GERMAN SAUERKRAUT SOUP (SAUERKRAUTSUPPE)



German Sauerkraut Soup (Sauerkrautsuppe) image

Celebrating one of Germany's most famous "superfoods", Sauerkraut, this wonderful soup is satisfying to both tummy and soul. The combination of tangy sauerkraut, caramelized onions, smoky paprika, savory bacon and earthy caraway is simply irresistible!

Number Of Ingredients 15

4 ounces flavorful smoked bacon or speck (, diced)
2 medium to large yellow onions (, chopped)
2 cloves garlic (, minced)
2 tablespoons tomato paste
1 tablespoon quality smoked Hungarian paprika (preferably Kalosca or Szeged) ((mild, not hot))
1/2 teaspoon dried marjoram ((very traditional herb in German cooking))
1/2 teaspoon caraway seeds (, lightly crushed)
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 teaspoon sugar ((optional))
4 cups quality chicken broth (we recommend Aneto 100% All-Natural Chicken Broth)
or Aneto low-sodium chicken broth
18 ounces German Sauerkraut, drained ((about 3 1/2 heaping cups) Do NOT substitute with American sauerkraut **see Note below)
How to Make Sauerkraut ((it's easy! Click link for recipe tutorial))
1/3 cup crème fraîche ((can substitute full-fat sour cream))

Steps:

  • In a soup pot fry the bacon until done. Add the onions and cook until lightly caramelized, 5-7 minutes. Add the garlic and cook another minute. Stir in the tomato paste and spices and cook another minute. Add the chicken broth and sauerkraut and bring to a boil. Reduce the heat to medium and simmer, covered, for 20 minutes. Stir in the crème fraîche or sour cream and heat through (do not boil).
  • Serve hot with a dollop of crème fraîche or sour cream. Crusty bread and a leafy green salad make great accompaniments.

6 small red potatoes, quartered
3 medium carrots, cut into 1/4-inch slices
1 medium onion, cut into thin wedges
1 can (14 ounces) sauerkraut, rinsed and well drained
1 tablespoon brown sugar
1 tablespoon spicy brown mustard
1 teaspoon caraway seeds
1 pound smoked kielbasa or Polish sausage, cut into 1-inch slices
2 cans (14-1/2 ounces each) reduced-sodium chicken broth

Steps:

  • In a 3- or 4-qt. slow cooker, combine the potatoes, carrots and onion. Combine the sauerkraut, brown sugar, mustard and caraway seeds; spoon over vegetables. Top with sausage and broth. Cover and cook on low for 8-9 hours or until vegetables are tender.

Every New Year's Day, my mom would make her 'famous' sauerkraut. It is more than a traditional meal to ensure a prosperous new year; it is simply delicious (and easy)! Even for those who do not usually enjoy sauerkraut, this recipe's sweet flavor is hard to resist!

1 quart sauerkraut, drained and rinsed
1 ½ cups water
¾ cup diced carrot
¾ cup brown sugar
⅔ cup chopped apple
½ sweet onion, minced
1 teaspoon caraway seeds
salt and ground black pepper to taste
1 pound fully cooked kielbasa, cut into 1-inch pieces

Steps:

  • Place sauerkraut, water, carrot, brown sugar, apple, sweet onion, caraway seeds, salt, and black pepper in a slow cooker. Cook on Low for about 7 hours; add kielbasa. Cook for one more hour.

4 slices bacon, diced
1 medium onion, chopped
1 (27 ounce) can sauerkraut, drained
1 (14 ounce) can diced tomatoes, drained
1 cup brown sugar, packed

Steps:

  • In a large skillet cook the bacon until crisp. Remove to paper towels and saute the onion in the drippings.
  • Stir in the sauerkraut, tomatoes, brown sugar and the bacon. Bring to a boil. Transfer to a greased casserole dish. Bake, uncovered at 350 for 30-35 minutes or until bubbly.

  • In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; drain, reserving 1 tablespoon drippings. Saute onion in the drippings until tender. , Stir in sauerkraut, tomatoes, brown sugar and bacon. Bring to a boil. Transfer to a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 30-35 minutes or until bubbly.
