SUNFLOWER SPINACH PIE

14 Rhodes™ Dinner Rolls, thawed to room temperature
12 ounces fresh baby spinach leaves
1 1/2 cups ricotta cheese
12 slices bacon, cooked and crumbled
2 eggs
1 1/3 cups grated Asiago cheese
salt and pepper to taste
2/3 cup bread crumbs
sesame seeds

Steps:

  • Spray counter lightly with non-stick cooking spray. Combine 7 rolls and roll into a 12-inch circle. Repeat with remaining rolls. Cover both circles with plastic wrap and let rest. Boil spinach for one minute and drain well. Pat dry as much as possible. Mix dry spinach with ricotta cheese. Add 1 egg, cheese and bacon. Season with salt and pepper. Remove wrap from dough and place one circle on a sprayed 12-inch pizza pan. Sprinkle bread crumbs on the dough (helpful hint: only place bread crumbs in the areas where the spinach mixture will be) to absorb excess moisture. Place a large dollop (about 3/4 cup) of the spinach filling in the middle of the circle and spread the remainder in a ring about 1 inch from the edge of the circle and not touching the middle dollop. Lightly brush the edge of the dough with water to help seal the pie. Also lightly brush the dough around the mound of filling with water. Place the second circle of dough over the spinach filling. Arrange it so the edges of the dough meet. Press the edges together with a fork all the way around. Place a bowl carefully over the dough covered spinach mound in the center of the circle and gently but firmly press down to seal the dough. Leave bowl in place and using kitchen scissors or a sharp knife cut the pie in 20-24 slices from the bowl to the edge. Twist each slice so the spinach shows. Remove the bowl.Mix the remaining egg with 1 tablespoon of water and brush over all of the dough. Sprinkle the center with sesame seeds. Bake at 350°F 25-30 minutes or until dough is a deep golden brown.

This is the pie that I like to bake for those special times.

pie crust
2 c all purpose flour
1 tsp salt
2/3 c vegetable shortening or lard
1/2 c ice water
apple filling
6 to 8 firm tart apples about 3 cups,pared cored and sliced
1/2 to 3/4 c brown or white sugar
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 Tbsp flour
1 Tbsp butter

Steps:

  • 1. prepare the pastry this recipe will make enough pie crust for a two crust pie. Mix the shortening salt and flour together quickly with a pastry blender ( I use my hands) do not over handle it. until it is about the size of peas. add the ice water by tablespoons until the dough comes together and you and pat it into a ball. Do not knead it. Divide it in half and roll out the bottom crust and place it in a deep dish pie plate. Add your apples and cover with the sugar salt and spices. sprinkle the flour over the top of the apples and break up the tablespoon of butter dotting it over the top of the apples.
  • 2. Make top for pie by rolling out the remaining dough. To make the Sunflower Pie cut leaves out of the dough and start on the outside of the edge of the crust making a layer of leaves around the edges sealing them slightly to the edge of the bottom crust continue to layer the same manner until you reach the center. Cut a small circle and place in the very center to form the center of the flower. This is a bit of a job but the results are beautiful! Sprinkle the top with sugar or brush with beaten egg for a glossy finish. Bake at 425 about 50 minutes. if your oven browns to much bake at 450 for 10 minutes then reduce the heat to 375 and continue baking until the pie is done.

SUNFLOWER ICE CREAM PIE

To create this special dessert, I combined all my favorite ice cream toppings-Oreo cookies, chocolate chips, caramel and nuts. The sunflower theme inspired the caramel "petals" on top. This pie's become a new standby at our house. -Holly Joyce Jackson, Minnesota

1-1/2 cups Oreo cookie crumbs (about 15 cookies), divided
3 tablespoons plus 1/2 cup caramel ice cream topping, divided
2 tablespoons semisweet chocolate chips, melted
2-1/2 to 3 cups vanilla ice cream, softened
1 tablespoon chopped walnuts
Black decorating gel

Steps:

  • Set aside 2 tablespoons crushed cookies for garnish. Combine the remaining crushed cookies, 3 tablespoons caramel topping and the melted chocolate chips; press onto the bottom and up the sides of a greased 9-in. pie plate. Spread ice cream over crust. Freeze., For sunflower, place reserved cookies in a 2-i. circle in center of pie. Top with walnuts. For the petals, drizzle or spread remaining caramel topping over ice cream. Outline petals with decorating gel. Freeze. Remove from the freezer 10 minutes before cutting.

3 eggs, beaten
1/2 cup packed brown sugar
1/2 cup light corn syrup
1/2 cup dark corn syrup
1/4 cup granulated sugar
3 tablespoons butter or 3 tablespoons margarine, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup roasted sunflower seeds
1 9" unbaked pie shell

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl beat together eggs, brown sugar, corn syrups.
  • granulated sugar, melted butter, vanilla and salt.
  • Place pie shell on cookie sheet.
  • Spread sunflower seeds evenly in bottown of pie shell.
  • Pour in liquids.
  • Bake at 350 degrees for 50-60 minutes until center is almost set, should jiggle slightly.
  • Cool on wire rack.
