Steps:
- 1. Trim the fat from the chuck roast, and pat it dry. Add salt and pepper to your taste. Heat the oil in a dutch oven over medium high heat and add the roast. (I use cast iron) Get a good sear on both sides of the meat.
- 2. While the meat is searing, combine the following ingredients in a medium size mixing bowl: 2 cans cream of chicken soup, 2 cans of sliced and drained mushrooms. 1 mushroom can of Marsala wine, 1 heaping teaspoon chopped garlic and black cracked pepper. Mix well. Set aside.
- 3. Cooks Tip: I used a liner for easy clean up. It is great for storing the leftovers. You just lift it out and place it in a container. Refrigerate. The next day, you put it back in the slow cooker to reheat it.
- 4. Place the seared meat in the bottom of the slow cooker. Add the potatoes. Pour the bowl mixture over the top of the roast. Put on the lid and don't look at it again until dinner time. Cook 2 hours on high, and then 4 to 6 hours on low until it is as tender as you like it. The gravy will turn a lovely golden brown, and there is no need to thicken it.

SUNDAY DINNER SAVORY POT ROAST BEEF
I came up with this when I was tired of the typical onion soup flavored roast beef recipe, but not in the mood for the robust red wine version I use. My kids liked it a lot (they range in age from 1 to 14 and even the baby ate it up!) I serve it with scalloped potatoes and a green salad. We like it for Sunday Dinner after church.

Steps:
- Heat oven to 350.
- Heat oil in a deep oven casserole dish or pot, that has a tight-fitting lid.
- Rub the roast with Lawrey's salt.
- When oil is hot, brown roast on all sides in the hot oil; look for a nice brown crispy texture.
- When all sides are nicely browned, remove roast to a platter.
- Put allspice, cinnamon, bay leaves and shallots in the hot oil and stirfry until shallots begin to brown; do not burn.
- Pour in beef broth and stir, scraping sides and bottom of pan.
- Return roast and any drippings that collected on the platter to the pot, turn once, cover tightly and put in oven (I don't even peek for the first 2 hours).
- Roast until meat pulls apart, about 2 1/2 to 3 hours- check closely.
- Remove roast to serving platter.
- Pick out the 6 allspice berries, 2 bay leaves and cinamon stick, skim fat off and pour broth over the roast and serve.
SUNDAY POT ROAST DINNER - SLOW COOKER

The Slow Cooker I have is a LARGE 7 quart rectangular/oval shape from JC Penney catalog. Nice for large groups and freezer meals. I seem to be the "Holiday" cook in my family! I believe small appliances are as important as large ones and invest accordingly for my needs.

- Pat roast dry with paper towels. Cut deep slits in surface of roast; insert garlic. Lightly salt and pepper meat. Set aside.
- In a large skillet, cook bacon until crisp; remove with a slotted spoon and set aside. Add roast to drippings; cook 5 to 8 minutes, turning occasionally, until brown. Remove from heat.
- Place onions and celery in Slow Cooker ceramic pot. Place roast on vegetables; pour drippings over roast. Add bacon, potatoes, carrots, and parsnips. Sprinkle with marjoram and thyme. In medium bowl, combine tomato soup, 1/2 cup consomme, mustard, and vinegar. Pour over mixture in Slow Cooker. Cover and cook at LOW 8 to 10 hours, or until roast and vegetables are tender.
- Remove roast to cutting board. With slotted spoon, remove vegetables to serving bowl. Cover both to keep warm. In small bowl, mix flour and remaining 1/2 cup consomme. Stir into liquid in Slow Cooker. Cover and cook on HIGH about 10 minutes, or until thickened. Slice roast. Serve roast and vegetables with gravy.

- 1. Preheat Oven @ 350.
- 2. Dice bacon, cook Bacon in Dutch oven on top of stove. (but not crispy.) Remove bacon and set aside. Chop Onions, add to the same pan and cook, stir til just tender. Add Mushrooms and toss and stir til tender. remove from pan and set aside with the bacon. NOTE: Drain excess grease and "set aside" incase you need more for Braising roast, then use it.
- 3. combine the flour and Seasonings in a plate, Coat your roast well all sides.
- 4. add enough oil(use leftover grease here) to dutch oven and heat to hot. Add roast, and sear it brown on all sides.
- 5. Add: Bacon, Onions, & Mushrooms back into the same pan, with the roast. Add: Broth and Beer, (or if not using beer,) add 2 cups of the broth, to this pot.
- 6. Mix in small cup, 2 TBS left over seasoned Flour, with 1/4 cup COLD water, Whisk till no lumps, Pour into Dutch oven.
- 7. Place cover on this pot and cook in oven 3-4 hrs. Meat should be fork tender. Gravy should be thicken in the pan. ( Note: if too thick, add a little more Water or Broth to thin it down some.) you'll have perfect gravy and no lumps. if You want more salt and pepper season to your own tastes. Serving Suggestion; Serve with Your Favorite Mashed Potatoes, Rice, Noodles, and vegie or Salad. Compliments are always promissed to the cook on this meal.

- Combine beef broth with basil, oregano and thyme and add to pan.
- Cover and bake at 350° for 1 1/2 hours.
