SUNDAY HAM AND BISCUITS

1 ham, bone in
1 pint orange marmalade
1 (12-ounce) can coca cola classic
2 cups self-rising flour (summer wheat flour is best)
1/4 cup vegetable shortening
2/3 to 1 cup milk

Steps:

  • Preheat oven to 375 degrees. Pour orange marmalade into a bowl and add about 1/2 of the coke. Let it set while you prepare the ham. Remove visible fat from ham and crisscross cut the ham. Place in a 9 by 13-inch baking pan and pour the marmalade/coke mixture over the ham. Place in the oven uncovered and bake for 20 minutes. This allows the marmalade to set or crisp on the ham. After 20 minutes cover the ham with foil and bake for an additional 30 to 45 minutes. Baste with the pan drippings every 15 minutes. If there are not enough pan drippings, mix up some more marmalade mixture to baste on the ham. Uncover the ham for the last 20 to 30 minutes and baste every 7 or 8 minutes. Allow the marmalade mixture to brown until dark brown in color. Remove from oven. Put ham onto a platter to cool before cutting. Total cook time is about 1 hour 5 minutes to1 hour 35 minutes. Use the left-over ham in red beans the next day.
  • Mix flour and shortening together in bowl until the shortening is well blended into the flour. Make a "well" or hole in the center of the flour/shortening mixture. Add a portion of the milk to the well. Use a fork or your fingers and work from the center of the bowl to the outside of the bowl and blend the milk into the mixture. Add more milk as needed. The dough will be slightly sticky. To make the biscuits coat your hands with flour and pinch off enough dough for 1 biscuit, about 2 tablespoons. Roll and knead the biscuit in your hands just until it looses its stickiness. Place in a cast iron skillet. Continue to make the rest of the dough in this manner. After all biscuits are made put a little water on finger tips and gently rub the tops of each biscuit, this removes any bumps on the top of the biscuits. Bake in a preheated 450 degree oven until golden brown, about 15 minutes.

1 1/2 cups frozen hash brown potato shreds
2 cups chopped, cooked ham or veggie ham
5 large eggs
1 teaspoon instant minced onion
1 cup milk
1 cup shredded smoked gouda or other smoked cheese

Steps:

  • Preheat oven to 350 degrees.Spray baking dish with non-stick spray.
  • Layer hash brown potatoes and ham in baking dish.
  • In a bowl, combine eggs, milk, onion, and cheese. Gently pour over potatoes and ham.
  • Bake for 60-75 minutes, or until knife inserted in center comes out clean.
  • Remove from oven and let sit for 5 minutes before serving.

1 (16 ounce) jar orange marmalade
1 (12 ounce) can Coca-Cola, classic

Steps:

  • Preheat oven to 375°.
  • Pour orange marmalade into a bowl and add about 1/2 can of the coke.

2 Tbsp melted margarine or butter
4 Tbsp brown sugar
1 small can (8 oz.) crushed pineapple,reserve juice
4 c cooked ground ham
all reserved pineapple juice
3 large eggs
1/2 c italian seasoned bread crumbs
2 tsp ground dry mustard
1 tsp garlic powder with parsley
1/2 tsp each black pepper and seasoned salt
1/4 c ground or minced onion

Steps:

  • 1. Heat oven to 350^. Grind the cooked ham to make 4 cups unpacked. In a glass loaf dish melt the margarine in microwave; and then sprinkle the brown sugar evenly over the margarine..
  • 2. Evenly spread or spoon the pineapple over the sugar or use 3 pineapple rings in a row.
  • 3. In a medium bowl combine the ground ham,eggs, onion, crumbs, seasonings, and reserved juice. Put the well mixed ham into the loaf dish and pat down evenly.
  • 4. Bake for 30 minutes covered with foil. Then remove foil and bake for 25 more minutes. Remove from oven and let set 10 minutes..Run a knife around the sides of the ham; place a platter over the loaf and turn upside down . Serve with oven fries and sweet potatoes .

I came up with this simple yet delicious main course when we had some excellent spiral-cut ham on hand. It makes a lovely early Sunday supper, and is easily adaptable to variations in ingredients. Try it with a bit of fresh rosemary or tarragon in lieu of the parsley. Hope you enjoy it as much as we do.

5 large russet potatoes, sliced approximately 1/4 inch thick
1 large sweet onion, sliced thinly
6 cloves garlic, peeled and chopped roughly
5 slices cooked spiral cut ham, chopped roughly
1 cup butter, cubed
1/4 cup fresh flat-leaf Italian parsley
1 (10 1/2 ounce) can low-sodium cream of mushroom soup
1/2 cup whole milk, cold
1 cup whipping cream
2 tablespoons Tabasco sauce, to taste
1 1/2 tablespoons cornstarch
1 1/2 cups sharp cheddar cheese, shredded

Steps:

  • Preheat oven to 350°F.
  • Grease a covered casserole dish (10 x 13, 3-4" deep) with some softened butter, or use olive oil spray.
  • Layer as follows:.
  • 1/4 of the sliced potatoes, topped with 1/3 of the sliced onions, 1/3 of the chopped garlic, 1/3 of the chopped ham, 1/4 of the butter, 1/3 of the parsley.
  • Repeat above until you have a total of 3 layers, reserving 1/4 of sliced potatoes and 1/4 of cubed butter.
  • Whisk together the cold milk and cornstarch until no lumps remain.
  • To the milk& cornstarch, add the whipping cream, cream of mushroom soup, and Tabasco.
  • Mix this thoroughly and pour over the top layer.
  • Arrange the remaining slices of potatoes decoratively on top, overlapping slightly.
  • Dot potatoes with remaining butter.
  • Cover dish and bake for 1 hour, 15 minutes at 350°F.
  • After this time, remove dish from oven and increase oven temperature to 425°F.
  • Scatter potatoes with 1 1/2 C sharp cheddar cheese.
  • Place UNCOVERED dish back in oven and cook for 15 or 20 minutes more, until cheese on top is nicely browned.
  • Let potatoes cool for at least 15 minutes.
  • This makes great leftovers-- flavor improves with time.

2 1/4 c bisquick mix
2/3 c 2% milk
1 Tbsp dried parsley flakes

1/2 c sweet yellow onions, julienned

Steps:

  • 1. Prepare the ham the night before, following this recipe. https://www.justapinch.com/recipe/jessica-hannan/crock-pot-ham/pork-for-kids? , letting it cook overnight.
  • 2. In the morning, preheat oven to 450*. Mix Bisquick, milk and parsley flakes in a bowl. Place dough on a floured counter, and pat out to 1/4 inch thick. Cut into 4 inch rounds, you should get about 6.
  • 3. Place on a cookie sheet lined with parchment paper, and bake until golden brown, checking around 7 minutes.
  • 4. While the biscuits are baking, chop the ham, julienne the onions, and cut the haricots vert in half.
  • 5. Remove biscuits from oven when done, and let cool for 2 minutes. Split each biscuit in half, using a sharp, thin knife.
  • 6. Ob bottom half of biscuit, place 8 haricots vert, several pieces of onion, and top with 1/3 cup of the chopped ham. Put the other half of the biscuit and enjoy!
