Steps:
- Combine the dry ingredients. Add eggs, oil, strawberries and pecans. Stir just until all ingredients are moistened, may still be a bit lumpy.
- Spoon the batter into 2 well-greased 9x5x3-inch loaf pans. Bake at 350ºF for 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool in pans 5 minutes, the remove and cool completely on wire racks.

Steps:
- 1. In a medium sized bowl, combine the butter and the sugar, vanilla, and lemon extract until smooth. Add the eggs, one at a time, and beat each one well.
- 2. Combine flour, salt, cream of tartar and soda. Combine sour cream and jam. Add the jam mixture, alternating with the dry ingredients to the cream mixture. Beat until thoroughly combined. Stir in the pecans.
- 3. Turn mixture into a lightly greased and floured loaf pan. Bake in a preheated 350-degree oven for 55 minutes.
- 4. Serve warm with butter or cream cheese spread.

Steps:
- Beat eggs, sugar and applesauce until well combined. Add flour, cinnamon, baking soda and salt. Beat until well blended. Stir in strawberries and nuts. Pour batter into greasaed 9x5x3 inch loaf pan. Bake at 350F for 55-65 mins. Let cool in pan for 10 mins. Remove from pan and cool on wire rack. Wrap and store in fridge.
