- If using fresh sweet potatoes, place in a large saucepan or Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook 25-40 minutes or until tender. Drain; cool slightly and peel. Cut into chunks., Preheat oven to 350°. Place sweet potatoes in a 2-qt. baking dish. In a small saucepan, combine butter, syrup, brown sugar and cinnamon; bring to a boil, stirring constantly. Pour over potatoes. , Bake, uncovered, 30-40 minutes or until heated through.

CANDIED SWEET POTATOES
These perfect candied sweet potatoes are soft, buttery, extra saucy, caramelized, and sweet. I especially love this Thanksgiving side dish because you can prepare the elements of this recipe ahead of time AND purchase the ingredients in advance, too.

- Peel then slice the sweet potatoes into 1/2 inch thick slices. Place in a greased 9×13 inch or other 3 quart baking dish. Sprinkle salt on top and toss to coat. I just use nonstick spray to grease.
- Preheat oven to 375°F (191°C).
- Cut stick of butter in half. (Helps it melt easier.) Combine all the butter, water, maple syrup, brown sugar, cinnamon, nutmeg, and ginger into a medium saucepan over medium heat. Cook and stir until the butter has melted. Stop stirring and bring to a gentle boil. Boil for 2 minutes without stirring. Remove sauce from heat and stir in the vanilla extract. (And orange zest, if using.)
- Pour sauce over potatoes and toss to coat.
- Bake for 1 hour, stopping and stirring the sweet potatoes every 20 minutes. After the first 20 minutes, I cover the dish with aluminum foil so the potatoes bake evenly.
- Remove from the oven, sprinkle with rosemary and sea salt (if using), then cool uncovered for 10 minutes before serving. The sauce is thin right out of the oven but thickens as it cools.
- Cover and store leftovers in the refrigerator for up to 1 week. Sauce will be thick after refrigeration, but thins out as you warm the leftovers up. Simply warm in the microwave.

- Peel the sweet potatoes and cut them into slices.
- Melt the butter in a heavy skillet and add the sliced sweet potatoes.
- Mix the sugar, cinnamon, nutmeg and salt. Cover the sweet potatoes with sugar mixture and stir. Cover skillet, reduce heat to low and cook for about 1 hour or until potatoes are "candied". They should be tender but a little hard around the edges. Also the sauce will turn dark. You will need to stir occasionally during the cooking. Stir in the vanilla just before serving. Serve hot.

- Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling, Place sweet potatoes in a medium saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 13-15 minutes. Drain potatoes; return to pan. Mash until very smooth; cool to room temperature. , In a bowl, cream butter and sugar. Add eggs; mix well. Add milk, two cups mashed sweet potatoes, vanilla, cinnamon, nutmeg and salt; mix well. Pour into crust. Bake for 15 minutes. SUGARCANE SWEET POTATOES
I was a boy-crazy preteen when I went on a trip to visit my friend's grandmother Beauxma in Saint Martinville, Louisiana, in the sugarcane-growing region of the state. I was so taken by the story of the Evangeline Oak. In 1907, St. Martinville author Felix Voorhies wrote Acadian Reminiscences: With the True Story of Evangeline, inspired by tales told to him by his grandmother. The account of Emmeline Labiche and Louis Arceneaux is said to be about the real people behind Longfellow's tragically romantic poem "Evangeline," about a woman looking for her lost love, Gabriel. In 1929, Hollywood came to town and filmed the movie Evangeline, starring Dolores Del Rio in the title role. After the filming, a statue of Evangeline (looking a lot like Dolores Del Rio) was erected on the spot marking the alleged burial place of Emmeline Labiche. As a whole, Southerners have never let the truth stand in the way of a good story; and now the stories of Emmeline and Louis and Evangeline and Gabriel have fused into one story told time and again beneath the spreading branches of the Evangeline Oak. In fact, Louisianans have taken the story so to heart that the Evangeline variety of sweet potato is fast becoming one of the state's most popular sweet potatoes.

- Heat a grill to medium-high.
- Put the potato chunks in a microwave-safe 2-quart baking dish and add 1/2 cup water. Cover and microwave for 5 to 10 minutes, until the potatoes are firm-tender (do not overcook or they will be too mushy to grill). Drain the potatoes.
- In a small bowl, whisk together the oil, parsley, chipotle powder, salt, and black pepper. Pour the mixture over the potatoes and stir to coat. Alternate threading the potatoes, bell peppers, and pineapple chunks onto the skewers.

CANDIED SWEET POTATOES
When Fred Harvey opened his first Harvey House restaurant in 1876 on the railway line in Topeka, Kan., his idea was radical for the time: Railroad passengers would be fed good food in a pleasant environment. His concept was so successful that it spawned 84 restaurants, a Hollywood movie and an official cookbook. And it was in "The Harvey House Cookbook" that we found this excellent recipe for sweet potatoes candied with confectioners' sugar and butter. It is best served warm rather than piping hot, which makes it convenient for big meals like Thanksgiving. Bake it before you roast your turkey, then reheat it briefly just before serving.

- Place the sweet potato chunks into a large mixing bowl.
