KETO LEMONADE POPSICLES

These keto lemonade popsicles are a refreshing summertime treat on a hot sunny day. These ice pops are kid approved and sugar-free too!

Number Of Ingredients 4

1 cup of freshly squeezed lemon juice (from about 6 large lemons)
4 cups of water
1/2 to ¾ c confectioners Swerve or use sweetener of choice
two pinches of salt

Steps:

  • Using a juicer or a citrus squeezer, squeeze the juice out of the lemons until you have 1 cup of freshly squeezed juice. It will take around 6 large lemons to yield 1 cup of juice.
  • Strain out lemon seeds and pulp by pouring the freshly squeezed lemon juice through a strainer.
  • Stir in water and confectioner's Swerve. Add in two pinches of salt and mix until combined.
  • Pour into popsicles molds. Add popsicles sticks and freeze overnight or until hardened.

These popsicles are meant for grown-ups, as they a tart & tangy, and quite lemony in flavor. If you're fond of lemonade, (like I am) you'll enjoy these popsicles.

Number Of Ingredients 4

1 (1/3 ounce) box sugar-free lemon Jell-O gelatin (0.3 ounce)
1 (1/2 ounce) container sugar-free lemonade-flavored drink mix
2 cups boiling water
2 cups cold water

Steps:

  • Stir together until dissolved, the sugar free jell-o and boiling water.
  • (This should take about one minute).
  • Then add the cold water, and stir.
  • Add the sugar free lemonade drink mix, and stir.
  • Pour the liquid into plastic popsicle molds, and place them in the freezer.
  • (I filled my popsicle molds 3/4's full, and froze them overnight in the freezer).
  • To remove popsicles from the plastic molds, run them under hot water for a few seconds.
  • Note: To make these popsicles, I used 12-(3 ounce) popsicle molds.
  • Also, the sugar free lemonade drink mix I used was, Fit & Active, which I purchased from Aldi's.

These popsicles have a perfect texture like store bought. You can make all one flavor and make flavors you can't buy like cranberry, mango, melon, ice tea, etc. Perfect for diabetics like me or dieters. My favorite is orange. Yum!

1 g crystal light low-calorie powdered drink mix (a tub)
2 cups boiling water
2 cups cold water

Steps:

  • Mix Jello with boiling water.
  • Add cold water.
  • Add drink mix.
  • Pour into molds, ice trays, or paper cups for push-ups.
