I have not tried this recipe. I got this recipe from Switch Recipes. This recipe was posted by Frozen Peach. The slight bit of gelatin helps stablize the mousse so you can make it in advance.

- Preparation:.
- Chill a medium mixing bowl in the refrigerator.
- Meanwhile, place the cold water in a small bowl. Sprinkle with gelatin and let stand 1 minute. Add boiling water and stir until gelatin is dissolved. Set aside.
- In the chilled bowl, combine Splenda, cocoa powder, salt, whipping cream and vanilla until roughly mixed. With an electric mixer on medium speed, beat mixture until it becomes stiff. Do not over-beat or you will end up with chocolate butter. Beat in the gelatin mixture just until combined.
- Spoon chocolate mousse into decorative dessert dishes or martini glasses. Chill 1 to 2 hours before serving. Top with whipped cream lightly sweetened with Splenda and a sprinkling of cocoa powder if desired.
- May be made a day in advance.

STEVIA SUGAR FREE CHOCOLATE MOUSSE
Stevia is a natural sweetner and so potent. This dessert is sugar, aspartame, nutrasweet, and egg free and something I can serve my kids without a bad conscience. My mom sent me the recipe and we just tried it. Very rich. Be careful with the amount of stevia because a little goes a long way. Next time I make it I will use less stevia to avoid an aftertaste.

Steps:
- In a small bow, sprinkle gelatin over cold water and let stand 5 minutes to soften.
- Add boiling water, stirring until gelatin is completely dissolved and mixture is clear. Cool slightly.
- In medium bowl, stir together stevia and cocoa. Add whipping cream and vanilla. Beat at medium speed until stiff peaks form. Pour in gelatin mixture and beat until well blended.
- Spoon into serving dishes and chill for at least 1/2 hour.

I have not tried this recipe. I got this recipe from Ossg Recipes. I like this with the smaller amount of cream, for a sturdier texture, but I know folks who like it with the larger amount, for a fluffier texture. Your choice! Try it with vanilla pudding and a half-teaspoon of extra vanilla, too!

- In a separate bowl, whip the cream until just about stiff.
- Turn the mixer to the lowest setting, blend in the pudding/tofu mixture, and TURN OFF THE MIXER!

- Cut chocolate into slivers with a large knife. Place in a large bowl.
- Mix coconut milk, egg yolks, stevia, and salt in a saucepan. Heat over medium until steaming. Do not boil. Cook for 15 minutes until thickened.
- Pour milk mixture through fine meshed sieve to remove lumps into chocolate.
- Let mixture sit for five minutes.
- Stir chocolate and milk mixture slowly and constantly until fully mixed.
- Add vanilla and mix inches.
- Pour into container such as a bowl or individual cups.
- Refrigerate for at least 4 hours before serving.
