I make this strawberry pie often when strawberries are in season, this is a very good recipe for a glazed pie. I always top it off with real whipped cream, and then a couple more fresh strawberries on top of the cream, so delicious! Prep time does not include cooling the glaze, but it includes refrigeration time. If you prefer a more sweeter glaze, just add in more sugar.

1 (9 inch) baked pie crusts (completely cooled)
1/2 cup white sugar
3 tablespoons cornstarch
1 cup water
1 dash salt
1/4 teaspoon vanilla
3 -4 tablespoons jello strawberry gelatin
3 -4 drops red food coloring
4 cups sliced fresh strawberries, sliced in halves

Steps:

  • Bake the pie crust, let cool completely; set aside.
  • In a medium size saucepan, combine the sugar, cornstarch, water and salt; bring to a boil, continue boiling on medium heat, and mix in the strawberry gelatin powder and a few drops of red food colouring; mix to combine; let glaze cool to room temperature.
  • Brush the bottom of the baked pie crust with a thin layer of glaze.
  • Gently fold in the sliced strawberries into cooled glaze, and pour into baked pie shell.
  • Refrigerate/chill for a minimum of 4 hours or until well set.
  • Serve topped with a dollop of whipped cream.
  • Delicious!

What an impressive - and easy - dessert for your cookouts this summer. The ginger ale adds a great kick to complement the sweet strawberries. A dollop of whipped cream finishes this pie wonderfully!

1 (9-in) ready-to-bake deepdish pie shell, thawed
1 (4-serving) package strawberry flavored gelatin
1/2 c sugar
3 Tbsp cornstarch
3/4 c ginger ale
1 qt fresh strawberries, hulled and cut in half

Steps:

  • 1. Bake pie shell according to package directions; set aside to cool.
  • 2. In a medium saucepan, combine remaining ingredients, (except strawberries) over medium heat. Cook 5 to 7 minutes or until gelatin has dissolved and mixture is clear, stirring occasionally.
  • 3. Remove from heat and let cool about 5 minutes. Stir in strawberries then pour into baked pie shell.
  • 4. Chill at least 4 hours or until set. Serve, or cover and keep chilled until ready to serve. Top with Cool whip if desired.

So it really brings the Flavor out of the "Fresh Strawberries", Summertime is Fresh Strawberry time..Enjoy while we Can the Fresh foods of Our Gardens. Note:The Pie Crust Baking time is not added into the Cooking Times. Cooking time is for the Glaze only. TIP: Never Leave your Berries soaking in water. Your Pie will become Soggy as the berries absorb the water.

PIE CRUST:
1 - your favorite pie crust baked 8=12 minutes, just til it starts to brown. then cool
BERRIES:
- enough to fill your pie wash and clean. note: do not allow berries to sit in water. your pie will be runny if you do. strawberries absorb water.
1 C - strawberry pulp, (is made by mashing fresh berries)
2 C - 2 cups or more of the fresh berries sliced in uniform slices
GLAZE:
1 C - sugar
3 TBS - cornstarch
1/2 C - water
1 TBS - butter
1 C - crushed strawberries ( pulp above)
Few - drops of red food coloring ( optional)

Steps:

  • Follow Directions for Baking Crust above, Wash and clean Berries as Directed in the Ingredients For the Berries.
  • GLAZE; Mix, Sugar Cornstarch, Crushed Strawbewrries, % water in a sauce pan. Cook over Medium heat until mixture begins to Boil. Keep Stirring, Cook for 2 more Minutes, til this sauce becomes thick and translucent in color. Remove from heat.
  • Stir in the Butter. Add red Food Coloring til a pretty red Color is desired. Set aside to Cool
  • Spread Strawberry Slices into the baked Cooled Pie Shell. Fill Pie shell with the fresh Strawberries, leaving only enough room for the Glaze.
  • Pour the cooled Glaze over the Berries. Refrigerate the pie till well chilled and set. Top with whipped Cream to serve over each slice.
