1 head cauliflower (about 2 pounds)
2 tablespoons unsalted butter
1/3 cup panko breadcrumbs
1/4 cup freshly grated Parmesan
1 tablespoon chopped fresh basil
One 8-ounce block white Cheddar cheese, cut into 1/2-inch logs (about 20 pieces)

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a large pot of water to a boil over high heat. Sprinkle generously with salt. Trim the base of the cauliflower so the stem is flat to the head but without cutting off any florets. Blanch the cauliflower until just beginning to soften, 8 to 10 minutes. Remove to a plate to cool slightly.
  • In a small skillet, heat the butter until melted. Add the breadcrumbs and 1/2 teaspoon salt and toast until golden brown, about 3 minutes. Set aside to cool completely. Stir in the Parmesan and basil.
  • Gently begin to create space in between the florets and stuff each space with a log of Cheddar. Continue until all the pieces of cheese are used. Press the toasted breadcrumbs on top of the cauliflower. Place in a small baking dish and bake until the cauliflower is tender all the way through and the breadcrumbs are golden, about 20 minutes.

One of our favorite vegetables gets the royal treatment: It's filled with a cheesy, bacony kale stuffing, coated in crispy breadcrumbs and baked until melting and tender. You can make it vegetarian by replacing the bacon with 4 ounces of sliced button mushrooms.

4 slices bacon
Kosher salt
1 large head cauliflower
8 ounces kale, stems removed
2 large eggs, beaten to blend
4 scallions, thinly sliced
2 garlic cloves, finely grated
3/4 cup grated Muenster cheese
1/2 cup heavy cream
1/2 cup plus 2 tablespoons panko breadcrumbs
1/4 cup plus 2 tablespoons finely grated Parmesan
3 tablespoons chopped fresh oregano
1/3 cup (5 tablespoons plus 1 teaspoon) butter, melted

Steps:

  • Position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment.
  • Arrange the bacon on the prepared baking sheet and roast until the bacon is browned and the fat has rendered, 15 minutes. When cool enough to handle, finely chop and transfer to a medium bowl. Reserve the baking sheet.
  • Meanwhile, bring a heavily salted pot of water to a boil over high heat (the water should be very salty, even more than the sea). Carefully remove as much of the cauliflower stem as you can without cutting any of the stalks of the florets. Remove any small inner leaves. (You want to be able to freely pipe filling into the nooks of the cauliflower.)
  • Boil the cauliflower until just beginning to get tender, 5 to 7 minutes. Do not overcook, or it will break apart as you stuff it. Carefully remove the head from the water and allow to drain and cool.
  • Add the kale to the same pot and cook bright green, 2 to 3 minutes. Drain and squeeze dry. When cool enough to handle, finely chop and transfer to the bowl with the bacon.
  • Add the eggs, scallions, garlic, Muenster, cream, 1/2 cup panko, 1/4 cup Parmesan and 2 tablespoons oregano to the kale mixture and stir to combined. Transfer to a large piping bag (or 1-gallon freezer bag) and cut a 3/4-inch opening at the tip. Turn the cauliflower stem-side up, and start piping the filling in between the stalks of the florets until you've used about half of the filling. (The bottom of the head will start to expand, and you will see the filling start to push out from the top in between the florets. Turn the cauliflower right-side up and use your finger to push between the florets to separate them slightly and pipe filling in the gaps. Use all the filling, even if it looks like the cauliflower is going to explode -- it won't. It will just be full of flavor!
  • Mix together the butter with the remaining 2 tablespoons panko, 2 tablespoons Parmesan and 1 tablespoon oregano in a small bowl. Put the cauliflower right-side up in the center of the reserved baking sheet and smear with the butter mixture to coat the entire head. Bake until deep golden brown, 45 to 55 minutes. Let cool 10 minutes before cutting into wedges.

