1 ½ teaspoons white sugar
1 cup warm water (100 degrees F/40 degrees C)
1 ½ teaspoons active dry yeast
1 tablespoon olive oil
½ teaspoon salt
2 cups all-purpose flour
1 (8 ounce) can crushed tomatoes
1 tablespoon packed brown sugar
½ teaspoon garlic powder
1 teaspoon olive oil
½ teaspoon salt
3 cups shredded mozzarella cheese, divided
½ pound bulk Italian sausage
1 (4 ounce) package sliced pepperoni
1 (8 ounce) package sliced fresh mushrooms
½ green bell pepper, chopped
½ red bell pepper, chopped

Steps:

  • Combine the white sugar and the warm water in a large bowl or in the work bowl of a stand mixer. Sprinkle the yeast over the warm sugar water, and let stand for 5 minutes until the yeast softens and begins to form a creamy foam. Stir 1 tablespoon olive oil into the yeast mixture.
  • Stir 1/2 teaspoon salt into the flour. Mix half of the flour mixture into the yeast water, and stir until no dry spots remain. Stir in the remaining flour, a 1/2 cup at a time, mixing well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes (or mix with dough hook in stand mixer).
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a light cloth, and let rise in a warm place until doubled in volume, about 1 hour.
  • Combine the crushed tomatoes, brown sugar, garlic powder, 1 teaspoon olive oil, and salt in small saucepan. Cover pan, and cook over low heat until tomatoes start to break down, about 30 minutes.
  • Preheat an oven to 450 degrees F (230 degrees C). Deflate the dough and turn it out onto a lightly floured surface. Cut the dough into 2 equal pieces. Roll one piece into a 12 inch thin circle. Roll the other half into a thicker, 9 inch circle.
  • Place the 12 inch dough round into an ungreased 9 inch springform pan. Sprinkle dough with 1 cup of cheese. Shape sausage into a 9 inch patty and place in pan on top of the cheese. Layer pepperoni, mushrooms, green pepper, red pepper, and remaining cheese on top of sausage patty. Top with the 9 inch dough round and pinch edges to seal. Cut several 1/2 inch vent holes in the top crust. Spread sauce evenly on the top crust, leaving a 1/2 inch border at the edges.
  • Bake pizza in the preheated oven until the crust is set, the cheese is melted, and the sausage is cooked through, 40 to 45 minutes. Let hot pizza rest for 15 minutes before cutting into wedges and serving.

One 1-pound loaf store-bought frozen bread dough, thawed and left to rise according to the package instructions
All-purpose flour, for dusting
2 teaspoons olive oil, plus more for drizzling
Large pinch kosher salt
Arrabbiata Sauce, recipe follows, cooled
2 tablespoons grated Parmesan
1/4 cup shredded mozzarella
14 slices pepperoni, chopped
10 pieces string cheese, each cut in half to make 2 shorter pieces
1 egg whisked with 1 teaspoon water
4 Roma tomatoes, sliced
Fresh basil leaves, for serving
2 tablespoons olive oil
1 tablespoon crushed red pepper flakes
1 small to medium onion, chopped (about 1/2 cup)
4 cloves garlic, minced
1/2 cup white wine
Two 15-ounce cans crushed tomatoes
1 tablespoon Italian seasoning
Pinch sugar
Kosher salt

Steps:

  • Preheat the oven to 475 degrees F.
  • Roll and stretch out the risen dough on a floured work surface into a rope about 31 inches long. Press a rolling pin into the dough to create a trench and roll it to a rectangle about 3 inches wide.
  • Keeping a 1/2-inch border on each long side of the dough, smear the remaining dough with the olive oil and sprinkle with salt. Spread the surface with a nice thin layer of the Arrabbiata Sauce, then sprinkle with the Parmesan, mozzarella and pepperoni. Arrange the string cheese pieces on top in a double line. Fold the long sides of the dough up over the center (over the string cheese) and pinch the edges together well so there's no leakage. Bring the ends together to form a circle.
  • Drizzle a baking sheet with olive oil. Carefully transfer the dough circle to the prepared baking sheet, flipping it over before putting it on the sheet so the seam side is down. Brush the egg wash over the surface of the dough. Bake until the edges of the crust are golden brown and the cheese is melted and bubbly, about 15 minutes. Transfer to a board to rest for 10 minutes before cutting.
  • Arrange the tomato slices and basil leaves in concentric circles in the middle of the pizza crust ring and serve with a dish of the remaining Arrabbiata Sauce on the side for dipping.
  • Heat a pan over medium-high heat until hot and add the olive oil. Throw in the red pepper flakes and onions, give them a stir and cook until softened, 2 to 3 minutes. Add the garlic and cook for 30 seconds. Add the wine, whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and Italian seasoning and stir to combine. Add a pinch of sugar and some salt. Bring to a simmer, reduce the heat to low and simmer for 30 minutes.

