Steps:
- 1. Combine first six ingredients plus 1 cup of the stuffing mix. Mix well.
- 2. Preheat oven to 350. Pour mixture into a greased baking dish. Top with the remaining stuffing mix.
- 3. Bake at 350 for 30 minutes.
SUSAN'S SPINACH CASSEROLE
Even people who say they don't like spinach seem to like this casserole. I am always asked to bring my spinach casserole to holiday meals. Usually I double the recipe. There is never any left and there are always requests for the recipe. I now make copies to take just in case.

"HOW I GOT MY FAMILY TO EAT SPINACH" SPINACH CASSEROLE
If spinach scares you, this is one recipe that contains spinach that you do not have to be afraid of! It is so delicious that even my picky kids like it. My mother-in-law makes this for get-togethers and she passed the recipe on to me. You can also use Broccoli instead of the Spinach, which she does often, but I have never tried...it is great the way it is! She also eats this hot or cold, but I only like it hot :) Enjoy!

- Preheat oven to 350 degrees.
- Place spinach in strainer and squeeze all extra liquid from it.
- In a large bowl, combine spinach with the rest of ingredients, except croutons, and combine well.
- Pour into a 2 quart casserole dish and top with croutons.

- Heat oven to 350°F. Spray 3-quart casserole with cooking spray. Cook and drain noodles as directed on package, using minimum cook time. In nonstick skillet, cook beef, garlic, salt and pepper over medium-high heat 5 to 7 minutes until beef is thoroughly cooked; drain. Stir in pasta sauce and Italian seasoning.
- In large bowl, mix spinach, Monterey Jack cheese, sour cream, egg and garlic salt. Fold in noodles; spoon mixture into casserole. Sprinkle with 3/4 cup of the Parmesan cheese. Top with beef mixture and remaining 3/4 cup Parmesan cheese. Bake uncovered 30 minutes or until bubbly and golden.

- In a large bowl combine spinach, cream cheese, mushroom soup and 1/2 of the fried onions; mix well. Transfer mixture to a 2 quart casserole dish and sprinkle with remaining fried onions.

A must Try! This spinach dish is SO good! Got it out of the Houston Chronicle food section, tried it, and my family fell in love with it. My 3 yr. old grandson ate 3 helpings. Best of all it's really easy to make.

- Preheat oven to 375°F.
- If using fresh spinach, wash spinach and drain. Cook damp spinach in a hot skillet until wilted; chop coarsely.
- Combine spinach with cheese, onion, cream and 4 tablespoons of the butter. Add salt and pepper to taste.
- Place mixture in a shallow, buttered 1 1/2-quart baking dish.
- Mix cracker crumbs with remaining 2 tablespoons melted butter and sprinkle over spinach mixture.
- Bake for 20 to 30 minutes or until golden and lightly crusted.

- Cook spinach or just thaw it- I usually microwave for several minutes.
- Drain very well.
- Add sour cream and onion soup mix. Mix thoroughly.
