Strawberry Shortcakes with Brown Sugar Biscuits and White Chocolate Cream image

Number Of Ingredients 20

White chocolate cream
2 ounces high-quality white chocolate (such as Lindt or Perugina), chopped
1 tablespoon water
1/2 teaspoon unflavored gelatin
2 1/2 cups chilled whipping cream, divided
3 tablespoons sugar
Biscuits
3 cups all purpose flour
1/2 cup (packed) golden brown sugar
4 teaspoons baking powder
3/4 teaspoon salt
9 tablespoons (1 stick plus 1 tablespoon) unsalted butter, cut into 1/4-inch cubes, chilled
1 cup whipping cream, plus additional for brushing biscuits
2 tablespoons raw sugar*
Strawberries
4 cups halved hulled strawberries (about 2 to 2 1/2 pounds)
1/4 cup sugar
2 tablespoons fresh lemon juice
1 tablespoon finely grated lemon peel
1 tablespoon chopped fresh mint or 2 teaspoons dried lavender blossoms**

Steps:

  • For white chocolate cream:
  • Place white chocolate in medium bowl. Place 1 tablespoon water in very small bowl. Sprinkle gelatin over; let stand until gelatin softens, about 15 minutes. Bring 1/2 cup cream and 3 tablespoons sugar to simmer in small saucepan, stirring until sugar dissolves. Remove from heat; add gelatin and stir until dissolved. Pour gelatin mixture over white chocolate, whisking until melted and smooth. Cool to room temperature.
  • Beat remaining 2 cups cream in large bowl until peaks form. Fold 1/2 cup cream into white chocolate mixture to lighten. Fold chocolate mixture into remaining cream in bowl. Refrigerate until cold, at least 1 hour and up to 3 hours.
  • For biscuits:
  • Combine flour, brown sugar, baking powder, and salt in large bowl; whisk to blend. Add butter. Using fingertips, rub in until coarse meal forms. Gradually add 1 cup cream, tossing until moist clumps form. Gather dough into ball; shape into 8 1/2-inch round on parchment or foil. Chill 15 minutes.
  • Preheat oven to 350°F. Line rimmed baking sheet with parchment paper. Cut dough into eight 3-inch rounds, gathering scraps and reshaping as needed. Place rounds on prepared sheet, spacing 2 inches apart. Brush tops with cream and sprinkle with raw sugar. Bake until tester inserted into center comes out clean, about 20 minutes. Cool completely. (Can be made 2 hours ahead. Let stand at room temperature. If desired, rewarm in 350°F oven 5 minutes before using.)
  • For strawberries:
  • Combine strawberries, 1/4 cup sugar, lemon juice, lemon peel, and mint or lavender in medium bowl; toss to blend. Let stand at room temperature until juices form, at least 10 minutes, or refrigerate until ready to use, up to 2 hours.
  • Cut biscuits in half horizontally. Place 1 bottom on each of 8 plates and mound strawberries with syrup on each, dividing equally. Cover with white chocolate cream and biscuit tops.
  • *Also called turbinado or demerara sugar; available at most supermarkets and natural foods stores.
  • **Also called culinary lavender buds; available at many health foods stores and from surfasonline.com.

1 cup white flour
1 cup whole wheat flour
4 -6 tablespoons Splenda granular
1/2 teaspoon salt
4 teaspoons baking powder
1/2 teaspoon cream of tartar
1/2 cup butter, cold
3/4 cup milk, cold
1 cup raisins (I soak them in hot water so they are moist after baking. Also works well with Craisins or currents)

Steps:

  • Pre-heat oven to 450*.
  • Soak raisins in hot water so they are moist for baking.
  • Mix first five ingredients, cut in butter until it is pea sized.
  • Add milk, stir to combine (don't over mix), dough will come together when kneaded.
  • Drain raisins and stir until combined.
  • Turn onto lightly floured surface, knead 8-10 times.
  • Roll to 3/4" thickness, cut with biscuit cutter. 2" cutter makes 15 biscuits.
  • Brush with milk and sprinkle with splenda (or sugar).
  • Bake on ungreased cookie sheet for 12-15 minutes.

1/2 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons cold unsalted butter, cut into small pieces, plus 4 tablespoons, melted
3/4 cup cold buttermilk
Heavy cream, for brushing
Granulated sugar, for sprinkling

Steps:

  • Preheat the oven to 450 degrees F.
  • Combine the flour, baking powder, baking soda and salt in a large bowl. Using a dough cutter, combine until the ingredients are incorporated. Scatter the cold butter pieces over the top of the flour mixture and continue to combine until the mixture resembles coarse meal. Add the buttermilk and mix just until the dough begins to come together.
  • Scrape the dough onto a lightly floured counter. Pat the dough into a 10 by 12-inch rectangle about 3/4-inch thick. Use a 3-inch round cutter to cut out the biscuits. Press together the scraps of dough and repeat the process. Place the biscuits on a baking sheet lined with parchment paper; brush the tops with cream and sprinkle with sugar. Bake the biscuits until lightly golden brown, 12 to 15 minutes. Remove from the oven and brush the tops with the remaining melted butter.