6 medium bell peppers
1 (10 ounce) package frozen riced cauliflower
1 teaspoon olive oil
1 pound 93% lean ground beef
1 (8 ounce) package cremini mushrooms, diced
2 medium carrots, diced
2 stalks celery, diced
½ medium yellow onion, diced
1 tablespoon Italian seasoning
1 teaspoon red pepper flakes
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon ground black pepper
3 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, drained
1 (6 ounce) can tomato paste
5 leaves fresh basil, chopped

Steps:

  • Slice tops off peppers and place peppers on a microwave-safe plate. Remove stems from pepper tops and discard. Dice flesh from pepper tops and set aside 1/2 of the diced peppers; save remaining diced peppers for another use.
  • Microwave peppers on high for 3 minutes until partially cooked.
  • Place frozen riced cauliflower in a microwave-safe bowl and microwave on high for 4 minutes, stirring halfway through.
  • Heat olive oil in a large nonstick skillet over medium-high heat until hot, about 1 minute. Add beef, mushrooms, carrots, celery, onion, and reserved diced peppers and cook until onions begin to turn translucent and beef is nearly cooked, about 5 minutes. Stir in Italian seasoning, red pepper flakes, oregano, salt, and pepper; cook for 1 minute. Add cooked riced cauliflower and garlic; stir and cook until beef is browned and crumbly, breaking up any chunks with a spoon, 2 to 3 more minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Add drained tomatoes, tomato paste, and fresh basil to the skillet and cook until nearly all liquid is absorbed, about 5 more minutes. Turn off heat and allow beef mixture to cool slightly, about 5 minutes.
  • Stuff beef mixture evenly into peppers. Stand peppers upright in a baking dish.

1/4 cup chopped fresh chervil leaves
1/4 cup raisins

4 boneless, skinless chicken breast halves
2 cups all-purpose flour
5 eggs, lightly whisked
2 cups bread crumbs

1/4 cup chopped yellow onion

Steps:

  • Potatoes and cauliflower:
  • Preheat the oven to 350 degrees F.
  • On a large baking sheet toss together the cauliflower, potatoes, chervil, raisins, olive oil and salt and pepper, to taste. Arrange in a single layer on the baking sheet and roast until the potatoes are tender, about 25 minutes. Remove the potatoes to a bowl and set aside.
  • Chicken: In a blender or food processor, combine the grapes, walnuts and dates and blend until smooth.
  • Put the chicken breasts between 2 sheets of plastic wrap and, using a meat mallet, pound the chicken until evenly flat and thin. Remove the top sheet of plastic. Season the chicken with salt and pepper, to taste. Divide the grape mixture between the chicken breasts, topping each piece with about 2 tablespoons of the filling. Using the plastic as your guide, roll up the chicken around the filling.
  • Put the flour, eggs and bread crumbs in separate dishes. Season the bread crumbs with the garlic powder, onion powder and salt. Dip the chicken rolls into the flour, coating completely, then into the egg and finally into the bread crumbs. Chicken should be coated completely with each step of the breading process.
  • Heat 2 tablespoons of oil in a large oven-proof skillet over medium-high heat. Pan fry the chicken until golden brown on all sides, turning after a few minutes on each side. Transfer the pan to the oven and bake until cooked through, about 15 minutes.
  • Curry sauce: Melt the butter in a skillet over medium heat, then add the onion and curry powder. Cook for 2 minutes then whisk in the flour and cook for 1 minute. Whisk in the chicken stock and bring to a simmer. Whisk until the sauce is thickened and smooth.
  • Remove the chicken from the oven to a cutting board and slice. Spoon a bed of potatoes and cauliflower on each serving plate and top with curry sauce.

1 head cauliflower (about 2 1/4 pounds)
3 slices country white bread, toasted
6 tablespoons unsalted butter, melted
1/4 cup grated Parmesan
1/2 cup fresh flat-leaf parsley leaves
1 tablespoon fresh thyme leaves
10 fresh sage leaves
2 stalks celery, chopped
1 large egg
1/2 vegetable bouillon cube