200ml milk
300g strong white bread flour
1 tsp fast-action dried yeast
½ tsp golden caster sugar , plus a pinch
3 tbsp olive oil , plus a drizzle
250ml passata
2 garlic cloves , squashed
½ tsp dried oregano
1-2 tbsp polenta
250g grated mozzarella
toppings of your choice , we used pepperoni slices, chopped chorizo and basil

Steps:

  • You can make the pizza dough up to 48 hrs before you want to cook the pizza. Warm the milk in a saucepan until steaming but not boiling. In a large bowl combine the flour, yeast, sugar and 1 tsp salt. Add 1/2 tbsp oil to the milk and leave to cool until just warm -when you place a finger in the liquid it should feel body temperature. Pour the liquid into the bowl and either mix with a wooden spoon or food mixer, until the ingredients are well combined. Tip out onto your work surface and knead for 10 mins, or continue mixing in the mixer for 5-7 mins, until you have a smooth and elastic dough. Clean and oil the bowl, return the dough and cover with cling film. Leave somewhere warm to rise for 1-2 hrs, until doubled in size, or place in the fridge for up to 48 hrs.
  • Meanwhile, make the sauce. Pour the remaining oil and passata into a saucepan and add the squashed garlic, oregano and a pinch of sugar. Season well and simmer for 5-10 mins, until the sauce is thick. Remove the garlic cloves and set aside until you're ready to assemble the pizza.
  • If the dough has been chilled remove from the fridge and leave at room temperature for 1 hr. Dust the work surface with polenta and tip the dough onto it. Punch the dough down to knock out the air bubbles then shape into a disk. Roll out the dough to a pizza base, about 35cm wide. Dust a large baking sheet with polenta and place the dough on top, making sure the dough can move around freely. Use 125g of the mozzarella to create a ring around the outside edge of the pizza base, leaving 1/2cm gap between the edge. Brush a little water inside the mozzarella ring then fold over the outside edge to enclose the mozzarella and create a stuffed crust. Press firmly to stick the dough in place.
  • Spoon the sauce over the middle of the base and top with the remaining mozzarella. Scatter with your chosen toppings (save any fresh herbs for scattering over at the end) and brush the stuffed crust with a little oil, then lightly cover with oiled cling film and set aside for 20-30 mins, until the dough has puffed up a little. Meanwhile heat oven to 240C/220C fan/gas 9 with a large baking sheet on the middle shelf to heat up.
  • When the oven is hot and the pizza dough has puffed up, quickly open the oven door and slide the pizza onto the hot tray. Shut the door and cook for 15-20 mins, or until bubbling and cooked through. Leave to cool for a few mins before eating.

7 (1 ounce) mozzarella string cheese (sticks)
1/2 cup pizza sauce
24 slices pepperoni (from 3.5 oz pkg)

Steps:

  • Heat oven to 425. Spray 12-inch pizza pan with nonstick cooking spray. Unroll dough; place in sprayed pan. Starting at center, press out dough to edge of pan, pressing up and extending over sides by at least 1 inch. Place string cheese around inside edge of crust. Fold extended edge of dough over cheese; pinch firmly to seal.
  • Bake at 425 for 8 to 10 minutes or until crust is set and edges are light golden brown.

