Eat n' Park is a popular local restaurant chain in my hometown of Pittsburgh, PA. They are rightfully famous for their salad bar and scrumptious baked goods. These strawberry creme muffins are (almost!) like the ones served at their breakfast buffet. This recipe originally appeared in the Kitchen Mailbox column of the Pittsburgh Post-Gazette, June 21, 2007.

Number Of Ingredients 10

1/4 lb unsalted butter
1 1/4 cups sugar, plus more
sugar, for sprinkling
2 eggs
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup heavy cream
1 teaspoon vanilla
18 -20 strawberries, chopped

Steps:

  • Preheat oven to 375 degrees.
  • Cream butter and 1 1/4 cup sugar until fluffy.
  • Add eggs one at a time. Do not overmix.
  • In a separate bowl, sift together flour, baking powder, and salt. Add the flour mixture and cream alternately to the butter mixture. End with the flour mixture.
  • Stir in vanilla and then fold in strawberries.
  • Fill greased muffin tins (2 3/4 inches wide by 1 1/8 inches deep) 3/4 full.
  • Sprinkle with granulated sugar.
  • Bake for 30 minutes, or until tester dipped in center comes out clean.
  • Cool and serve!

2 1/2 cups frozen unsweetened tart red cherries
1/2 cup butter or 1/2 cup margarine
1 cup granulated sugar
2 eggs
1 teaspoon almond extract
1/2 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup half-and-half or 1/2 cup milk
granulated sugar

Steps:

  • Cut cherries in halves while frozen.
  • Set aside to thaw and drain.
  • In a large mixing bowl, beat butter and sugar until light and fluffy.
  • Add eggs, almond extract and vanilla, beating well.
  • Crush 1/2 cup cherries with a fork; add to batter.
  • Combine flour, baking powder and salt.
  • Fold in half the flour with a spatula, then half the cream.
  • Add remaining flour and cream.
  • Fold in remaining cherry halves.
  • Portion batter evenly into 12 paper-lined or lightly greased muffin cups (2 3/4 inches in diameter).
  • Sprinkle with sugar.
  • Bake in a preheated 375ยบ oven 20 to 30 minutes, or until golden brown.

I love Quaker Strawberries and Cream Instant Oatmeal but HATE the additives so I decided to make it with fresh ingredients.

3/4 cup chopped strawberries or 4 large strawberries
1 tablespoon turbinado sugar, if you like it sweeter (or more, can substitute white or light brown)
1/4 cup water
3/4 cup whole milk
1/2 cup organic quick oats
1 dash salt
1/4 teaspoon pure vanilla extract

Steps:

  • Chop the berries and coat them with the sugar, set aside.
  • In a small pot bring the water and milk to a simmer.
  • Add in the berry/sugar mixture and bring to a boil.
  • Add the oats and salt, cook 4 minutes.
  • Add the vanilla and cook another minute or until desired consistency.
