English Muffin Breakfast Pizzas image

Toasted English muffins make a perfect crust for mini breakfast pizzas.

6 English muffins, split in half
PAM® Original No-Stick Cooking Spray
½ pound Odom's Tennessee Pride® Mild Country Sausage, thawed if frozen
½ cup chopped yellow onion
½ cup chopped green bell pepper
½ cup chopped fresh button mushrooms
8 eggs, beaten
½ teaspoon salt
¼ teaspoon ground black pepper
1 ½ cups shredded part-skim mozzarella cheese

Steps:

  • Preheat broiler. Place English muffin halves on baking sheet; set aside. Spray large skillet with cooking spray. Heat over medium-high heat. Add sausage, onion, bell pepper and mushrooms; cook 5 minutes or until sausage is crumbled and vegetables are tender, stirring occasionally. Drain. Remove from skillet and keep warm.
  • Reduce heat to medium. Add eggs to same skillet; sprinkle with salt and black pepper. Cook without stirring until edges and bottom begin to set. Gently turn to scramble; continue cooking until set.
  • Broil English muffin halves 2 minutes or until toasted. Top halves evenly with sausage mixture, scrambled eggs and cheese. Broil 3 minutes more or until cheese melts. Serve immediately.

2 tablespoons olive oil
1 Vidalia onion, chopped
1 jalapeno, chopped
Salt and freshly ground black pepper
1 clove garlic, minced
1 teaspoon Hungarian or hot paprika
1 teaspoon dried thyme
1 teaspoon dried oregano
1 cup ketchup
1/4 cup yellow mustard
2 tablespoons Worcestershire sauce
2/3 cup brown sugar
1 tablespoon white vinegar
1 rotisserie chicken, skin discarded, meat removed and chopped
1 (13.8-ounce) package premade pizza crust (recommended: Pillsbury Pizza Crust -Thin Crust)
1/2 cup shredded cheddar
1/4 cup shredded parmesan
8 ounces buffalo mozzarella, torn into 1 to 2-inch pieces

Steps:

  • Preheat the oven to 400 degrees F.
  • In a pot over medium heat add the olive oil, onions, jalapenos and a sprinkle of salt and pepper, to taste. Cook, stirring, until the onions are translucent and tender, about 10 minutes. Add the garlic, paprika, thyme, and oregano, then stir well and cook until fragrant. Add the ketchup, mustard, Worcestershire sauce, brown sugar and vinegar. Raise the heat to medium- high and simmer, while rapidly stirring, until everything is blended and smooth. Lower the heat to a simmer and add the chopped chicken. Stir to coat all the chicken, then remove from the heat and let cool slightly.
  • Meanwhile, roll out the dough according to package directions and fit it onto a rectangular nonstick baking sheet. Put the crust in the oven and bake for 7 minutes.
  • Remove the crust from the oven and leaving a 1-inch border pour the BBQ chicken and sauce evenly over the crust. Top with the cheddar, parmesan and mozzarella, in that order. Put the topped pizza in the oven and bake until the mozzarella cheese is bubbly and the edges of the crust are golden brown, anywhere from 6 to 11 minutes. Remove the pizza from the oven to a cutting board and allow to cool for a few minutes before cutting and serving.

These pizzas can be made ahead and frozen for the perfect after-school snack. No need to thaw; just add your favorite toppings and bake.

2 tablespoons olive oil
1 onion, chopped (about 2 cups)
2 small carrots, grated
1 red bell pepper, chopped (about 2 cups)
1 medium zucchini, cut into 1/2-inch pieces (about 3 cups)
1 clove garlic, sliced
Kosher salt and freshly ground black pepper
One 28-ounce can crushed tomatoes
6 English muffins, split
1 1/2 cups shredded mozzarella (about 6 ounces)
1/4 cup grated Romano cheese
Assorted toppings: sliced pepperoni or ham, cooked sausage or bacon, olives, cooked chopped broccoli, hot pepper slices or pineapple