MOZZARELLA STICK STUFFED CRUST PIZZA

1 pound refrigerated pizza dough
2 tablespoons olive oil
2 tablespoons unsalted butter, at room temperature
60 slices pepperoni (from a 6-ounce package)
8 mozzarella string cheese sticks
2 tablespoons grated Parmesan, plus more for serving
1 tablespoon olive oil
1 sweet Italian sausage link, casing removed (about 1/4 pound)
1 clove garlic, finely chopped
Half a red bell pepper, finely chopped
Half a small yellow onion, finely chopped
1/4 cup tomato paste
Pinch crushed red pepper flakes
Kosher salt and freshly ground black pepper

Steps:

  • For the pizza: Put the pizza dough in a large bowl and coat with the oil. Cover the bowl with plastic wrap and let it sit in a warm place until slightly puffy and at room temperature, about 30 minutes.
  • Spread the butter all over the inside of a metal 8-by-8-inch baking pan and put the dough in the middle. Starting from the middle of the dough, and using your fingertips, push the dough out to the corners of the pan and all the way up the sides.
  • Make a pepperoni border (slightly overlapping the meat) around the bottom edge of the dough (about 8 pepperonis per side). Put 1 cheese stick on top of the pepperoni on each side, then fold down the dough from the edges of the pan to cover them. Push the dough with the pepperoni and cheese inside back tightly against the sides of the pan. Seal the dough around the pepperoni and cheese by pressing and pinching the dough together. You now have a stuffed crust. Cover the dough in the bottom of the pan (but not the crust) with the remaining pepperoni.
  • Pull each of the remaining 4 cheese sticks into 4 long pieces. Put half the cheese pieces evenly on top of the crust along the edges of the dough so that they are touching the sides of the pan. Put the remaining cheese pieces over the pepperoni in the middle. Sprinkle the entire pizza with Parmesan. Cover with plastic wrap and keep in a warm place until puffy, about 30 minutes.
  • Position an oven rack in the bottom third of the oven, put a baking sheet on the rack and preheat the oven to 500 degrees F. Put the pizza on the preheated baking sheet and bake until edges are dark golden and the cheese is melted and bubbling, 15 to 20 minutes.
  • Meanwhile, make the meat sauce: Heat the oil in a small saucepan over medium-high heat until shimmering. Add the sausage and cook, breaking it up with a wooden spoon, until lightly browned, about 4 minutes. Add the garlic, bell pepper and onion and cook, stirring occasionally, until the moisture has evaporated from the pan and the onion is soft, about 3 minutes. Add the tomato paste, 3/4 cup water, a pinch each of red pepper flakes and salt and several grinds of black pepper. Bring to a simmer, reduce the heat to medium-low and cook, uncovered, stirring often, until thick, about 5 minutes.
  • Remove the pizza from the oven and loosen the sides and bottoms from the pan with a metal spatula. Slide the pizza onto a cutting board and spoon the sauce in the center of the pizza. Sprinkle with more Parmesan and cut into squares for serving.

1/4 cup unsalted butter
3 tablespoons all-purpose flour
1 1/4 cups milk
7 ounces white cheddar cheese, shredded
1/2 ounce asiago cheese, shredded

1 (16 ounce) store-bought pizza dough
1 ounce mozzarella cheese, shredded

  • For the mac and cheese:.
  • Cook the macaroni in a medium pot of boiling water, according to the directions on the package. Once cooked, drain and set aside.
  • Melt the butter in a medium pot over a medium heat. Once melted, add the flour and cook, stirring constantly for 2 minutes to toast the flour. Turn the heat down to low and gradually whisk in the milk until all the milk has been added and the mixture is smooth. Keep cooking over a low heat, stirring until thickened. Stir in the white cheddar and asagio cheese with the garlic powder and cayenne. Season with salt, to taste.
  • Remove from the heat and stir in the cooked macaroni. Set aside.
  • For the pizza:.
  • Preheat the oven to 400 degrees F.
  • Place the dough on a large piece of parchment paper, dust lightly with flour, then use a rolling pin to roll it out into an 18 inch circle. Lift this onto a baking sheet or pizza pan - don't worry if the dough overhangs as you're going to fold the crust inwards in a second.
  • Pipe or spoon a ring of mac & cheese around the edge of the pizza dough circle, leaving an outer border of about 2 inches. Sprinkle the shredded mozzarella over the mac & cheese. Fold the outer edges of the circle over the mac & cheese and press down firmly to seal - this forms the crust with the pasta sealed within.
  • Spread the olive oil, and then the pizza sauce, in the centre of the pizza in an even layer. Top with the bocconcini and pepperoni. Bake for 20-30 minutes until the crust is golden and the cheese is starting to brown.
  • Sprinkle the hot pizza with some basil and serve.

