A yummy dairy-free treat! You can use egg substitute in place of eggs to make a vegan version.

⅔ cup unbleached all-purpose flour
⅔ cup packed brown sugar
¼ cup finely chopped walnuts
1 teaspoon ground cinnamon
¼ teaspoon ground cardamom
¼ teaspoon salt
½ teaspoon baking powder
1 cup dates, pitted and chopped
2 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Lightly oil an 8-inch square baking pan.
  • Combine flour, brown sugar, chopped walnuts, cinnamon, cardamom, salt, baking powder, and dates; mix well.
  • Add eggs (see Cook's Note) and stir until dry ingredients are moistened.
  • Spoon batter into prepared pan. Bake in preheated oven until toothpick inserted into center comes out clean, about 25 minutes. Cool slightly before cutting into bars or squares.

These are wonderful cake like dessert bars rolled in powdered sugar.

½ cup butter
2 cups packed brown sugar
2 cups cake flour
1 teaspoon baking powder
1 teaspoon vanilla extract
1 cup chopped walnuts
2 tablespoons confectioners' sugar for dusting

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Grease one 9x13 inch baking dish.
  • In a saucepan over medium heat, melt the butter and blend together with the brown sugar. Remove from heat; set aside to cool.
  • Add the flour, baking powder, vanilla and chopped nuts.
  • Pour into prepared pan and bake at 250 degrees F (120 degrees C) for 50 minutes. Remove from oven and allow to cool. Cut into bars and roll in confectioners' sugar.
