1 tablespoon red wine vinegar
½ shallot, diced
salt and ground black pepper to taste
2 tablespoons extra-virgin olive oil
4 cups mixed greens
2 baby cucumbers, sliced
2 cups strawberries, hulled
1 pinch sea salt

Steps:

  • Stir red wine vinegar and shallot together in a bowl; season with salt and black pepper. Stream olive oil into the mixture while whisking to form a dressing.
  • Toss mixed greens and cucumbers in a large bowl; pour dressing over the mixture and toss to coat. Add strawberries and toss lightly. Season with sea salt to serve.

8 oz. mixed greens
1 c. sliced strawberries
1/2 c. blueberries
1/2 c. mandarin oranges
1/2 c. pecans, unsalted
3.5 oz. crumbled goat cheese
2 Tbsp. sliced green onions
1/2 c. orange sparkling juice (I used Sanpellegrino)
3 Tbsp. olive oil
2 Tbsp. white balsamic vinegar
1/2 Tbsp. honey
1/4 tsp. salt
1/8 tsp. pepper

Steps:

  • Combine salad ingredients in a large serving bowl.
  • Combine dressing ingredients in a small jar with a lid. Shake well. Pour over salad immediately before serving.

I was asked to take a salad to a backyard get-together and didn't want to just take the same old thing, so I came up with this recipe, which combines features of several different salads I've had in the past. Look for my recipes for balsamic vinaigrette and creamy orange soy dressings on this site. Both are excellent with this salad.

1 ½ cups walnut pieces
1 pint strawberries, quartered
1 (10 ounce) bag iceberg salad
1 (5 ounce) bag baby spinach
1 (4 ounce) container crumbled feta cheese
1 small red onion, thinly sliced into rings
freshly ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread walnuts on a baking sheet.
  • Toast in preheated oven until walnuts start to turn golden brown and become fragrant, 5 to 7 minutes. Let cool, about 5 minutes.
  • Toss toasted walnuts, strawberries, iceberg salad, baby spinach, feta cheese, red onion, and black pepper together in a large bowl.

2 cups sliced strawberries
2 tablespoons chopped fresh basil
2 tablespoons raspberry vinegar
1/2 teaspoon sugar
1 teaspoon olive oil
1 teaspoon water
4 cups gourmet salad greens
1/4 cup crumbled Stilton cheese or 1/4 cup feta cheese
4 slices French bread

Steps:

  • Combine first 4 ingredients in a medium bowl; toss well to coat.
  • Cover and refrigerate 1 hour.
  • Strain mixture through a sieve into a jar, reserving liquid.
  • Set strawberries aside.
  • Add oil and water to jar.
  • Cover tightly, and shake vigorously.
  • Arrange 1 cup greens on each of 4 salad plates.
  • Top with 1/2 cup berries, 2 teaspoons dressing, and 1 tablespoon cheese.
  • Serve with French bread.

A refreshingly different salad, we can buy Stilton with black pepper here, but you can use any Stilton or even leave it out if you prefer. I make half the amount of dressing as I find that this is enough. Recipe adapted from Rococo Real Chocolate Book by Chatal Coady.

100 g rocket (or any salad leaves)
1/2 cucumber
2 cups strawberries, halved
1/4 cup Stilton cheese, with black pepper, crumbled
100 ml balsamic vinegar
100 g caster sugar
25 g dark chocolate, 2 squares, 75% pure

Steps:

  • Divide the rocket between the plates. Slice the cucumber lengthways, seed and slice into halfmoons. Arrange the Stilton, cucumber and strawberries on the rocket. Drizzle dressing on top.
  • To make the dressing: Place balsamic vinegar in a saucepan, add caster sugar and dissolve over a gentle heat. Remove from heat and stir in 2 squares of chocolate. Leave to cool at room temperature. Do not refrigerate or dressing will solidify.

WARM STILTON SALAD

A perfect salad for one of those late summer-early autumn days - ready in just over half an hour

4 rashers smoked streaky bacon , rind removed
3 ripe pears , peeled, cored and sliced
140g blue cheese , cut into small cubes, such as Colston Bassett stilton
100g washed baby spinach
1 tbsp sherry or red wine vinegar
1 tsp clear honey
1 tsp wholegrain mustard
2 tbsp olive oil

Steps:

  • Use kitchen scissors or a sharp knife to snip the bacon crossways into fat matchsticks. Heat a small, dry frying pan on a medium heat and add the bacon. Cook for about 10 mins, until the fat has run and the bacon is crisp.
  • To make the dressing, reduce the heat in the pan to low and stir in 1 tbsp water, then the vinegar, honey and mustard. Stir well, scraping up any residue on the base of the pan. Stir in the oil, taste and season.
  • Meanwhile, heat a ridged griddle pan or grill and cook the pears for about 5 mins on each side, until browned. Place in a bowl and mix with the cubes of cheese (this melts the cheese a little, making it nice and squidgy). Tip the spinach into a serving bowl, and scatter the cheese and pear mixture over. Top with the warm bacon dressing and serve immediately.
