3 cups pecan halves
1/4 cup butter, melted
1 cup sugar
1/4 cup water
1 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon cardamom
1/2 teaspoon fresh grated nutmeg

Steps:

  • Preheat oven to 350°F.
  • Butter large cookies sheets.
  • Heat in a saucepan melted butter, water and sugar till sugar is dissolved, add spices and pecans stirring till well coated about 3-5 minutes.
  • Transfer to cookie sheet and bake until golden about 10 minutes.
  • Cool store in airtight containers.

1 cup sugar
1 egg white
1 tablespoon water

Steps:

  • Beat the egg white and water until frothy but not stiff.
  • Stir in the sugar, salt, and cinnamon.
  • Add the pecans and stir well until the pecans are completely coated.
  • Spread the nuts on a large baking sheet and bake at 200 degree Fahrenheit for 45 minutes, stirring every 15 minutes.
  • Remove them from the oven when dry and toasted.
  • When cool, store in an airtight container.

1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon curry powder
2 large egg whites
2 pounds pecan or walnut halves

Steps:

  • In a large resealable bag, combine the sugar and seasonings; set aside. In a large bowl, beat egg whites until foamy; fold in the nuts. Transfer to the bag; seal and shake to coat evenly., Place nuts in a single layer in two greased 15x10x1-in. baking pans. Bake at 250° for 1-1/2 hours, stirring every 30 minutes. 2 egg whites
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons water
1 cup white sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
18 ounces pecans

Steps:

  • Beat egg whites, vanilla, and water together in bowl, until frothy not stiff.
  • In gallon size zip-lock plastic bag shake together sugar, salt, cinnamon and nutmeg, until well mixed.
  • Add the egg mixture and pecans at the same time to sugar mix.
  • Zip bag and shake well to cover all pecans.
  • Line a large cookie sheet with tin foil and spray the foil with cooking spray.
  • Spread out pecans on foil and bake at a 250 degree oven for 50 min, stirring every 15 minutes.
  • Let cool and store in airtight container.

1 Tbsp ground cinnamon
1/2 tsp salt
1/4 tsp ground allspice
1/4 tsp ground cloves
1/4 tsp ground nutmeg
8 c pecans, halved

Steps:

  • 1. Combine first 8 ingredients in large bowl; mix well.
  • 2. Add pecans to mixture; stir until evenly coated.
  • 3. Spread pecans in a greased jelly roll pan.
  • 4. Bake at 275 degrees for 50-55 minutes.
  • 5. Remove to waxed paper while still warm; cool.

Whip egg white and water until frothy and pour over pecans. Mix thouroughly until all pecans are well coated. Sprinkle the sugar and spices over the pecans and stir until coated evenly. Spread evenly on cookie sheet. Bake at 300* for 20-30 min. or until dry. Stir every 10 Min.
