Quick and easy breakfast dish that I've used for a long time. A friend who owns a B & B gave it to me. FOOTNOTE: Revised 1/22/07 to include size of bread cubes and oven temp--sorry about that Bergy! :)

6 large eggs
2 cups milk
1 lb sausage, cooked until brown and drained
3/4 cup cheese, shredded
6 slices bread, cubed into 1/2 inch cubes

Steps:

  • In a 13 X 9 lightly greased baking dish, place your bread cubes evenly on the bottom.
  • In a medium bowl, whip the eggs together with the milk until well beaten.
  • Stir in the sausage and cheese and pour over the bread crumbs.
  • Cover with foil and bake at 325 degrees for 20 minutes.
  • Remove foil and bake an additional 15 minutes.
  • I lightly sprinkle more shredded cheese on top when this comes out of the oven.

Sunday Sunshine Baked Eggs in Mushrooms image

Something different for breakfast that takes minutes to prepare! Note: the recipe assumes the pasta sauce and cheese have salt in them. If not, just sprinkle a pinch of salt over the pasta sauce before cracking the egg in.

2 large mushrooms ((flat, Portobello) (note 1))
2 eggs
3 tbsp pasta sauce ((or pizza sauce or other sauce of preference) (note 2))
4 tbsp cream ((1/4 cup))
4 tbsp grated cheese OR 2 slices of cheese ((any cheese that's good for melting. I used sliced tasty cheese))
Fresh parsley (, finely chopped (optional - for serving))

Steps:

  • Preheat oven to 180C/350F.
  • Remove stalk from mushroom. Optional - scrape gills out with a teaspoon (the brown part). I usually only do this if the mushroom is on the small side and I need to make more room for the egg to fit.
  • Divide the pasta sauce between the mushrooms and spread.
  • Crack an egg into each mushroom.
  • Pour cream over the eggs, drizzling to try to cover the whole surface.
  • Place mushrooms in the oven for 10 minutes.
  • Remove from oven and sprinkle over the cheese, then return to oven.
  • Bake for a further 5 minutes or until the egg whites are just set and (hopefully) the yolks are still runny (see note 3 for cooking time guidance). Remember that the eggs will continue to cook after you take them out of the oven.
  • Garnish with parsley, if using, then serve immediately.

Sunshine Toast in the Oven image

From a kids' cookbook and the house specialty of our 9 yr old daughter, this is an oven-baked variation on eggs cooked in the middle of toast. We like it because it's easy enough that the girls can do it on their own (no spattering grease in a frying pan) and because we can do up to a dozen at a time for sleep-overs and such (6 slices fit on an average cookie sheet). The girls have fun picking out which cookie cutters to use for their toast, especially when they can match them to a holiday/season (trees, stars, & angels in the winter, bunnies and flowers in the spring, etc). Bake the cutouts alongside for fun little munchie toast shapes. Don't use very large eggs, though, or they will overrun the toast!

1 slice bread
1/4-1/2 teaspoon margarine (or to taste)
1 egg (medium)

Steps:

  • Grease a cookie sheet with margarine or veg spray (we use sheets with raised edges, just in case the egg runs under the toast).
  • Butter the top of the slice of bread and place butter-side up on the cookie sheet.
  • Choose a large cookie cutter in desired shape and press down hard in the center of the bread.
  • Remove shape from center of bread, place alongside on cookie sheet, butter-side up.
  • Crack egg into a small bowl or saucer and gently slide into the hole in the center of the bread.
  • Bake approx 7 minutes on the top rack of 400F oven (or longer to desired doneness).
  • Carefully remove to plate with spatula and serve with cutout shapes alongside.
