PALEO ZUCCHINI CASSEROLE image

2 lb squash, sliced
1 onion sliced
3/4 cup coconut milk
1/2 cup almond meal (or any nut)
1/4 tea smoked paprika
1/2 cup pecans, coarse chopped

Steps:

  • preheat to 350 place squash & onion in sacue pan cook until veggies are translucent and soft mix milk, meal and paprika into the veggie mixture. stir well place in casserole dish and sprinkle top with pecans bake for 20 minutes until bubbly and somewhat thickened and pecans are golden brown