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the onions and cook, stirring, until softened and starting to brown, about 5 minutes. Stir in the carrots, peppers and zucchini and cook, stirring, until softened, about 15 minutes. Add the garlic, 1 teaspoon salt and 1/4 teaspoon pepper. Continue to cook, stirring, until the vegetables are lightly browned, for 10 minutes.
  • Stir in the crushed tomatoes. Add 1 cup water to the empty tomato can and pour into the pot. Reduce the heat to medium low and simmer until the vegetables are very soft, the sauce has thickened slightly and the rawness from the canned tomatoes has mellowed, about 20 minutes. Puree the vegetables with a hand blender or transfer to a blender and puree until smooth, holding down the lid with a kitchen towel to prevent the hot sauce from spraying. Season with additional salt and pepper if needed and cool. You will have about 5 cups of sauce.
  • While the sauce simmers, lay the English muffin halves in a single layer on a baking sheet and lightly toast in a toaster oven set to broil or under an oven broiler, 2 to 3 minutes. Spread the top of each muffin with 1 to 2 tablespoons of sauce. Combine the 2 cheeses and sprinkle over the sauce. To serve as a snack right away, add your desired toppings and place the assembled pizzas under the broiler in the oven or toaster oven until the cheese is melted, 2 to 3 minutes.
  • To make ahead: Place the entire tray of mini pizzas in the freezer and freeze until hard, about 1 hour. Stack in a plastic freezer bag until ready to eat. To reheat, place the frozen pizzas on a piece of heavy-duty foil, add any toppings you like and bake in a toaster oven at 400 degrees F until golden, hot and the cheese is melted, 13 to 15 minutes.

This is a pizza that I made up, and have made it twice now with people moaning through every bite. It is excellent, and you MUST use the Classico Alfredo sauce.

2/3-1 cup classico alfredo sauce
25 leaves spinach
1/4 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, shredded
pizza dough (enough for one 12-inch pizza)

Steps:

  • Roll out the fresh pizza dough into a 12 inch circle, and place onto your stone or sheet.
  • Spread the alfredo sauce around and out to the edges and then lay the spinach on top of that, making sure not to overlap pieces of spinach.
  • Then sprinkle cheeses on top and bake at 475 for 10-13 minutes, or whatever you normally bake your pizza pie at.

4 sweet onions, sliced
4 tablespoons olive oil
Kosher salt
1 pound store-bought pizza dough, rested at room temperature for 4 hours
4 ounces shredded Monterey Jack cheese
4 ounces grated Parmesan
One 24-ounce container Yukon gold and garlic mashed potatoes, preferably Good & Gather, at room temperature
6 strips cooked bacon, sliced
1/4 teaspoon red chile flakes
1/4 cup Greek yogurt, loosened slightly with water
1 tablespoon minced fresh chives

Steps:

  • In a slow cooker on low, add the onions, 2 tablespoons oil and a pinch of salt. Cook, stirring every hour or so, until deep golden brown, 8 to 10 hours. Cook uncovered for the last hour.
  • Preheat the oven to 400 degrees F.
  • Roll the dough out to fit an 11-by-17-inch baking sheet or a large round pizza pan. Drizzle the remaining 2 tablespoons olive oil over the top and pierce the dough with a fork all over to minimize bubbles. Bake the dough, checking every few minutes to ensure it doesn't burn, until lightly golden in the center, about 15 minutes. Remove from the oven and set aside. (Leave the oven on.)
  • In a medium bowl combine the Monterey Jack and Parmesan. Add half of the cheese mixture to the mashed potatoes.
  • Top the dough in an even layer with the mashed potato mixture. Add the caramelized onions, bacon, chile flakes and the remaining cheese. Bake until the cheese is melted and the edges of the crust are golden, 8 to 10 minutes. Top with a drizzle of the yogurt and sprinkle with the chives.

16 bocconcini (mini mozzarella balls)
1/4 cup olive oil
Fresh basil, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the mini pitas on a parchment-lined baking sheet. Add about a tablespoon of sauce and a mini mozzarella ball to each pita. Drizzle some olive oil on top of each. Bake until the cheese is melted and bubbly, 8 to 10 minutes. Top with fresh basil.
