For the perfect appetizer for baby showers, garnish each one of these cream-stuffed goodies with a bit of cream cheese and one, two or even more individual peas, depending on how many she's expectin'! Or if you prefer, garnish with cooked baby shrimp.

20 pods snow peas
1 (8 ounce) container herb and garlic flavored cream cheese, softened
1 bunch spinach - rinsed, stemmed, and dried

Steps:

  • Remove string from pods and trim off the blossom end. Make a small slit on flat side of pod. Soak pods in ice water for about 1 1/2 hours. Drain and dry pods.
  • Put cream cheese in a pastry bag and pipe enough cheese into pods until full. Arrange pods on a platter lined with spinach or lettuce. Garnish each pod with a bit of cream cheese studded with the appropriate number of peas, depending on how many the mother-to-be is expecting.

Our Test Kitchen combines sweet, crunchy pea pods with tangy cream cheese for this one-of-a-kind appetizer. The cute, little "boats" are just enough for two, but the recipe is easy to increase for guests.

1/4 cup spreadable chive and onion cream cheese
4 teaspoons thinly sliced green onion
Dash salt
Dash crushed red pepper flakes
8 fresh sugar snap peas

Steps:

  • In a small bowl, combine the cream cheese, onion, salt and pepper flakes. With a sharp knife, split peas along the straight edge. Spoon or pipe 1 tablespoon cream cheese mixture into each pea pod. Refrigerate until serving.

Mauigirl's Smoked Salmon Stuffed Pea Pods image

These are a cute and fresh idea for an appetizer or as a pretty addition to a festive vegetable tray. I used to steam the pea pods, but this uncooked method yields a nicer look without all the fuss.

30 pods fresh snow peas, trimmed
1 (3 ounce) package cream cheese, softened
1 ounce smoked salmon, flaked
⅛ teaspoon garlic salt
1 pinch ground black pepper
1 pinch dried dill weed, or to taste

Steps:

  • Split each snow pea down one seam.
  • Mix cream cheese, smoked salmon, garlic salt, and pepper in a bowl until smooth. Spoon salmon mixture into a pastry bag fitted with a star tip. Pipe mixture into the center of each snow pea pod, creating a scalloped edge. Sprinkle dill weed over cream cheese filling.

TARAMOSALATA-STUFFED SNOW PEA PODS



Taramosalata-Stuffed Snow Pea Pods image

I used to stuff snow peas with an herb, cream cheese mixture and then my Greek sister-in-law came up with this great idea. It's very, very good. 1 hour chilling.

Number Of Ingredients 9

4 ounces carp-roe black caviar (available in Greek food stores, called tarama)
2 tablespoons cold water
1 cup fresh white breadcrumbs
4 tablespoons lemon juice
1 cup olive oil
1/4 cup onion, finely minced
1 clove garlic, finely minced (small)
1 tablespoon fresh dill, minced (or 1 tsp dried)
40 -50 fresh snow peas

Steps:

  • In blender or food processor fitted with steel blades, place carp-roe caviar and cold water.
  • Blend briefly.
  • Add breadcrumbs and lemon juice and blend briefly again.
  • Trickle in oil very slowly while blending.
  • When mixture is thick and oil is used up, add onion, garlic and dill and blend until smooth.
  • Adjust seasoning, seeing if it needs some salt and add pepper to taste.
  • Set aside.
  • Steam snow peas about 3 minutes, until they puff up and turn bright green.
  • Drain and run under cold water.
  • When cool enough to handle, trim off stem end and strings.
  • This will open peas.
  • Fill a pastry tube with the taramosalata (the carp-roe spread) and pipe in about ½ to 1 tablespoon of it into each pea pod.
  • Chill 1 hour.
  • Serve cold.

If snow peas aren't available sugar snap peas could also be used.

30 snow peas
3 oz cream cheese softened
1 oz smoked salmon
1/8 tsp garlic salt
1 pinch pepper
1 pinch dill weed

Steps:

  • 1. Split each pea pod down one seam, removing peas.
  • 2. Thoroughly mix cream cheese, salmon, garlic salt and pepper.
  • 3. Place cream cheese mixture into a pastry bag fitted with a star tip. Alternatively a zip-lock baggie with one corner snipped off can be used.
  • 4. Pipe cream cheese into each pea pod, replace a few peas on top of the cream cheese, dust with small amount of dill weed.
