OVEN FRIED CHICKEN WITH ALMONDS image

Number Of Ingredients 10

1 cup whole wheat bread crumbs, I use crushed whole wheat ritz crackers
1/4 cup parmesan cheese
1/4 cup finely chopped almonds
1 1/2 teaspoons dried parsley
1 clove garlic minced
1 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1/4 cup extra virgin olive oil
2 lbs. boneless, skinless chicken breasts

Steps:

  • Combine first 8 ingredients. Pound Chicken to 1/2-inch thick and cut breast in half if you want smaller portions (about 6 pieces). Dip chicken in olive oil and roll in dry mixture. Bake at 400 degrees for 25 minutes or until juices run clear. Do no turn during cooking.
