SWEDISH COCONUT COOKIES
These cookies are so amazing...they just melt in your mouth. They are good soft or hard. This recipe is from Land O lakes Cookie Collection. For an extra treat, toast the coconut first.

Steps:
- In large bowl, combine, flour, sugar, butter, baking powder, baking soda and vanilla.
- Beat on low, scraping bowl often, until well blended, 3-4 minutes.
- Stir in coconut.
- Divide cookie dough into halves, shape into a roll 12 x 2.
- Wrap in wax paper, refrigerate until firm- around 2 hours.
- Heat oven to 350°.
- Cut rolls into 1/4" to 1/2" slices.
- Place 2-inches apart on ungreased cookie sheet.
- Bake 9-14 minutes.
- Cool slightly, then remove from pan.

This recipe comes from an old Swedish recipe book given to the employees of IKEA many years ago. These easy to make cookies simply melt in your mouth. They are one of those "nobody can eat just one" cookies!

Steps:
- 1. Cream together sugar and butter. Add vanilla. Add dry ingredients and beat on low for 3 minutes. Add coconut just until blended.
- 2. Divide mixture in half and roll into logs approximately 12" X 2". Wrap in wax paper and refrigerate over night.
- 3. Preheat oven to 350 degrees. Slice logs into 1/4" slices. Place approximately 2 " apart on the cookie sheet as they will spread. Bake just until the edges are a light tan color. Can be anywhere from 8 - 12 minutes depending on your oven. Enjoy! Sprinkle with colored sugar for a more festive look.

- Set oven to 350 degrees.
- Cream butter, shortening and sugar with vanilla.
- Sift the flour, baking soda and baking powder.
- Add the flour mixture to the butter mixture along with the coconut and nuts (if using).
- Mix to form a roll.
- Chill in the fridge for 2 or more hours.
- Slice and bake on a greased cookie sheet OR drop by teaspoonfuls onto cookie sheet.
- Bake for 8-10 minutes, or until lightly brown.

- 4. Refrigerate until firm, atleast 2 hours. Roll into balls & place atleast 2 inches apart.
- 5. Heat oven to 350.
- 6. Place 2 inches apart on ungreased cookie sheets.
- 7. Bake 9 - 14 minutes.
