3 cups sliced peeled fresh or frozen peaches, thawed
3 medium yellow tomatoes, chopped
1 medium sweet yellow pepper, chopped
1 medium cucumber, peeled and chopped
1/2 cup chopped sweet onion
1 garlic clove, minced
1/3 cup lime juice
2 tablespoons rice vinegar
1 tablespoon marinade for chicken
1 teaspoon salt
1/4 teaspoon hot pepper sauce
1 to 3 teaspoons sugar, optional
Additional chopped peaches, cucumber and tomatoes

Steps:

  • Place the first 6 ingredients in a food processor; process until blended. Add lime juice, vinegar, marinade for chicken, salt and hot pepper sauce; process until smooth. If desired, stir in sugar., Refrigerate, covered, at least 4 hours. Top servings with additional chopped peaches, cucumber and tomatoes.

The soup we know as gazpacho originated in Spain's southern region of Andalusia. Farm harvesters traditionally prepared their lunches in the fields by pounding garlic, stale bread, water, olive oil, and salt in a large wooden bowl, forming a sort of nourishing paste to which they added cold water. Legend maintains that Christopher Columbus took barrels of this paste on his first voyage to the New World. Discovering tomatoes, cucumbers, and bell peppers in the Andes, he added them to the mix, creating the liquid salad we still call gazpacho. From "The Florida Keys Cookbook". 2 1/2 cups 1/2-inch cubes trimmed French bread
1/3 cup chopped fresh basil
3 tablespoons bottled olive oil vinaigrette
2 medium tomatoes, cored, seeded, chopped
1 garlic clove, chopped
3 cups chilled regular or spicy mixed vegetable juice
1 cup drained canned garbanzo beans (chickpeas)
3/4 cup chopped yellow bell pepper
3/4 cup chopped seeded peeled cucumber

Steps:

  • Combine bread, basil and vinaigrette in medium bowl; toss to blend. Transfer half of bread to heavy medium skillet. Stir over medium-low heat until cubes are golden, about 10 minutes. Set aside.
  • Place remaining bread in processor. Add tomatoes and garlic and process until coarse purée forms. With machine running, gradually add vegetable juice and process until smooth. Transfer mixture to medium bowl. Mix in garbanzo beans, bell pepper and cucumber. Season soup with salt and pepper.
  • Ladle soup into chilled bowls. Top with croutons and serve.

3 tablespoons butter
1 leek, cleaned well and chopped
Sea salt and freshly ground black pepper

6 ears fresh sweet corn, kernels removed
1/2 teaspoon ground turmeric
1 clove garlic, minced
4 cups vegetable stock, plus more if needed
Zest and juice of 1 lime
Mexican crema, for serving
Pickled Fresno chile slices, for serving

Crushed Marcona almonds, for serving
3/4 cup olive oil
1 bunch fresh cilantro, leaves and tender part of the stems

Steps:

  • Heat the butter in a Dutch oven over medium heat. Add the leek and season with salt and pepper. Saute the leek until soft but not browned, about 5 minutes. Add the corn kernels and cook 6 to 8 minutes, stirring from time to time. Add the turmeric and garlic and cook until fragrant, about 1 minute. Add the stock, bring to a simmer and cook until the corn is soft, another 6 to 8 minutes.
  • Transfer the mixture to a blender (preferably high speed). Add the lime zest and juice, season with salt and pepper and blend until very smooth. Taste and adjust the seasoning if necessary. Let cool, then refrigerate the mixture (in the blender carafe if desired) until chilled, at least 1 hour.
  • When ready to serve, blend the mixture again, adding more stock if needed. Garnish with a drizzle of crema (in a squeeze bottle works best), a couple pickled Fresno slices, a swirl of Cilantro Oil and some crushed Marcona almonds.
  • Put the olive oil, cilantro, green onion and garlic in a blender and process until smooth. Pour through a fine-mesh strainer into another bowl; season with salt and pepper. If necessary, whisk in a tablespoon of water at a time, up to 1/4 cup. Season to taste and transfer to a squeeze bottle.

