4 bell peppers
3 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon ground pepper
2 tablespoons fresh parsley, chopped finely

Steps:

  • Preheat a grill to medium high heat.
  • Quarter peppers and remove seeds and stem inside.
  • In a medium bowl, combine peppers, oil, salt and pepper. Toss to thoroughly coat peppers.
  • Using tongs, arrange peppers on the grill rack skin side up. Close grill and cook 4 minutes.
  • Flip peppers and close grill to cook another 3-4 minutes or until the desired charring is achieved.
  • Remove peppers to bowl and toss with fresh parsley before serving.

bell pepper
salt and black pepper, ground
olive oil

Steps:

  • Take several bell peppers, cleaned of the stems and seeds. Cut into strips lengthwise. These can be four to six depending on the size of the peppers and your preference.
  • Season LIGHTLY with salt and freshly ground black pepper.
  • Brush both sides of the strips with good olive oil.
  • Place skin side down on hot grill, until skin blisters and peppers soften (3-8 minutes depending on grill). You can let the skin brown a bit if desired.
  • Turn peppers and grill until inner side is done (about half the time of the skin side -- 2-4 minutes).
  • Try this with different color peppers. Maybe add a few green onions.
  • Try this with Anaheim peppers -- Very good!
  • Try adding sliced zucchini, too.

2 bell peppers (red)
1/2 cup barbecue sauce (I use Jack Daniels Honey Smokehouse)
Pam cooking spray

Steps:

  • Preheat the grill to high.
  • Remove tops and remove seeds on peppers and slice length wise into strips.
  • Spray the grill with the Pam and reduce heat to medium.
  • Paint both side of the pepper slices with BBQ sauce and then lie them on the grill across the grates so they don't fall through.
  • Grill for 5 minutes. Turn over and grill for an additional 3 minutes or until tender.
  • Serve and enjoy!

2 bell peppers or peppers of choice (see blog post, above, for suggestions)
1 tablespoon avocado oil
kosher salt & ground black pepper
for serving, as desired: fresh basil, fresh oregano, fresh thyme, etc.

Steps:

  • Preheat the grill for medium-high direct heat grilling, about 450-500 degrees F. While the grill preheats, prep the bell peppers. Slice from the stem down the sides of the pepper, cutting away the core. You should end up with 3-4 flat pieces of bell pepper. Discard the core. Place the bell peppers on a small baking sheet or large plate. Drizzle the oil over top, tossing to coat in the oil. Season with 1/2 teaspoon kosher salt & ground black pepper as desired, tossing again to coat.
  • Place the bell peppers on the grill. Grill 5-6 minutes, flipping the peppers halfway through, until tender & charred as desired.
  • , with a sprinkling of fresh herbs as desired. If serving on a grilled vegetable platter, drizzle with a light & bright herbaceous sauce, like pesto or chimichurri.