  • Position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment.
  • Bring a large pot of heavily salted water to a boil over high heat (the water should be very salty--even more than the sea). Carefully remove as much of the cauliflower stem as you can without cutting any of the stalk or the florets away. Remove all of the leaves including any small inner ones.
  • Boil the cauliflower head until it just tender, 6 to 8 minutes. (Take care not to overcook or it will break apart as you stuff it.) Carefully remove the head from the water and allow to drain and cool.
  • Meanwhile, brush 2 pieces of bread with 1 tablespoon butter each. Cut into 1/4-inch cubes (it's important that the cubes be this small or it will not pipe out of the bag) and transfer to a medium bowl. Transfer to a small bowl and set aside. Wipe out the bowl of the food processor.
  • Pulse the parsley, thyme, sage, celery, egg, bouillon cube, 2 tablespoons water, 1/2 teaspoon salt and a few grinds of pepper in the food processor until very finely chopped and wet. Fold the vegetable mixture into the bread cubes and stir until smooth and pipeable. Transfer to a large pastry bag (or a 1-gallon freezer bag) and cut a 3/4-inch opening at the tip.
  • Turn the cauliflower over, stem-side up, and start piping the filling in between the stalks of the florets until you've used about half of the filling. Use your fingers to push the filling down into the holes of the cauliflower. Fill the rest of the cauliflower with the remaining filling. (Use all the filling, even if it looks like the cauliflower is going to explode. It won't.) Transfer to the prepared baking sheet, stem-side down.
  • Brush the outside of the cauliflower with the remaining 2 tablespoons butter and sprinkle with 1/2 teaspoon salt. Press the Parmesan-breadcrumb mixture evenly over the cauliflower. Bake until the cauliflower is soft and easily pierced with a fork and the breadcrumbs are a deep golden brown, 40 to 45 minutes. Let cool 10 minutes, then cut the cauliflower into wedges and sprinkle with salt to taste.

Steps:

  • Preheat oven to 400˚F (200˚C).
  • For the ground beef filling, combine ground beef, onion, garlic, tomato paste, tomato, egg, chili flakes, oregano, basil, sage, pepper, and salt in a large mixing bowl until fulling incorporated. Set aside.
  • Remove the whole stem from the cauliflower making sure to leave the head fully intact.

  • Add in the Parmesan, salt, and pepper and mix until fully incorporated and has the consistency of a thick batter.

Need an alternative to nut roast for veggies and vegans on Christmas Day? Try this festive and filling cauliflower roast stuffed with kale and chestnuts

1 large or 2 small cauliflowers (about 850g)
5 tbsp olive oil
4 tbsp breadcrumbs
250g kale , chopped
1 tbsp milled linseed
1 onion , chopped
2 garlic cloves , chopped
½ small pack sage , leaves chopped
½ small pack rosemary , leaves chopped
150g cooked chestnuts , finely chopped, plus 30g for the topping
2 lemons , zested
good grating nutmeg

Steps:

  • Trim and discard the cauliflower leaves. Turn the cauliflower upside-down on a chopping board and use your knife to carefully cut out the stalk and core, leaving a cavity - the florets should still be holding together.
  • Bring a large pan of salted water to the boil. Submerge the cauliflower and cook for 7 mins, then remove with two slotted spoons and set aside to steam dry. Add the kale to the pan and cook for a min or so until wilted. Drain, then run under cold water to cool. Squeeze out the excess liquid and roughly chop.
  • To make a linseed 'egg' (this will bind the stuffing together), mix the ground linseed with 3 tbsp water and set aside for 5-10 mins until gluey. Meanwhile, heat 2 tbsp oil in a frying pan, add the onion and a pinch of salt, and cook until softened, then stir in the remaining stuffing ingredients, including the kale, and cook for a min or so more. Remove from the heat and season, then put in a blender with 150ml water and the linseed egg and blitz to a thick purée. Transfer to a piping bag.
  • Pipe the stuffing mixture into every nook and cranny of the cauliflower, getting in as much of the purée as you can - see our tip below. Transfer to a baking tray lined with parchment. Can be made up to this point in the morning and kept in the fridge.
  • Heat oven to 200C/180C fan/gas 6. Mix the remaining chestnuts with the breadcrumbs and some seasoning. Spoon the remaining oil all over the cauliflower, then pat on the breadcrumb chestnut mix. Roast for 45 mins until golden brown and tender (place under a hot grill for the last part of cooking time if it needs to crisp-up). Serve with any crisp bits that have fallen onto the baking tray.