  • Let mixture sit for 5 minutes, until foam begins to build on surface.
  • In a large bowl sift flour and salt and make a deep depression in the center of the mixture.
  • Add oil and yeast-water mixture to the depression and combine using a fork until you can use your hands.
  • Dust a clean flat surface with flour and kneed the dough until the dough has a smooth consistent texture. This should take about 1 minutes.
  • Rub a light coating of oil on dough and put in air-tight container and store in warm place for 2 hours, until it doubles in size.
  • Punch down dough, put back in air-tight container and store in refrigerator for 24 hours. (if you do not have that time you can use the dough now).
  • When ready to use roll out to 18 inches.
  • Place dough on pan and make a ring around the edge with string cheese.
  • Moisten the outering with water and fold over the dough to cover cheese and score the center of dough with a fork.
  • Finally, lightly brush the dough with olive oil.
  • For the sauce: Combine tomato sauce, water, sugar, lemon juice, and spices in a sauce pan over medium heat.
  • Once it starts to bubble, drop heat down and simmer for 30-60 minutes until desired thickness is reached (this makes sauce for two pies).
  • Assembly: Heat oven to 475°F.
  • Spread 1 cup of pizza sauce to the edges of the pizza crust.
  • Add 1 1/2 cups of shredded cheese and toppings.
  • Bake for 12 to 16 minutes.

1 (13 7/8 ounce) package of refrigerated pizza dough
1 (14 ounce) jar pizza sauce
12 count crystal farms mozzarella string cheese
4 cups of mozzarella shredded cheese
1/2-1 lb sausage
1 (70 count) package pepperoni
1 (2 1/4 ounce) can sliced olives
1/2 green bell pepper
1 tablespoon chopped onion
1 tablespoon butter
1 teaspoon garlic

Steps:

  • Fry up your sausage until cooked. Drain it (really really greasy!).
  • Chop your olives, onion and pepper.
  • Cover your pan with tinfoil, spray it/grease it. Pop open your tube of dough and lay it out in the pan (13x9in). Smooth it out so all edges are touching the sides.
  • Grab your string cheese and start laying them around the edges (3 wide for long ways in the pan, 2 for the short). Roll dough over string cheeses, smooth together edges to prevent cheese from gooshing out.
  • Bake for 8 minutes in a 425F oven.
  • While that bakes, put 1tbsp butter in a microwave safe bowl and 1tsp garlic, melt in microwave.
  • Remove your dough when the time is up and brush your dough with the melted butter.
  • Add your toppings! Add cheese, LOTS and LOTS of cheese.
  • Put back in oven to bake more for about 6 to 8 more minutes. Remove from oven, let cool for a bit, slice and ENJOY!

3/4 c semolina
1 3/4 tsp instant yeast
2 1/2 tsp salt
2 Tbsp olive oil
1/2 c vegetable oil
2 Tbsp melted butter
1 3/4 c luke warm water
1 lb sausage, bacon, hamburger, ham (optional)
1 Tbsp butter
1 small onion (1/2 cup)
2 clove garlic peeled and crushed
28 oz box or can crushed tomatoes
1 tsp oregano, dried
4 tsp sugar or to taste
1/2 tsp salt or to taste
1 lb sliced mozzerella cheese
2 box frozen spinach (optional)
1 1/4 c fresh grated parmesan cheese, romano, aged asiago or your favorite hard cheese.

Steps:

  • 1. 1) To make the crust: Combine the dry ingredients and the oils and butter, mixing till crumbs form. Then add the water, and mix and knead - by hand, stand mixer, or bread machine set on the dough cycle - to make an elastic, fairly stiff dough
  • 2. 2) Place in a large, greased bowl; cover, and let rise at room temperature for 1 hour. For best flavor, after its initial 1-hour rise, refrigerate the dough for several hours, or for up to 24 hours. You can use the crust after its first 1-hour rise, but its flavor will improve with the longer, slower rise offered by refrigeration
  • 3. To make the sauce: sauté the coarsely grated onion in the butter till it's beginning to color.
  • 4. Add the crushed garlic, and sauté for about 30 seconds.
  • 5. Stir in the tomatoes, oregano, sugar, and salt, and simmer gently for up to 1 hour, to concentrate the flavors.
  • 6. To assemble the pizza: Divide the dough into two pieces. One should be about three-quarters of the dough; the other, one-quarter. If you have a scale, one piece should weigh about 36 ounces; the other, about 13 ounces.
  • 7. Divide each piece of dough in half again. Butter the bottom and sides of two 9" x 2"-deep round cake pans, then drizzle olive oil in the bottom of each.
  • 8. Stretch, then roll one of the larger pieces of dough into a round large enough (about 15" to 16") to line the bottom and sides of one pan, with some overhang. Do the same with one of the smaller pieces of dough, rolling it to about 9" to 10". Cover the pieces of dough, and go away for 15 minutes. This will relax the dough's gluten, allowing you to handle it without it shrinking.
  • 9. Once the first two pieces of dough are rolled and resting, repeat with the other two pieces, covering them till you're ready to use them.
  • 10. After 15 minutes, place one of the larger pieces of dough in the pan, pressing it gently into the corners; you'll have some overhang.
  • 11. Spread half the cooked sausage or meats over the crust, gently patting it flat.
  • 12. Top with half the sliced mozzarella. Spread with half the spinach, or any additional filling of your choice.
  • 13. Place the smaller piece of dough atop the filling. Fold over the overhanging edges of dough, and squeeze/crimp to seal. Poke holes all over the top crust, to allow steam to escape.
  • 14. Repeat with the remaining dough and ingredients, making another 9" round pizza.
  • 15. Preheat the oven to 425°F (with your pizza stone on a lower shelf, if you're using a stone). While the oven preheats, allow the pizza(s) to rest/rise, covered, for about 30 minutes.
  • 16. Just before baking, top the pizzas with the sauce, and sprinkle with the grated cheese.
  • 17. Bake the pizzas till the crust is golden brown and the filling is bubbly, 20 to 25 minutes.
  • 18. Remove the pizzas from the oven, and allow them to set for about 15 minutes. Loosen their edges, and gently turn them out of the pan onto a rack to cool.
  • 19. Serve warm, with a fork. Use a pair of scissors or baker's bench knife to cut wedges.

1 tablespoon kosher salt
2 teaspoons active dry yeast
1 2/3 cups warm water (about 115 degrees F)
2 teaspoons honey
2 tablespoons extra-virgin olive oil
Nonstick cooking spray, for greasing the bowl
2 tablespoons extra-virgin olive oil
1/2 teaspoon dried chile flakes
2 cloves garlic, sliced
2 cups San Marzano tomato puree
3 sprigs fresh basil
Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
All-purpose flour, for rolling the dough
8 ounces smoked mozzarella, skin removed, cut into 2-by-1/2-inch strips
1 cup torn smoked mozzarella (skin removed)
1 cup kalamata olives, sliced in half
12 leaves fresh basil, torn
1/2 cup very thinly sliced red onion

Steps:

  • For the dough: Combine the bread flour, 00 flour, salt and yeast in a mixer with a hook attachment. Whisk together the water and honey. Turn the mixer to medium speed and slowly add the honey-water mixture and olive oil. The dough will come together when a ball is formed and pulls cleanly from the sides of the mixing bowl. If the dough is too wet, simply add a touch more flour until it pulls cleanly.
  • Grease the inside of a large bowl or deep container with cooking spray. Add the dough to the bowl and cover with plastic wrap. Place in a warm area until the dough doubles in size, 60 to 90 minutes. The dough can be refrigerated until ready to use, with a damp cloth over it.
  • For the sauce: In a medium saucepan, heat the olive oil over medium heat. Add the chile flakes and garlic and cook until the garlic softens, about 1 minute. Add the tomato puree and basil sprigs. Bring to a simmer and cook for 5 minutes. Season with salt and pepper. Let cool completely in the fridge. Remove the basil from the sauce before using.
  • For the crust: Preheat the oven to 500 degrees F. Prepare a 12-inch cast-iron pan by greasing the interior with 2 tablespoons of the olive oil.
  • Divide the dough into 2 portions and roll out 1 portion on a floured surface, making a round sheet roughly 14 inches wide. (Wrap the other dough portion in plastic wrap and freeze for another use.) Place the dough sheet over the greased pan, lightly pressing the interior corners into the pan to prevent pockets. Place the strips of smoked mozzarella around the interior of the pan, making a circle with the strips along the entire edge. Cut the dough approximately 1 inch above the level of the cheese. Roll the dough over the cheese, lightly tucking the edges underneath to form a stuffed crust. Brush the stuffed crust with the remaining 1 tablespoon olive oil.
  • For the toppings: Ladle the sauce into the center of the pizza, creating a thin layer that barely covers the pizza. Finish by topping with the torn mozzarella, olives, and onions.
  • Place the pizza pan over medium heat and cook until the bottom of the crust begins to brown lightly, 2 to 3 minutes. Transfer to the oven and bake until the crust is golden brown and the center is bubbly, about 20 minutes.
  • Use a large metal spatula to remove the pizza, then top with the torn basil and a drizzle of olive oil. Allow it to cool for 10 minutes, then cut into portions and serve.

