24 medium fresh jalapeno peppers
1 package (8 ounces) cream cheese, softened
3 cups finely shredded cheddar cheese
1-1/2 teaspoons Worcestershire sauce
4 bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). Drain and rinse in cold water; set aside., In a small bowl, beat the cream cheese, cheddar cheese and Worcestershire sauce until smooth. Spoon 2 teaspoonfuls into each jalapeno; sprinkle with bacon. Arrange on greased baking sheets. Bake until filling is warmed, 3-5 minutes.

Halved jalapeños stuffed with cream cheese, shredded cheese, paprika, and garlic and wrapped up with crispy bacon. If you like spicy, you will love these!

12 fresh jalapeño peppers*
8 ounces cream cheese, softened to room temperature
1 cup shredded cheddar cheese*
1 clove garlic, chopped
1/2 teaspoon smoked paprika
12 slices bacon, cut in half
24 toothpicks

Steps:

  • Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper (best for clean-up) or a silicone baking mat. Place a baking rack on top of the baking sheet. Set aside.
  • Cut the jalapeño peppers in half lengthwise; remove seeds and center membrane. Set aside.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, cheddar cheese, garlic, and paprika together until combined. You could also do this by hand using a rubber spatula. Salt to taste - I add just a pinch. Spoon filling equally among all 24 jalapeño halves.
  • Wrap each stuffed jalapeño with a half slice of bacon and stick a toothpick through the center to assure the bacon stays in place. Place each on the baking rack and bake for 25-28 minutes or until the bacon is crisp to your liking. I like to turn the oven to broil for the last minute or two to get things extra crispy. Serve immediately. Cover leftovers and keep in the refrigerator for up to 4 days.

Stuffed jalapeños, filled with Cheddar and cream cheese and run through with cilantro, are roasted to sweet intensity in the oven and finished under the broiler or in the dying light of a grill's fire. Consume with beer in advance of a plate of chicken wings, or a nap.

1/4 pound sharp Cheddar cheese, grated
1/4 pound cream cheese
2 tablespoons sour cream
3 tablespoons cilantro leaves, chopped fine
kosher salt and freshly ground black pepper to taste
12 jalapeño peppers, halved
1-2 tablespoons olive oil

Steps:

  • Preheat oven to 375. In a small bowl, combine the grated Cheddar cheese with the cream cheese and sour cream, and use a fork to mash and combine. Add the cilantro, salt and pepper, and mix again to combine. Spoon the mixture into a quart-size plastic freezer bag, and set aside.
  • Wearing disposable latex gloves (or at any rate being very careful not to get the interiors of the jalapeños on your skin or in your eyes or nose), use a knife to split the peppers down the center, and dispose of the seeds and ribs. Rub lightly with oil, and place on a roasting pan.
  • Cut a half-inch triangle from one corner of the bag with the cheese in it, and pipe the mixture into each of the jalapeños. Gently press the cheese mixture into the peppers. Roast until the peppers have softened and the cheese has just started to bubble, approximately 15 minutes. Finish over the grill, if you like.

2 (12 ounce) jars whole jalapeno peppers - drained, halved and seeded
1 (9 ounce) can bean dip
1 (4.25 ounce) can chicken spread
1 cup shredded Cheddar cheese
½ cup sour cream

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Lightly grease a cookie sheet.
  • Drain, halve, seed, and rinse jalapeno peppers. Drain the jalapeno peppers on paper towels again. Be very careful when handling the jalapeno peppers as your hands might start to burn from the peppers, use plastic gloves if possible.
  • In a small bowl, stir together bean dip and chicken spread. Stuff the peppers with this mixture, and sprinkle the stuffed jalapenos with cheese. Arrange the peppers on the prepared cookie sheet.
  • Bake 5 to 10 minutes until the cheese is bubbly. Top the stuffed jalapenos with sour cream immediately before serving.

(I buy the "baby" bells in bulk.) Serve these with burgers, steak, ribs, tacos, beans and rice, chili, roast chicken, baked potatoes, green...

2 lb fresh jalapenos
2 tsp salt (aprox)
8 oz cream cheese
10-20 slice precooked bacon (cold)

Steps:

  • 1. Wash and dry jalapenos. Split each pepper lengthwise into 2-3 boat-shaped pieces. remove stems, seeds, and as much of internal membrane as possible (to reduce heat).
  • 2. Arrange pepper-boats in single layer in 9x13 baking dish. (You will need two or more dishes, or just save the rest of the peppers for a later batch.) Sprinkle lightly with salt.
  • 3. Fill each boat with a little plain cream cheese. (I like to soften the cream cheese and "pipe" it from a plastic baggie with the corner snipped off, but I tend to get a little over-generous and run out of cheese before all the boats are topped.)
  • 4. Cut bacon strips into 4-6 long slivers. I cut mine in half crosswise, and then 2-3 strips lengthwise. You might want to trim some of the fattier bits off, but they will all crisp up in the oven, so no worries.
  • 5. Top each boat with a sliver of bacon, nudging it down into the cheese to make certain it sticks. (You don't want your bacon falling off when it's served.)
  • 6. Bake uncovered at 400 degrees for 20-30 minutes. Peppers should be well wilted and cheese should be just starting to brown. Allow to cool a little before serving. Makes 50-75 pieces. (Not servings, because you can't eat only one!)
  • 7. These are perfect for picnics and BBQs. Cool completely and pack in airtight containers, in single layers, separated by waxed paper. Keep refrigerated if there are any leftovers. But use them up within a couple days!

15 jalapenos, preferably red, cut in 1/2, seeded and deveined
1 tablespoon canola oil
2 pounds mild Italian sausage, casings removed
1/4 cup minced red onion
1/4 cup minced red bell pepper
3 tablespoons minced garlic
2 cups mascarpone or cream cheese
1/4 cup grated Parmesan, plus more for garnish
Salt and pepper
1/2 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F and set a rack in the middle of the oven.
  • Place jalapenos on a sheet tray and roast for 10 minutes. Remove from the oven and let cool. Turn broiler on medium.
  • Heat the oil in a medium saute pan. Add the sausage and cook for 5 to 7 minutes. Add the onions, peppers, and garlic and cook to soften for about 5 minutes. Remove and place in a large bowl. Cool to room temperature, then add mascarpone, and Parmesan. Mix ingredients thoroughly and season with salt and pepper.
  • Place approximately 1 tablespoon of mixture into each jalapeno half, and top with 1/2 teaspoon of mozzarella cheese.
  • Place the sheet tray of stuffed peppers in oven and broil until mozzarella cheese melts.

1 pound uncooked chorizo or bulk spicy pork sausage
2 cups shredded cheddar cheese

  • Make a lengthwise cut in each jalapeno, about 1/8 in. deep; remove seeds. Combine the sausage and cheese; stuff into jalapenos. Wrap each with a piece of bacon; secure with toothpicks., Grill, covered, over indirect medium heat for 36-40 minutes or until a thermometer reads 160°, turning once. Grill, covered, over direct heat for 1-2 minutes or until bacon is crisp.
