1 lb lean ground beef
1/2 c onion, diced
1 large poblano, diced
1 diced tomatoes
1 jalapeno, diced
1 tsp ea. cumin, ancho chili pwd, gran. garlic, and black pepper
1/4 c cilantro, fresh, diced
2 hot links, diced
1 c frozen corn, thawed
2 eggs
3 c colby or cheddar cheese, grated

Steps:

  • 1. Remove seeds and chop poblano and jalapeno. Also chop onion, tomatoes, and cilantro. In a large bowl mix together ALL ingredients and 1 c of cheese.
  • 2. On foil, pat out meat into rectangular shape, about 1 1/2 thick. Place 2 c of cheese (reserving remainder for top).
  • 3. Use foil as a guide and beginroll meat up and over cheese. Seal ends of meat well and pat into a rectangle square with a flat top. Using foil, lift meat roll into baking dish, place seam side down. Cover snuggly, bake 350 degrees for 1 hr, uncover, top with cheese and cook 30 min more.

My Mexican grandmother would use leftover corn tortilla chips in our meatloaf and everyone loved it! They all wanted seconds along with the recipe. A delicious Mexican-American comfort food.

1 ½ pounds lean ground beef
1 cup crushed tortilla chips
¾ cup shredded pepper Jack cheese
1 small onion, chopped
1 (1 ounce) packet taco seasoning mix
2 eggs, beaten
½ cup milk
¼ cup mild red taco sauce, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
  • Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
  • Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
  • Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

1 ½ pounds ground beef
1 ⅓ cups dry bread crumbs
1 egg, slightly beaten
½ onion, finely chopped
¼ cup milk
1 tablespoon Worcestershire sauce
1 tablespoon chopped fresh garlic
1 ½ teaspoons Italian seasoning
1 teaspoon dry mustard
1 teaspoon salt
½ teaspoon ground black pepper
1 tablespoon butter
1 yellow onion, chopped
1 (6 ounce) package portobello mushroom caps, chopped
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together ground beef, bread crumbs, egg, 1/2 a chopped onion, milk, Worcestershire sauce in a bowl; season with garlic, Italian seasoning, dry mustard, salt, and black pepper. Transfer the meat mixture to a piece of waxed paper or aluminum foil and flatten to a 1/2-inch thick rectangle.
  • Melt butter in a skillet over medium heat. Cook and stir yellow onion and mushrooms in melted butter until the onion is translucent and mushrooms soft, about 5 minutes. Remove from heat to cool.
  • Spread filling mixture into center of meat rectangle. Sprinkle Cheddar cheese over filling, leaving a bit of space at one end for easier rolling and sealing. Pick up the edge of the waxed paper or foil to roll the flattened meat into a log around the filling. Seal the ends and seam and place the loaf into a 9x5-inch loaf pan.
  • Bake in the preheated oven until oil from the cheese begins to pool, about 30 minutes. Drain oil and continue baking until the meat is no longer pink in the center, about 30 to 60 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Three 6-inch corn tortillas
1 pound ground beef
1 pound ground pork
2 large eggs, lightly beaten
1 small onion, grated
1 clove garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1 cup canned diced tomatoes with green chiles, drained
Kosher salt and freshly ground black pepper
8 ounces processed cheese, such as Velveeta, cut into 4 rectangular sticks
1/2 cup pickled jalapeno slices
1 cup ketchup

Steps:

  • Preheat the oven to 350 degrees F and line a baking sheet with parchment.
  • Pulse the tortillas in a food processor until they are crumbs and transfer to a large bowl. Add the beef, pork, eggs, onion, garlic, chili powder, cumin, 1/2 cup of the tomatoes, 1 teaspoon salt and 1/2 teaspoon pepper. Mix with your hands until well combined.
  • Using your hands, shape the mixture into a 12-by-3-inch log on the prepared baking sheet. Create a well in the center running the length of the log. Put the cheese in the well and top with the jalapenos. Shape the meatloaf mixture up and over the filling, making sure to seal completely; you should have a 12-by-4-inch loaf.
  • Whisk together the ketchup and remaining 1/2 cup diced tomatoes in a medium bowl. Spoon the mixture over the top and sides of the meatloaf.
  • Bake until the meatloaf reaches an internal temperature of 165 degrees, about 1 hour. Let cool for 10 minutes before transferring to a serving platter and slicing.

2 lbs beef chuck, Ground
1 (8 ounce) can tomato sauce
1/2 cup taco seasoning mix
2 tablespoons taco seasoning mix (Total Amount of Taco Seasoing mix is 1/2 cup plus 2 Tablespoons.)
1/3 cup green pepper, Chopped
1/3 cup onion, Finely Chopped
1 1/2 slices white bread (Tear bread slices into fresh bread crumbs.)
1 large egg, Slightly Beaten
2 cups cheddar cheese, Shredded
1/2 cup sour cream
1 slice cheddar cheese
1 slice avocado
cherry tomatoes

Steps:

  • Combine ground beef, tomato sauce, taco seasoning mix, green pepper, onion, bread crumbs and egg; mix thoroughly.
  • Combine shredded cheese and sour cream.
  • Place half the meat mixture in 9 1/4 x 5 1/4 x 2 3/4-inch loaf pan.
  • Make deep well the length of loaf; place cheese mixture in well.
  • Place remaining meat mixture on top of cheese; seal well.
  • Bake in moderate oven (375 degrees F.) 1 1/2 to 1 3/4 hours.
  • Pour off drippings.
  • Top meatloaf with overlapping cheese triangles.
  • Let meatloaf stand 8 to 10 minutes.
  • Place on serving platter and garnish with avocado slies; place cherry tomato in center of each avocado slice.

This jelly-roll approach to making meatloaf is really easy and tasty, especially when filled with your favorite cheese and sauces. This Mexican variety includes refried beans and tortillas to make it somewhat of a meatloaf burrito!

2 pounds lean ground beef
1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
4 (8 inch) flour tortillas
¾ cup fresh salsa
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix thoroughly the ground beef and taco seasoning; set aside. In a medium saucepan, heat the refried beans over medium low heat until they are completely heated through.
  • Place the ground beef mixture on a large piece of foil. Press the mixture into an approximately 1 inch thick square shape. Spread the refried beans evenly over the top of the flattened beef. Layer the flour tortillas on top of the refried beans, trimming the edges to fit the square. Layer tortillas with salsa and Cheddar cheese, staying 1/2 to 1 inch away from edges of the square.
  • Gently roll the layered beef into a Swiss roll shape, pressing and compacting the loaf as you go. Pinch and seal the edges. Wrap in the foil and seal.
  • Bake in preheated oven 40 to 45 minutes, or until no longer pink in the center. Cut loaf in half to test for doneness, if necessary.