4 tablespoons sugar
1 package dry yeast
3/4 cup milk
4 tablespoons unsalted butter

1 egg, beaten
1 teaspoon salt
8 ounces mozzarella
Olive oil, for coating bowl
1 tablespoon sugar
3/4 cup prepared marinara sauce
1/2 cup canned stewed tomatoes, strained and coarsely chopped
1 1/2 cups grated mozzarella
1 medium onion, finely chopped
1/2 cup sliced mushrooms
1/4 pound sliced pepperoni
1 teaspoon dried basil
1 teaspoon dried oregano

Steps:

  • Preheat the oven to 450 degrees F
  • To make the crust: Stir the water, 1 tablespoon of the sugar, and the yeast together in a small bowl. Let stand until foamy, about 10 minutes. Meanwhile, heat the milk in a small saucepan. Remove from heat, add the butter, and stir until melted.
  • In a large bowl, stir together the flour, cornmeal, remaining sugar, egg, milk mixture, yeast mixture, and salt until a soft dough forms. Turn dough out onto a floured surface and knead until smooth, adding flour as needed if dough is sticky, about 10 minutes. Clean the bowl and coat it generously with olive oil. ½ yellow onion, finely diced
½ cup bread crumbs

1 tablespoon oil, for cooking
11 oz pizza dough
½ cup marinara sauce
1 cup shredded mozzarella cheese
olive oil, for brushing

Steps:

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, mix the ground beef, egg, onion, bread crumbs, Parmesan, parsley, garlic, salt, pepper, and oregano.
  • Roll the mixture into golf ball-sized meatballs.
  • In a medium cast iron or nonstick skillet, heat oil over medium heat.
  • Working in batches cook the meatballs until browned on all sides, about 5 minutes. Set aside.
  • On a sheet of parchment paper, press the pizza dough into a large circle, about 12 inches (30-cm) in diameter.

The only downside of making pizza in the summer is having to crank up the oven. Unless you make it on the grill! And it doesn't have to be hard. Cooking the dough on a rimmed baking sheet keeps it from sticking. Slipping the pizza onto the grill grates at the end makes for an extra-crispy crust. While we were at it, we stuffed the crust with mozzarella - because we could.

1/3 cup olive oil
2 pounds store-bought pizza dough
One 15-ounce can crushed tomatoes
2 garlic cloves, finely grated
Kosher salt and freshly ground black pepper
10 mozzarella cheese sticks
6 tablespoons freshly grated Parmesan
1 pound part-skim mozzarella, thinly sliced
40 slices pepperoni
Torn fresh basil leaves, for serving

Steps:

  • Pour the olive oil into an 11-by-17-inch rimmed baking sheet. Transfer the dough to the pan, turning to coat it with the oil. Cover loosely with plastic wrap and let rise in a warm place until the dough fills about two-thirds of the baking sheet, 1 1/2 to 2 hours.
  • Slide your hands under the dough, lift and gently stretch it to fit the pan. (It's okay if it doesn't stretch to the corners.) For the final rise, loosely cover with plastic wrap and set aside until slightly puffy, 30 to 45 minutes.
  • While the dough rises, preheat a grill for high heat - it needs to be 500 to 600 degrees F when covered.
  • Stir the tomatoes, garlic, 1/2 teaspoon salt and a few grinds of pepper together in a medium bowl until combined.
  • When the dough has risen, place the cheese sticks all the way around the edges, leaving a half-inch border. Fold the dough up and over the cheese sticks until they are totally enclosed, then gently pinch the dough to seal, creating a stuffed crust. Stretch and pull the dough gently to fill the edges of the baking sheet. Sprinkle 3 tablespoons of the Parmesan evenly over the dough, all the way to the edge. Then top with the sliced mozzarella, leaving the border exposed. Spoon the tomato mixture over the mozzarella, inside the border. Top with the pepperoni and remaining 3 tablespoons Parmesan.
  • Put the pizza sheet directly on the grill grates, cover the grill and cook until the crust is lightly browned at the edges, about 15 minutes. Using a large metal spatula, slide the pizza directly onto the grill grates, cover and continue to cook until the crust is dark golden brown and the mozzarella is bubbly and lightly browned in spots, about 10 minutes more. Transfer to a cutting board and let sit for 10 minutes. Top with some basil leaves and cut into squares.

