6 -8 handfuls mixed salad greens, washed and dried well (or butter lettuce)
1 -2 medium orange, sectioned, pith removed, cut in half
1 avocado, thinly sliced
1/2 cup toasted nuts (sliced almonds, pine nuts, walnuts, etc)
1/2 cup sliced spring onion (scallions, or green onions)
parmesan cheese, shavings to garnish
1/3 cup freshly grated parmesan cheese
2 oranges, zest and juice of
2 tablespoons chopped shallots (or red onion, or scallions)
2 tablespoons red wine vinegar
1 cup extra virgin olive oil
1/4 teaspoon lemon juice
2 pinches salt
2 pinches pepper

Steps:

  • Salad:.
  • Wash and dry salad greens well and place them in a large bowl.
  • Add orange pieces, nuts, and onions.
  • Toss well with the Citrus Parmesan Dressing .
  • Add the avocado and toss the salad gently, so as not to mush the avocado.
  • Sprinkle with some Parmesan shavings(using a vegetable peeler).
  • Citrus Parmesan Dressing:.
  • In a bowl combine the grated Parmesan, orange zest and juice, and the shallots.
  • Whisk in the red wine vinegar.
  • Whisk in the olive oil and finish by seasoning with salt and pepper.
  • Or you may use a jar and shake the dressing.

  • Gently heat the dressing and toss with spinach, for a warm, slightly wilted dinner salad.
  • Use the vinaigrette as a marinade.
  • Use it to toss with pasta (stuffed cheese filled pasta is an especially good choice).

1 can (20 ounces) pineapple tidbits
1 can (11 ounces) mandarin oranges
1 package (3.4 ounces) instant lemon pudding
1 cup quartered strawberries
1 cup sliced ripe bananas

Steps:

  • Drain pineapple and oranges, reserving juices. In a large bowl, combine pudding mix with reserved fruit juices. Fold in pineapple, oranges and strawberries; chill for at least 2 hours. Add bananas just before serving.

1 package orange gelatin
1 package lemon gelatin
2 cups water, boiling
1/4 cup water, cold
8 ounces crushed pineapple in juice
1 cup grated carrot
8 ounces vanilla yogurt, lowfat

Steps:

  • Combine orange and lemon jello; dissolve in boiling water.
  • Measure out one cup; chill until slightly thickened.
  • Add cold water to remaining jello, then add 1 8 ounce tin crushed pineapple with juice, and the coarsely grated carrots.
  • Stir well.
  • Pour into a decorative mold.
  • Chill until set but not firm (about 45 minutes).
  • Blend yogurt with reserved jello; spoon into mold.
  • Chill until firm (3-4 hours).
  • Unmold and serve.

2 tablespoons Dijon mustard
1 teaspoon Worcestershire sauce
3 tablespoons red wine vinegar
1/3 to 1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper
2 large or 3 small romaine hearts, chopped
3 to 4 celery ribs, chopped
1/2 seedless cucumber, sliced
1 small red onion, chopped or thinly sliced
2 ripe tomatoes, chopped
1/4 cup fresh herb or herbs: parsley, basil, dill, tarragon - whatever is on hand, optional

Steps:

  • In a large serving bowl whisk together the marmalade, mustard, Worcestershire, red wine vinegar, extra-virgin olive oil, and salt and pepper, to taste. Add the lettuce, celery, cucumber, onions, tomatoes and herbs, if using. Toss and adjust seasoning. Serve.
