My penchant for summer pasta dishes with uncooked tomato sauces continues here, with this simple, high-protein combination. You can also make this with fresh tomato sauce if you want a cooked sauce.

Number Of Ingredients 9

1 pound ripe, fresh tomatoes, peeled if desired and finely chopped
1 plump garlic clove, minced
Salt and freshly ground pepper to taste
1 teaspoon balsamic vinegar (optional)
1 tablespoon slivered or chopped fresh basil
2 tablespoons extra virgin olive oil
1 (15-ounce) can chick peas, drained and rinsed
3/4 pound fusille or farfalle
1/4 cup crumbled feta or freshly grated Parmesan (more to taste)

Steps:

  • Combine the tomatoes, garlic, salt, pepper, balsamic vinegar, basil, and olive oil in a wide bowl. Let sit for 15 minutes. Stir in the chick peas. Taste and adjust seasonings.
  • Meanwhile, bring a large pot of water to a rolling boil. Add a generous amount of salt and the pasta. Cook al dente, until the pasta is firm to the bite. Drain, toss with the tomatoes and chick peas, sprinkle on the cheese, and serve.

400g spaghetti
200g frozen peas
3 tbsp olive oil
squeeze lemon juice
1 tbsp wholegrain mustard
20g pack fresh mint , roughly chopped

Steps:

  • Boil the spaghetti according to pack instructions and, when you have just 2 mins cooking time left, throw in the peas.
  • Meanwhile, whisk the olive oil, lemon juice and mustard together, then season with salt, if you like, and pepper. Drain the pasta, reserving a couple of tbsps of the cooking water and return to the pan. Stir the reserved cooking water, olive oil mixture and mint through the pasta, then serve.

6 large red radishes, halved and sliced thin
2 large scallions, chopped

1 tsp honey
3/8 tsp cracked or coarse black pepper

Coarse salt and freshly ground pepper
8 ounces green beans, trimmed and cut into thirds
8 ounces wax beans, trimmed and cut into thirds
6 ounces frozen peas (1 1/4 cups)
1/4 cup extra-virgin olive oil
4 large cloves garlic, thinly sliced (2 tablespoons)
1 1/2 teaspoons grated lime zest, plus 1 tablespoon fresh juice
1 cup packed cilantro, finely chopped

Steps:

  • Cook pasta in a large pot of boiling salted water 6 minutes. Add beans; cook until pasta and beans are al dente, 4 to 5 minutes more. Add peas and immediately drain. Run cold water over pasta and vegetables until completely cool; drain and transfer to a large bowl.
  • In a small skillet, heat oil over medium-high. Add garlic; cook, stirring often, until golden, 1 to 2 minutes. Remove from heat; stir in lime zest and juice (it may splatter). 1 cup basic chicken stock
1/2 lb summer squash, seeded and julienned
1/2 lb zucchini, seeded and julienned
1/4 lb sugar snap pea
1/2 teaspoon olive oil
1/2 cup freshly grated parmesan cheese
1/4 cup fresh basil leaf, thinly sliced
salt
fresh ground black pepper

Steps:

  • Bring 1/2 gallon of salted water to a boil. Add the penne and cook until al dente, about 7 to 9 minutes. Drain and set aside.
  • Meanwhile, bring the chicken stock to a boil in a skillet large enough to hold the vegetables. Add the vegetables to the chicken stock and steam, covered for about 3 to 4 minutes.
  • When the vegetables are just tender, add the cooked penne and the olive oil and toss until it is heated through.
  • Divide the pasta and vegetables evenly among 4 warmed plates or bowls. Sprinkle with Parmesan cheese and basil.
  • Adjust the salt and pepper to taste.

LASAGNA OF SUMMER TRUFFLES WITH GARDEN PEAS



Lasagna of Summer Truffles with Garden Peas image

2 cups plus 1 tablespoon organic flour
3 free range large eggs, slightly beaten
8 tablespoons extra-virgin olive oil, plus extra for cooking lasagna

2.1 ounces summer truffle or preserved
2 tablespoons unsalted butter
3 tablespoons good port
3 1/2 ounces heavy cream
Freshly ground black pepper
3 tablespoons veal stock, optional
2.2 pounds small organic garden peas, plus extra for garnish

Steps:

  • To make the lasagna pasta. In a large bowl, mix the flour with the egg, 3 tablespoons olive oil and 2 pinches of salt. Mix until dough is firm and shiny, then wrap it in plastic wrap. Let rest in the refrigerator for as long as 6 hours.
  • Brush and peel the truffle, and cut into 6 very fine slices and put aside for lasagna. Cut what's left in very small cubes. In a small saucepan, heat the butter on low heat, add the cubed truffles and sweat. Add the port and reduce slightly. Then add the cream, season with salt and pepper, and let it reduce to half. Set aside.
  • In a medium pot of boiling salted water, cook the peas for 2 to 4 minutes, drain, and blend in food processor. Cook the extra peas and hold aside for garnish. Season with salt and pepper, and drizzle with 5 tablespoons of olive oil. Keep warm and set aside.
  • To lasagna noodles. Divide the dough in 3 pieces, work with 1 piece, keep the remaining covered with a dish towel. Using a rolling pin or pasta machine, work 1 part of the dough as thin as possible, then cut a rectangular piece of about 12 by 5-inch. On one long side half of this rectangular piece, lay the 6 slices of truffles evenly then fold the other half over it and roll it again until almost transparent. Then cut in 6 rectangular sheets 2 by 2 1/2-inch, making sure the truffles sit roughly in the middle. Repeat this operation twice with the 2 other pieces of dough, without the truffles.
  • Bring a large pot of salted water to a boil and add a little olive oil. Cook 1 piece of noodle to test the time which should be about 3 to 4 minutes. Cook the remaining lasagna. Drain and put aside in a bowl and coat with some olive oil.
  • To serve, place 1 sheet of plain lasagna on each plate, then spoon on the warm pea puree. Repeat this with 2 more sheets of lasagna, ending with the truffle sheet on top. Spoon some of the truffle cream on top. Garnish with a few peas and summer truffle shavings. Drizzle any left over cream around the lasagna. Serve immediately.

150g new potatoes , thickly sliced
160g French beans , trimmed
160g frozen peas
3 eggs
160g romaine lettuce , roughly torn into pieces
1 tbsp extra virgin olive oil
2 tsp cider vinegar
½ tsp English mustard powder
2 tbsp chopped mint
3 tbsp chopped basil
1 garlic clove , finely grated
1 tbsp capers

Steps:

  • Cook the potatoes in a pan of simmering water for 5 mins. Add the beans and cook 5 mins more, then tip in the peas and cook for 2 mins until all the vegetables are just tender. Meanwhile, boil the eggs in another pan for 8 mins. Drain and run under cold water, then carefully shell and halve.
  • Mix all the dressing ingredients together in a large bowl with a good grinding of black pepper, crushing the herbs and capers with the back of a spoon to intensify their flavours.
  • Mix the warm vegetables into the dressing to coat, then add the lettuce and toss everything together. Pile onto plates, top with the eggs and grind over some black pepper to serve.

DUCK WITH SUMMER PEAS & BEANS



Duck with summer peas & beans image

4 plump duck breasts , skin on
1½ tbsp cracked black peppercorn
½ tbsp coarse sea salt
450g new potato , scrubbed and halved or quartered if large
250g shelled fresh broad beans
250g shelled fresh pea
100g chopped smoked back bacon
2 garlic cloves , finely chopped
3 tbsp sherry or wine vinegar
2 tbsp chopped fresh parsley

Steps:

  • Preheat the oven to 220C/gas 7/fan 200C. Score the duck breasts on their skin side with a very sharp knife, then press the cracked pepper on to the skin and sprinkle with the salt. Heat a heavy-based frying pan until it is very hot, then put the breasts skin-side down in the hot pan, without added fat. Cook for 5-6 minutes until the skin is crisp, then turn and cook on the other side for 2 minutes. Transfer the duck breasts, skin-side up, to a baking tray, pour the fat into a bowl and wipe the frying pan clean. Roast the duck for 8-10 minutes, depending on thickness.
  • While the duck is roasting, prepare the vegetables. Cook the potatoes in boiling salted water for 10 minutes. Remove the duck breasts from the oven and set aside to rest for about 10 minutes. After the potatoes have cooked for 10 minutes, tip in the broad beans and cook for 1 minute, then add the peas and cook for 3-4 minutes until all the vegetables are tender. Drain well.
  • Heat half the duck fat in the frying pan until hot, and cook the bacon until browned, about 4 minutes. Toss in the garlic and veg until piping hot and glossy. Pour in the vinegar, let it bubble, then stir in the parsley, and season with salt and pepper. Serve with the duck.

3 pounds fresh green peas, shelled
1 teaspoon sugar
2 tablespoons unsalted butter, cut up
Salt and freshly ground black pepper to taste

Steps:

  • Spread the lettuce in the bottom of a large pot, add the peas and sugar and dot with butter. Cover the pot and set over medium heat. Cook for 6 to 7 minutes; uncover and test the peas -- they should be bright green and tender. (If not, continue to cook, checking every 2 minutes.) Stir; season with salt and pepper.
