3/4 cup butter, softened
2 cups sugar
4 eggs
1-1/2 teaspoons vanilla extract
3/4 cup baking cocoa
3/4 cup boiling water
1 cup buttermilk
2-1/2 cups all-purpose flour
1-1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
FROSTING:
1 carton (8 ounces) whipped cream cheese
1-1/4 cups confectioners' sugar, divided
2 teaspoons vanilla extract
1-1/2 cups heavy whipping cream
Maraschino cherries and fresh mint, optional

Steps:

  • In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. beat in vanilla. , In a bowl, whisk cocoa and water until smooth; stir in buttermilk. Sift together flour, baking soda, baking powder and salt; add to creamed mixture alternately with cocoa mixture. Beat until smooth., Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks., For frosting, in a bowl, beat cream cheese until light. Add 1/2 cup confectioners' sugar; mix well. Add the vanilla, cream and remaining sugar; beat until frosting reaches desired consistency. Place one cooled cake layer on a serving plate; spread with a third of the frosting. Repeat layers twice. Garnish with maraschino cherries and mint if desired. Refrigerate leftovers.

I love the flavor of dark chocolate and orange together. I decided to play with one of my favorites and this is the result. HEAVENLY!!! Hope you enjoy it as much as we did.

1 dark chocolate cake mix (i used pillsbury moist supreme)
1/4 c orange juice, fresh
FILLING AND FROSTING
1 c butter, softened
6 c powdered sugar
pinch of salt
3 Tbsp orange zest
5-6 Tbsp orange juice, fresh
8 oz orange marmalade

Steps:

  • 1. Prepare cake mix per package directions, but substitute 1/4 cup of orange juice for part of the liquid called for.
  • 2. Bake, according to package dirextions, in 2-8 inch cake pans that have been sprayed with butter flavored cooking spray.
  • 3. Remove cake from pans and cool completely on a wire rack.
  • 4. For Filling and Frosting: Cream together butter, salt and sugar. This will be fairly dry and fluffy.
  • 5. Add orange zest and blend.
  • 6. Blend in orange juice until frosting is a fairly stiff spreading consistency.
  • 7. Using 1/2 cup of frosting, blend in orange marmalade and 3 tablespoons of powdered sugar. This will be the filling for the cake. Spread between layer and frost cake with the rest of the frosting.

Crust~
2 c. graham cracker crumbs
1/4 c. sugar
1/2 c. melted butter
Filling~
2 packs chocolate chips
1/2 c hot, strong coffee
1 t. vanilla
1/8 t salt
4 eggs, separated
2/3 c. sugar (divided 1/3c & 1/3c)
2, 8oz packs cream cheese, room temp, cubed
2 T. Rum

Steps:

  • Crust~ Combine crumbs and sugar. Add butter ad press into bottom and sides of 9" spring form pan. Set aside. Filling~ Melt chips in double broiler. Add coffee, vanilla, and salt. Keep warm. Beat egg whites with 1/3 cup sugar to stiff peaks-set aside. Beat yolks with 1/3 cup sugar. Add cheese,and rum. Mix well. Add Chocolate mixture to cheese mixture. Mix well, then fold in egg whites. Pour into crust and bake at 350, one hour. Turn oven off and leave cake in the oven until cool. The top will be cracked. Serve with whipped cream. Rifrigerate, or freeze.

Steps:

  • Cream sugar and eggs for cake until pale
  • Add the dry ingredients and vanilla essence and mix together
  • Put the milk and butter into a sausepan and melt the butter, dont let it boil
  • Pour it into the rest of the mixture and beat it until there are loads of air bubbles.
  • Pour into two greased victoria sponge tins and bake at 200 C for about 15-20 mins
  • Cool cakes in tins on a wire rack
  • Beat together the butter, icing sugar and cocoa for the icing. Add vanilla and milk and beat until smooth, add more icing sugar if need.
  • Remove cooled cakes from tins. Turn one upside-down on presentation plate and coat the top (what was bottom) with a thin layer of icing before adding other cake, right way up, to the top
  • Spread rest of icing over both cakes and decorate as you please! Enjoy!
