If you're in need of impressive pancakes for a crowd, you can't go wrong with this tower of extra-fluffy, delicate pancakes. Pop them in the oven to cook and you won't spend your morning flipping flapjacks on the griddle.

Number Of Ingredients 13

Nonstick cooking spray, for the skillets
3 cups cake flour (see Cook's Note)
6 tablespoons confectioners' sugar
4 teaspoons baking powder
1 teaspoon kosher salt
2 1/4 cups milk
1 stick (8 tablespoons) unsalted butter, melted and cooled, plus more for serving
1 teaspoon pure vanilla extract
2 large eggs, separated, plus 4 whites
1/2 teaspoon cream of tartar
Maple syrup, for serving
Whipped cream, for serving
Assorted fresh berries, for serving

Steps:

  • Position oven racks in the top and bottom thirds of the oven and preheat to 450 degrees F. Lightly spray one small (8-inch) and one medium (10-inch) ovenproof nonstick skillet with nonstick cooking spray (or brush lightly with melted butter).
  • Whisk together the flour, sugar, baking powder and salt in a large bowl. Whisk together the milk, melted butter, vanilla and egg yolks in a medium bowl until combined.
  • Beat the egg whites and cream of tartar in a second large bowl with an electric mixer on medium-high speed until stiff peaks form, about 2 minutes.
  • Stir the milk mixture into the flour mixture until just combined (it's okay if there are a few lumps). Stir one-third of the egg white mixture into the flour-milk mixture. Then gently fold in the remaining egg whites until just combined (take care not to overmix).
  • Pour 3 cups of the batter into the small skillet and pour the remaining batter into the medium skillet. Cover each skillet with a lid (or cover and seal with aluminum foil). Bake, rotating the skillets top to bottom halfway through, until the pancakes are cooked through and the bottoms are golden, 15 to 17 minutes.
  • Flip the larger pancake onto a serving platter and top with the smaller pancake. Pour a generous amount of syrup over the stack and top with whipped cream and berries. Serve with butter on the side.

My Mom taught me this recipe and she always complained the pancakes came out "too fluffy", REALLY is that possible!! By not mixing out all the clumps the pancakes "pop" up when you flip them and are SOOOO good topped with fresh berries and whipped cream!

1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 -3 tablespoons sugar (depends on how sweet you like them)
1 1/2 cups milk
1 egg, slightly beaten
3 tablespoons margarine or 3 tablespoons butter, melted
1 teaspoon vanilla

Steps:

  • Mix all of the dry ingredients in large bowl. Create a crater in the middle and then add milk, slightly beaten egg, vanilla and melted margarine.
  • Mix ONLY ENOUGH TO MOISTEN, you want there to still be clumps.
  • In a greased or cooking sprayed pan, over medium heat pour about 1/2 c batter.
  • Let cook until bubbles break on surface or when you gently lift and edge it is nicely browned. FLIP and let cook for a bit longer checking to be sure your not burning.
  • Cool pan slightly between each one, I carefully wave the pan (away from the stove and any people) a couple times to cool it quicker ;) regrease and cook another.

More of a souffle than a pancake, these gluten-free souffle pancakes are just as scrumptious and more nutritious than those made with classic refined white flour. Season these heavenly treats with cinnamon, nutmeg, or even grated citrus zest. Variations for a classic batter and a grain-free, low-carb batter are shown below.

¼ cup gluten-free all-purpose baking flour (such as Bob's Red Mill®)
¼ cup buttermilk
1 tablespoon vanilla extract
½ teaspoon baking powder
2 large egg yolks
1 pinch salt
4 large egg whites
¼ cup white sugar
1 pinch cream of tartar
1 ½ teaspoons vegetable oil, or as needed

Steps:

  • Combine flour, buttermilk, vanilla, baking powder, egg yolks, and salt for batter in a bowl.
  • Whip egg whites for meringue in a glass, metal, or ceramic bowl on medium-high speed until foamy. With the mixer running, gradually add sugar and cream of tartar. Continue to whip until soft to medium peaks form. When the beater is pulled from the whites, the peaks will curve back down a little instead of sticking straight up. The whipped whites will turn opaque and significantly increase in volume.
  • Mix 1/3 of the whipped whites into the pancake batter. Use a spatula or wooden spoon to fold in remaining whites, in several additions, being sure there are no large clumps of egg whites in the batter.
  • Grease the inside of round metal molds and place molds into a lightly greased pan over medium-low heat. Fill molds 2/3 high with batter. Cover the pan and cook until bottoms are golden brown and bubbles break the surface, about 10 minutes. Flip, cover, and cook until golden brown on the other side and tops spring back when touched, about 5 more minutes.

This is just a variation of many different recipes I've tried throughout the years. It's likely that all of these ingredients will be on hand, and total time spent for a great breakfast is less than 30 minutes.

3 cups flour
1/3 cup sugar
1/4 teaspoon salt
2 tablespoons baking powder
3 eggs
1/3 cup butter
1 tablespoon vanilla extract
2 cups milk

Steps:

  • Mix dry ingredients and whisk together.
  • Mix wet ingredients together and whisk into the dry ingredients. Batter will be extremely thick, so you can add a little more milk to lessen the consistency if you prefer, but assuming you got the flour measurement correct, 2 cups of milk always seems to be about perfect for me.
  • I use a 1/4 cup to scoop the batter on the griddle. If you like very thick and fluffy pancakes you'll have to use a spatula or just bang the cup on the griddle a few times to get it all out.
  • I use a cast iron griddle over gas burners, so I have to use very low heat, and each set of pancakes cooks faster and faster (Usually 2-4 minutes per side for me). Most people say to watch the bubbles on top and turn after they pop, but with pancakes this thick, it can be a little deceiving. I just check the bottom before flipping and once it's golden brown, I flip it. Also, because they are so thick, you want to give a little smash with your spatula once you flip to make sure the whole bottom is in contact with the griddle.
  • I feel it is a must to use real butter and a good syrup, but these are really up to you.