Steps:

  • Put oven rack in middle position and preheat oven to 400°F. Line a large baking sheet with parchment paper.
  • Whisk together flour, baking powder, granulated sugar, and salt in a bowl. Blend in butter cubes with your fingertips or a pastry blender until mixture resembles coarse meal. Stir together egg and buttermilk in another bowl, then add to flour mixture, stirring with a fork until a dough forms.
  • Gather dough into a ball, then turn out onto a floured surface and gently knead 7 or 8 times. Roll out dough with a floured rolling pin into a 1/2-inch-thick round and cut out as many biscuits as possible with biscuit cutter. 2 (12 ounce) cans refrigerated biscuits (the smaller version, not Grands)
4 tablespoons sugar
1 tablespoon ground cinnamon
2 tablespoons butter (cut into small pats)

Steps:

  • Preheat the oven to 375°F.
  • Mix sugar and cinnamon together.
  • Cut biscuits in half.
  • Roll each biscuit half in the cinnamon sugar mixture.
  • Place in a greased dish (square or rectangle--I used one size smaller than a 9x13).
  • You can crowd them together; they will bake up nice and fluffy.
  • Top with butter pats randomly across the top.
  • Bake for 10-20 minutes, depending on how well-done you like your rolls.
  • Watch them closely.
  • If you want a really good treat, top these with Buttercream Icing (Recipe #95416 is GREAT!) once they are right out of the oven.
  • It will melt all over the rolls.
  • Make the icing ahead of time and store in the fridge, then soften it in the microwave.
  • Storebought icing could also be used.

1 can sliced peaches in heavy syrup
1/2 teaspoon ground cinnamon
2 pinches ground nutmeg
1 pint heavy cream

Steps:

  • Place biscuits on a cookie sheet and sprinkle with 2 tablespoons sugar. Bake at 425 degrees F for 10 minutes or until golden at edges.
  • Heat peaches seasoned with cinnamon and nutmeg over low heat in a small saucepan.

8 oz can buttermilk biscuits
1/2 c granulated sugar
1 tsp ground cinnamon
1 1/2 c cooking oil

Steps:

  • 1. Heat cooking oil in a small skillet
  • 2. In a shallow dish, mix sugar and cinnamon well.
  • 3. Seperate biscuits and cut 1" hole in the center with a cookie cutter (we use a water bottle lid). Save cut out holes for cooking
  • 4. Drop 3 or 4 biscuits into hot oil and cook until golden brown. Flip them over and cook opposite side. Do the same thing with the holes.
  • 5. Remove from oil and dredge in the sugar mixture and put on a seperate plate to cool.
  • 6. Note: You could also coat with powdered sugar.

1 cup self-rising flour

  • Preheat oven to 425° F. Line a baking sheet with foil or parchment paper. Melt the shortening and butter together in the microwave. Set aside. In a large mixing bowl, whisk together both the flours, baking powder, and cinnamon; add the melted mixture, milk, and pineapple, stirring just until combined. At this point, you can just drop dough by rounded tablespoons onto the baking sheet about 1" apart and bake for 13-15 minutes, or until tops are lightly browned. (OR) as I did.. I sifted a little flour over the top of the dough then used a spoon to pull the floured side against the side of the bowl so I could sift a little flour in the bottom of the bowl. Flour hands and pull off pieces of dough (or use a spoon) about the size of a small lemon, roll it around in your palms a few times, then place them on the baking sheet about 1" apart. Bake for 13-15 minutes, or until tops are lightly browned. Meanwhile, make the glaze.. Melt the butter in a small bowl in the microwave until fairly hot. Stir in brown sugar until thoroughly combined. Reheat for a few seconds to dissolve sugar, if needed. Spoon (or brush) the glaze over tops of hot biscuits. Serve warm.