10 tomatoes, quartered
1 jalapeno
6 cloves garlic
3 tablespoons olive oil
Salt and freshly ground black pepper
1 link chorizo, casing removed
2 stalks celery, chopped
1/2 onion, chopped
1 carrot, chopped
1/2 cup white wine
1 tablespoon tomato paste
3 cups low-sodium chicken stock
1 (14-ounce) can diced tomatoes
1 bay leaf
5 sprigs fresh thyme
1 tablespoon cumin
1 cup heavy cream
1 pint cherry tomatoes

Steps:

  • Serving suggestions: cantaloupe balls, chopped tomatoes, chopped bell peppers, minced mint
  • Preheat oven to 350 degrees F.
  • Toss tomatoes, garlic cloves and jalapeno with olive oil, salt and pepper on a large sheet tray. Roast 25 minutes.
  • Brown chorizo in a large pot over medium-high heat. Add celery, onions and carrots and soften without browning. Deglaze with white wine. Add tomato paste and cook until bottom of pot begins to brown. Deglaze with stock. Add canned tomatoes, bay leaf, thyme and cumin. Simmer 30 minutes. Add heavy cream. Remove stems from herbs and blend mixture in a blender. Remove vegetables from oven and add to blender along with cherry tomatoes. Season with salt and pepper and chill. Check seasoning again, and serve with garnishes of your choice.

LATE SUMMER GAZPACHO WITH HATCH CHILES



Late Summer Gazpacho with Hatch Chiles image

The order in which the ingredients are pulsed does not matter; just make sure you pulse the chopped hot pepper with at least one of the other vegetables so it all incorporates nicely. Hatch peppers are available later summer, grown in New Mexico and many chefs and cooks are crazy about them. If you can't find them, use a jalapeno or another kind of chile. The fennel adds a bright anise flavor. You can pulse the vegetables coarsely, or until they are pretty finely ground, and you can add more or less tomato juice as you please--gazpacho is a very personal balance between flavor and texture.

2 shallots, roughly chopped
1 red onion, roughly chopped
1 large seedless cucumber, cut into chunks
1 medium bulb fennel, trimmed, cored and cut into 1-inch pieces
1 mild Hatch pepper or jalapeno, stemmed, seeded and chopped
8 large plum tomatoes, cored, seeded and cut into 1-inch pieces
2 thin slices slightly dry white bread, crusts trimmed, ripped into chunks
3 cups tomato or vegetable juice (such as V8)
3 tablespoons extra-virgin olive oil (break out the good stuff for this recipe), plus extra for drizzling
2 tablespoons sherry vinegar
Kosher or coarse salt and freshly ground pepper
1 zucchini, diced small
1 red bell pepper, cored, seeded and diced small
Diced avocado and lime wedges, for serving, optional

Steps:

  • In the bowl of a food processor or in a blender, combine the shallots with the onion and pulse until finely chopped; do NOT puree! Turn into a large bowl. Place the cucumber, fennel and hot pepper in the food processor and do the same, then add them to the onion mixture. Then add half of the tomatoes with half of the bread chunks, pulse and turn them into the bowl as well. Finally, pulse the rest of the tomatoes with the remaining bread, add them to the lot and stir to mix.
  • Scoop 1 cup of the vegetable mixture back into the food processor, then add the tomato juice, olive oil and vinegar and season with salt and pepper. Puree the mixture, then add it to the bowl along with the diced zucchini and bell pepper; stir to mix. Check the seasonings.
  • Chill the soup for at least 3 hours and up to 2 days (the longer you let it sit in the fridge, the more the flavors meld) and serve quite cold. Stir well before serving, adjust the seasonings as needed and pass the diced avocado and lime wedges on the side if desired. You may also want to give the portions a final drizzle of extra-virgin olive oil.
