat. Slice sausages on an angle, 6 cuts per wurst. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, and set slices into hot skillet. Brown 1 to 2 minutes on each side.
- Place sauerkraut into a colander. Rinse and squeeze dry. Add to the browned bratwurst slices. Stir in sweet red pepper relish and warm through another 1 to 2 minutes. Transfer to a serving dish and place along side cocktail or quartered sliced dark bread. To serve, spoon sliced wurst and sauerkraut onto bread.

SWEET-SOUR KRAUT AND CHOPS
Steps:
- 1. In a 12 x 7 1/2 x 2-inch baking dish combine potato slices and onion.
- 2. Add 1/4 cup water and bake covered, at 350 until nearly tender, 45-minutes.
- 3. Meanwhile, in a skillet brown pork chops on both sides in hot oil.
- 4. In a bowl combine sauerkraut, undrained pineapple and brown sugar; spoon over potato mixture.
- 5. Place chops atop. Season with salt and pepper.
- 6. Bake, covered, 45 minutes longer.
SWEET AND SOUR KRAUT
Steps:
- Cook onion and garlic in oil in a 3 1/2- to 4-quart heavy saucepan over moderately low heat, stirring occasionally (stir more frequently toward end of cooking), until golden brown, about 30 minutes. Increase heat to moderate, then add cumin and allspice and cook, stirring, 30 seconds. Add the sugar, salt and pepper and simmer, stirring occasionally for 10 minutes. Stir in sauerkraut and bring to a boil, then reduce heat and simmer, partially covered, stirring occasionally, until most of liquid is absorbed, about 30 minutes. Add the lemon juice and stir through.