2 1/3 c all purpose flour
1 tsp instant yeast or 2 envelopes of yeast
2 tsp sugar
1 tsp salt
3/4 c whole milk warmed to 100 degrees f.
butter for greasing your pan
1/4 c virgin olive oil
1 large can of tomato sauce
2 Tbsp tomato paste
4 clove garlic, minced
1 Tbsp oregeno
1 Tbsp thyme
1 tsp margoram
1/4 c red wine vinegar or lemon juice
3/4 c water (if needed)
5 oz block of mozzarella cheese
5 oz block of cheddar cheese
1 large onion, chopped
1 green pepper, chopped
any topping you desire

Steps:

  • 1. Mix the warm milk, olive oil, sugar, salt and yeast in a bowl. The yeast should be 100 degrees F.
  • 2. Let the yeast mixture rise to double the size about 10 minutes. Always use fresh yeast.
  • 3. Add the yeast mixture to the flour. Use the dough hook on low speed mix for 5 minutes.
  • 4. Grease two bowls with olive oil. Shape dough into two balls. Place in a warm place till double in size. Let rise 30 minutes.
  • 5. For sauce place in a saucepan the tomatoes and sea salt. Add all other ingredients heat for 30 minutes.
  • 6. Roll out dough on a floured surface. Measure dough by a large skillet placed down on the dough. Put dough into pan. Leave about 2" of the dough out of the skillet.
  • 7. Place the cheese in a circle around the outer edge of the pan and pull dough over and seal.
  • 8. Place in oven 5 minutes till firm to touch. This will make sure sauce doesn't make dough gooey.
  • 9. Add the sauce and the cheese and the remaining ingredients.
  • 10. Bake 25 to 30 minutes. The cheese wil be bubbly. Done!

HOMEMADE STUFFED CRUST PIZZA

Fridays, are our dinner nights with our daughter and son-in-law. Recently, I made homemade pizza. We had 2 stuffed cheese crust deep dish and a pepperoni. I made the dough for the crust with 1/2 unbleached flour and 1/2 whole wheat. To make 2 deep dish and one pepperoni pizza, I made 2 batches of dough.

3/4 Tbsp yeast
1 1/2 c warm water
1 1/2 tsp salt
3 Tbsp oil
4 c all purpose flour
1 1/2 Tbsp garlic, minced or powder
1 1/2 Tbsp italian seasoning (we love it)
6 pieces of mozarella string cheese (for stuffed crust)
tomato/pizza sauce
shredded mozarella

Steps:

  • 1. In a large bowl, sprinkle yeast over warm water (I add a pinch of sugar) and allow to set until it begins to foam, about 5 minutes.
  • 2. Stir in salt, oil and half of flour.
  • 3. Gradually add remaining flour, mixing well. Knead 8-10 minutes or until smooth and elastic.
  • 4. Place in greased bowl, cover, and let rise until double (1/2-1 hour) Punch down and let rise again until double. Punch down and divide.
  • 5. I made stuffed crust, which took six (6) pieces of string cheese. When laying out dough, push it up the sides of your pan about an inch. I used my cast iron skillet and it worked BEAUTIFULLY! Lay cheese sticks end to end, touching all the way around.
  • 6. Pull dough up and over cheese stick, gently pressing the dough to the bottom, sealing around the cheese.
  • 7. Top with your favorite sauce and your favorite meats, cheeses, and other toppings as desired.
  • 8. Bake at 350*F for approximately 20 - 25 minutes, or until golden brown.