1 1/2 teaspoons harisa (Tunisian hot chili paste of guajillo chili peppers, garlic, oil, caraway, and coriander)
1/2 teaspoon ground red chili

Steps:

  • Preheat frying oil in a deep-fryer or 8-inch deep saucepan to 375 degrees F.
  • Bring a saucepan of lightly salted water to a boil and cook the whole cauliflower until tender, about 10 minutes. Drain well and break into small florets.
  • Place the meat, onion, cinnamon, parsley, tabil, salt, and pepper in a food processor, in batches if necessary, and process until well blended. Remove to a bowl.
  • Have a bowl of water handy to keep your hands wet while making meatballs. Meatballs are formed by flattening a lemon-sized portion of meat into a thin patty and wrapping the patty around a cauliflower floret to completely enclose. Form into an oval shape, then dip into the eggs and dredge in flour, tapping off any excess flour.
  • Cook the meatballs in oil until golden, about 4 minutes, without crowding the fryer. Remove with a slotted spoon to paper toweling to drain.
  • Heat the extra-virgin olive oil over medium-high heat in a large saucepan. Dissolve the tomato paste in the water, and add to the pan along with harisa and ground red chili. Add the meatballs and cook covered until most of the liquid evaporates, about 25 minutes. Add a little water to rehydrate sauce if it is dries out before that time. Serve meatballs covered with sauce.

Cauliflower Stuffed with Saffron and Scallop Mousse image

24 ounces cream
1 head cauliflower, cut into florets
1 pound bay scallops
1 egg
1 teaspoon Worcestershire sauce
1/2 teaspoon hot pepper sauce (recommended: Tabasco)
1 tablespoon saffron steeped in 2 ounces white wine
Salt and pepper
Olive oil
1 leek washed, thinly sliced
4 baby fennel, cleaned, thinly sliced
4 cups baby greens

Steps:

  • Bring the cream to a simmer in a large saucepan. Add the cauliflower and simmer until the cauliflower is tender, about 10 to 15 minutes. Drain, reserving both the cauliflower and the cream. Chill the cream.
  • Place half the bay scallops, egg, Worcestershire, and hot pepper sauce in food processor and blend until all ingredients are incorporated. Add cream used for cooking cauliflower, steeped saffron and steeping liquid, and blend thoroughly. Season with salt and pepper.
  • Set up a bamboo stovetop steamer and heat over simmering water.
  • Line a small teacup with cauliflower florets and fill with saffron mousse. Steam for 8 to 10 minutes, cool and invert onto a plate.
  • In a hot pan add olive oil, the remaining half pound of bay scallops, leeks, and fennel and toss quickly. Season with salt and pepper. Place on plate next to cauliflower. Garnish with baby greens.

6 slices gluten-free bacon, chopped
1 tablespoon Dijon mustard
1 tablespoon low-sodium tamari soy sauce
1/2 teaspoon salt

1 teaspoon minced garlic
1 egg, beaten
6 cups cauliflower florets
1 cup coarsely chopped onion
1 cup chopped celery
3 cups shredded kale
4 red or yellow bell peppers, halved lengthwise, seeds and stems removed
2 teaspoons chopped fresh thyme leaves

Steps:

  • Heat oven to 400°F. Line cookie sheet with foil.
  • In 10-inch skillet, cook bacon over medium heat until crispy. Remove bacon from skillet, reserving bacon drippings in skillet. In small bowl, crumble 2 slices of bacon; set aside. In large bowl, crumble 4 slices bacon. Add mustard, tamari soy sauce, salt, cayenne, garlic and egg; mix well. Set aside.
  • Meanwhile, in food processor fitted with metal blade, place cauliflower. Cover; pulse until very finely chopped (about the size of couscous).
  • Heat bacon drippings over medium heat; add onion, celery and kale. Cook 3 to 4 minutes, stirring frequently, until kale begins to soften. Add cauliflower; cook 5 to 7 minutes or until cauliflower is softened. Pour mixture into large bowl with bacon mixture; toss lightly to thoroughly mix.
  • Place pepper halves on cookie sheet. Divide cauliflower mixture among peppers. Roast 25 to 30 minutes or until peppers are tender. Sprinkle with reserved bacon and thyme. Serve immediately.

2 eggs, beaten
1 cup breadcrumb

Steps:

  • Preheat oven to 350°F (180°C).
  • In a bowl, mash the cauliflower until slightly combined.
  • Add the egg, ¾ cup (90 g) bread crumbs, salt, pepper, garlic powder, and parsley, and mix with a fork until combined. Chill for 10 minutes.
  • Form the mixture into nuggets with a cube of cheddar cheese in the center. Pack them tightly.
  • Roll each nugget in flour, then egg, then bread crumbs. Place on a baking sheet covered in parchment paper.
  • Bake for 18-20 minutes, flipping the nuggets halfway through. Brush with oil for browner nuggets.