Bring 1/2 cup cream and 3 tablespoons sugar to simmer in small saucepan, stirring until sugar dissolves. Remove from heat; add gelatin and stir until dissolved. Pour gelatin mixture over white chocolate, whisking until melted and smooth. Cool to room temperature.
  • Beat remaining 2 cups cream in large bowl until peaks form. Fold 1/2 cup cream into white chocolate mixture to lighten. Fold chocolate mixture into remaining cream in bowl. Refrigerate until cold, at least 1 hour and up to 3 hours.
  • For biscuits:
  • Combine flour, brown sugar, baking powder, and salt in large bowl; whisk to blend. Add butter. Using fingertips, rub in until coarse meal forms. Gradually add 1 cup cream, tossing until moist clumps form. Gather dough into ball; shape into 8 1/2-inch round on parchment or foil. Chill 15 minutes.
  • Preheat oven to 350°F. Line rimmed baking sheet with parchment paper. Cut dough into eight 3-inch rounds, gathering scraps and reshaping as needed. Place rounds on prepared sheet, spacing 2 inches apart. Brush tops with cream and sprinkle with raw sugar. Bake until tester inserted into center comes out clean, about 20 minutes. Cool completely. (Can be made 2 hours ahead. Let stand at room temperature. If desired, rewarm in 350°F oven 5 minutes before using.)
  • For strawberries:
  • Combine strawberries, 1/4 cup sugar, lemon juice, lemon peel, and mint or lavender in medium bowl; toss to blend. Let stand at room temperature until juices form, at least 10 minutes, or refrigerate until ready to use, up to 2 hours.
  • Cut biscuits in half horizontally. Place 1 bottom on each of 8 plates and mound strawberries with syrup on each, dividing equally. Cover with white chocolate cream and biscuit tops.

1 cup blanched almond
1 cup icing sugar
1 teaspoon all-purpose flour
2 egg whites
1/3 cup granulated sugar
1 teaspoon almond extract

Steps:

  • In food processor, blend almonds and 1/4 cup of the icing sugar until finely ground.
  • Blend in remaining icing sugar and flour.
  • In bowl, beat egg whites until soft peaks form.
  • Gradually beat in granulated sugar until stiff glossy peaks form.
  • Fold in the nut mixture and the almond extract.
  • Grease baking sheet and preheat oven to 300°F.
  • Using a pastry bag, pipe biscuit mixture into 1 1/2 inch wide mounds about 1 1/2 inches apart.
  • Bake in 300F oven for 40 to 45 minutes until golden brown.
  • Turn off the oven and allow the biscuits to dry inside the oven for 20 minutes.
  • Remove from oven and cool on racks.
  • Dust with icing sugar.

LEMON AND SUGAR MINI BISCUITS

2 cups all-purpose flour, plus more for dusting
2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
4 tablespoons cold unsalted butter, cubed
1 tablespoon finely grated lemon zest
1 cup buttermilk
1 egg, beaten
3 tablespoons raw sugar, for garnish

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, combine the flour, granulated sugar, baking powder, salt and baking soda and whisk well to combine. Next, add the butter and lemon zest and combine the mixture with a fork until coarse crumbles are created. Add the buttermilk and mix until just combined. Make a disk with the dough and cover in plastic wrap. Chill for 15 minutes.
  • Dust a cutting board with flour. Roll out the dough to about 3/4-inch thickness. Cut the biscuits with a 1 1/2-inch floured cookie cutter, juice glass or something similar. Reroll the remaining dough and continue making biscuits.
  • Place the biscuits on the prepared baking sheet. Brush the tops with the beaten egg and sprinkle with the raw sugar. Bake until golden brown, about 15 minutes.

225 g plain flour, sifted
110 g sugar
110 g butter, cut into cubes
1 egg, lightly beaten
60 g icing sugar
1 tablespoon single cream

Steps:

  • Preheat the oven to gas mark 4/350°F/180°C.
  • You will need a 10 cm / 4 inch star-shaped biscuit cutter.
  • Prepare a baking tray lined with parchment paper.
  • Sift the flour alongwith the sugar in a bowl and add in the butter and work with your fingertips until the mixture is crumbly.
  • Add the beaten egg and a teaspoon of cold water and mix again until the mixture forms a ball leaving the sides of the bowl clean.
  • On a lightly floured surface, roll out the dough to about 1/3 cm thickness.
  • Cut out the biscuits using a 10 cm star-shaped cutter.
  • If you would like to use it as a decoration, using a skewer, make a hole in each one to thread a wire after baking.
  • Transfer the biscuits onto the baking tray and bake them in the middle shelf for 15-20 minutes.
  • Remove them from the oven and cool them on the tray for 5 minutes before transferring onto a wire rack to let it cool.
  • Meanwhile, make the icing sugar glaze by mixing the icing sugar with the cream till smooth.
  • When the biscuits are cold enough to handle, brush the top of the biscuits with the glaze to give it a thin coat and leave it on the rack to dry completely.
  • If using as a decoration, once completely cool and dried, thread a thin wire through the holes and hang them on the tree. If not, then store in an airtight container.

  • Place biscuits on a lightly greased baking sheet.
