•1 1/2 pounds Italian sausage
For the Peppers:
•4 large bell peppers, seeds and stems discarded and cut into chunks
•2 tablespoons olive oil
•2 tablespoons sherry vinegar
To Serve:
•4 crusty rolls
•1/4 cup chopped fresh basil
•1/2 cup ricotta cheese
•1/2 cup homemade or store-bought red sauce

Steps:

  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over half of coal grate. Alternatively, set half the burners of a gas grill to high heat. Set cooking grate in place, cover gill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place bell pepeprs peppers in a 13- by 9- disposable aluminum baking pan. Add olive oil and vinegar, season with salt and pepper and toss to combine. Transfer to the cooler side of the grill. Cover and cook until tender, about 25 minutes. When peppers are about half done, place Italian sausage patties on hot side of the grill. Cover and cook until well charred on first, side, 5 to 8 minutes. Flip and continue cooking until cooked through and cheese on the interior is melted, another 5 to 7 minutes. Transfer to a large plate. Toast rolls over fire until crusty. Remove from grill. Place burger patties on bottom buns. Slather with ricotta, top with red sauce, basil leaves, and peppers, close burgers, and serve immediately.

1 1/2 lbs ground beef
1/2 cup mozzarella cheese, shredded
1 (4 1/4 ounce) can ripe olives, chopped (I prefer green olives)
1/4 cup onion, finely chopped
salt
1 tablespoon italian seasoning, crushed
1 1/2 teaspoons garlic powder
1/2 teaspoon pepper
4 rolls or 4 hamburger buns, split, toasted
1 medium tomatoes, sliced
prepared pizza sauce (optional)
mayonnaise (optional)
lettuce (optional)

Steps:

  • In small bowl, combine cheese, olives, and onion.
  • Shape ground beef into eight patties, approximately 4 1/2-inch diameter.
  • Place approximately 1/4 cup of cheese mixture in center of four patties; top with remaining patties. Press edges firmly together to seal; gently pat to 3/4-inch thickness.
  • In small bowl, combine Italian seasoning, garlic powder, and pepper. Press evenly into both sides of each patty.
  • Place patties on grill over medium, ash-covered coals. Grill, uncovered, 22 to 24 minutes to medium doneness (160 degrees) or until centers of patties are no longer pink and juices show no pink color; turn occasionally.
  • Season burgers with salt, as desired. Line bottom of each roll with one tomato slice; top with burger.
  • Add choice of toppings, if desired.

1/2 c diced baby bella mushrooms
1/2 c ground italian pork sausage
2 Tbsp chopped sun-dried tomatoes with italian herbs in oil
1/4 c finely shredded italian cheese blend
1 Tbsp chopped fresh basil
BURGERS
1 1/3 lb lean ground beef
1 tsp kosher salt
1/4 tsp pepper
4 buns or rolls of choice
TOPPINGS
4-8 slice mozzarella cheese slices
marinara sauce
whole basil leaves and pepperoncini

Steps:

  • 1. Filling- In large non stick skillet, cook mushrooms, sausage and tomatoes over medium heat 8 minutes or until sausage is cooked through, stirring frequently. Remove from heat and drain; cool slightly and stir in shredded cheese and basil.
  • 2. Prepare burgers. Form meat into 8 1/4 inch thick patties; sprinkle with salt and pepper. Divide filling evenly onto center of 4 patties. Top with remaining 4 patties. Pinch edges to seal.
  • 3. Place burgers on hot grill. Cover and cook 15 minutes or until internal temp reaches 155 for medium doneness turning once. Top patties with cheese and let melt during last minute of cooking.

1 bunch baby spinach
1 can(s) mushrooms, canned

Steps:

  • 1. Pat out thin burgers.
  • 2. Top with mushrooms, 1 slice swiss cheese, and baby spinach
  • 3. place another thin burger on top and seal the edges.