½ (12 ounce) box jumbo pasta shells
1 (16 ounce) package frozen cauliflower
2 tablespoons extra-virgin olive oil, divided
4 cloves garlic, sliced
2 dried red pepper pods, crumbled
1 teaspoon salt
4 cloves garlic, minced, divided
4 cups baby spinach
1 (6 ounce) package shredded Italian cheese blend
½ (8 ounce) container whole-milk ricotta cheese
5 tablespoons chopped fresh basil leaves, divided
¼ cup grated Parmesan cheese
½ teaspoon kosher salt
¼ teaspoon ground black pepper
1 teaspoon dried oregano
1 (28 ounce) can crushed tomatoes

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in pasta shells and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Drain.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until very soft, 5 to 8 minutes.
  • Heat 1 tablespoon oil in a skillet over medium-low heat. Add sliced garlic; cook and stir until golden, about 5 minutes. Add crumbled red pepper pods. Raise heat to medium-high and add cauliflower; cut up and smash with a spatula. Add 1 teaspoon salt. Cook and stir, mashing occasionally, until mixture has rough consistency of mashed potatoes, about 5 minutes more. Remove from heat and transfer to a large bowl.
  • Rinse and dry skillet. Add 1 tablespoon oil and place on medium heat. Add 2 cloves minced garlic; cook and stir until golden, about 2 minutes. Add spinach and stir until reduced down, about 3 minutes. Add spinach and garlic to the bowl with cauliflower mixture.
  • Stir Italian cheese blend, ricotta cheese, 3 tablespoons basil, Parmesan cheese, kosher salt, and black pepper into the spinach-cauliflower mixture to make the filling.
  • Mix remaining 2 cloves minced garlic, remaining 2 tablespoons basil, and oregano into the can of crushed tomatoes. Pour 1/3 of tomato sauce mixture into the bottom of a 9x13-inch glass baking pan.
  • Stuff cooked pasta shells with the filling and place seam-side up in the baking dish. Spoon remaining tomato sauce over shells and in any gaps between. Cover tightly with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and bake until top is bubbling, about 15 minutes more.

2 cups whole-wheat flour
1/2 teaspoon baking powder
1 teaspoon coarse salt
3 tablespoons extra-virgin olive oil, plus more for brushing
1/2 head cauliflower, cut into large florets (3 cups)
1 tablespoon extra-virgin olive oil
3/4 teaspoon cumin seeds
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
6 cups baby spinach, chopped
3/4 cup frozen peas, thawed
Coarse salt

Steps:

  • Make the flatbreads: Stir together flour, baking powder, and salt in a medium bowl. Stir in oil and 3/4 cup warm water until combined. Turn out dough onto a clean surface and knead until smooth, 5 minutes. Cover with a bowl and let rest 30 minutes.
  • Meanwhile, make the filling: Steam cauliflower until soft, 8 to 10 minutes, then transfer to a medium bowl and mash. Heat oil in a medium skillet over medium heat and toast cumin until fragrant, about 30 seconds, before stirring in coriander and turmeric. Stir in spinach until just wilted. Remove mixture from heat and stir in cauliflower and peas. Season with salt.
  • Assemble flatbreads: Divide dough into six balls and roll out into 8-inch rounds. Heat a cast-iron skillet over medium heat and cook rounds until slightly puffed and golden, 1 to 2 minutes. Flip and spread half of each round with filling. Gently fold over other half and cook until golden, 2 minutes. Flip and cook 2 minutes more. Brush with oil. Serve flatbreads cut in half.

1 medium cauliflower
4 tablespoons oil
1 teaspoon cumin seed
1 large onion, chopped
1 inch gingerroot, peeled and grated
4 garlic cloves, chopped
1 lb ground beef
1 teaspoon turmeric
1 teaspoon ground cinnamon
1 tablespoon ground coriander
1 teaspoon ground cardamom
1/2 teaspoon chili powder
3 tomatoes, finely diced
1 teaspoon salt
1/4 teaspoon black mustard seeds
1/2 teaspoon cumin seed
10 curry leaves (optional)
2 hard-boiled eggs, quartered
2 tomatoes, quartered

Steps:

  • Blanch the cauliflower in boiling water for 5 minutes Drain and set aside to cool.
  • Heat 3 tbsp oil in a pan and add the cumin seeds, when they start to pop add the onion and fry for 4 minutes.
  • Add the ginger and garlic and fry for 1 minute.
  • Reduce the heat to medium, add the meat and stir fry till it is crumbly and the liquid has evaporated.
  • Reduce the heat to low and add the turmeric, coriander, cinnamon, cardamom, and chilli powder, and the diced tomatoes. Stir and fry for 3 minutes Cover the pan with a lid and cook for 10 minutes Remove from the heat and allow to cool.
  • Put the cauliflower on a plate stem side up, fill the spaces between the florets with as much of the meat mix as possible.
  • Turn the cauliflower over and gently pull the florets apart and fill with the rest of the meat.
  • Heat the remaining oil and add the mustard seeds, when they pop add the add the cumin and curry leaves (if using).
  • Place the cauliflower right way up on the seasoned oil, cover with a lid and cook on medium heat till the cauliflower is cooked.
  • Serve the cauliflower on a serving dish with any remaining meat and juices from the pan around the cauliflower.
  • Garnish with the eggs and tomatoes.

8 ounces Cream Cheese
4 ounces Tillamook sharp cheddar (shredded)
24 ounces Frozen cauliflower
3 stalks Green onion (thinly sliced)
3 strips Bacon (cooked and crumbled)
1/4 teaspoon Black Pepper, ground

Steps:

  • Cook the cauliflower until soft, about 20 minutes; drain very well and break up the florets with a fork, leaving cauliflower a little chunky.
  • Mix in the cream cheese while hot, mashing with fork, and add cheddar, green onion, salt, pepper and bacon.
  • Put in a greased 8 inch casserole.
  • Bake at 350 for 30-40 minutes, until browned and bubbly.

1 cauliflower
Water
7 ounces cheddar, cut into sticks
12 ounces bacon, sliced
1/4 cup heavy cream
1 tablespoon garlic powder
2 teaspoons paprika powder
Salt

1 cup low moisture mozzarella, for the topping
Fresh dill, for garnishing

Steps:

  • Add the cauliflower to a water-filled deep pot over high heat and bring it to a boil. Boil for 10 minutes. Place the cooked cauliflower on the work surface and bore deep holes in it using a cylindrical cutter. We made 13 of them. Insert the Cheddar sticks into the holes. Line a medium bowl with the bacon slices. Do that so that they radiate from the bottom center of the bowl upwards to its rim. Place the stuffed cauliflower in the bacon-lined bowl. For the sauce: Add the heavy cream, garlic powder, and paprika powder to a smaller bowl. Season with salt and pepper and mix. Cover the cauliflower with this sauce using a kitchen brush. Wrap it with the bacon slices. Transfer the wrapped cauliflower on a parchment paper-lined baking tray and bake for 50 minutes at 320⁰F/160⁰C. Remove from oven and add the mozzarella on top. Bake for 10 minutes at 360⁰F/180⁰C. Serve garnished with fresh dill.

1/2 small jalapeno chile, finely chopped

1 tablespoon ground coriander
1/2 teaspoon ground turmeric
1/2 teaspoon cayenne pepper (to taste)
1/2 teaspoon amchoor powder or 1 teaspoon lemon juice
1/2 teaspoon garam masala
1 large potato, peeled, boiled, and grated
1 medium head cauliflower (2 lb.)
2 medium potatoes, peeled and sliced

Steps:

  • Preheat oven to 400°F Blend onion, tomato sauce, jalepeño, ginger, garlic, garlic, and cumin in blender until paste forms. Heat 2 Tbs. oil in skillet over medium-high heat. Add onion paste, and cook 3 minutes, or until mixture comes together in dense mass. Stir in coriander, turmeric, cayenne, amchoor, and garam masala; cook 2 minutes. Stir in 1/2 cup water and grated potato.
  • Steam whole cauliflower head 5 to 7 minutes. Cool. Press onion mixture all over cauliflower. Set in baking dish.
  • 3Toss sliced potatoes with remaining 1 Tbs. oil on baking sheet. Transfer both pans to oven, and bake 25 minutes, turning potatoes once. Serve cauliflower with sliced potatoes.
