Number Of Ingredients 7

2 cups water
1/2 cup lemon juice
12 cups cubed watermelon (about 3-1/2 pounds)
2 cups fresh strawberries or raspberries
2/3 cup sugar
1-1/2 teaspoons minced fresh mint
Small watermelon wedges and fresh mint leaves

Steps:

  • Place 1 cup water, 1/4 cup lemon juice, 6 cups watermelon, 1 cup berries, 1/3 cup sugar and 3/4 teaspoon minced mint in a blender; cover and process until smooth. Transfer to a large pitcher. Repeat with remaining water, lemon juice, fruit, sugar and minced mint., Refrigerate 1 hour or until cold. If desired, press through a fine-mesh strainer. Serve with watermelon wedges and mint leaves.

2 pints strawberries, hulled
1 bunch fresh mint
2 quarts fresh mandarin juice, strained (from 32 mandarins)

Steps:

  • Divide strawberries among eight to ten 10-ounce glasses. Add 2 mint leaves to each glass. Muddle until strawberries are crushed and juicy. Add 4 or 5 ice cubes to each glass, then fill three-quarters full with juice. Garnish with mint sprigs.

5 cups sliced fresh strawberries
3/4 to 1 cup sugar
1/4 cup lemon juice
2 teaspoons grated lemon zest
1 cup ginger ale
Crushed ice
Additional strawberries, optional

Steps:

  • In a blender, process the water, sliced strawberries, sugar, and lemon juice and zest in batches until smooth. Strain the berry seeds if desired. Pour mixture into a pitcher; stir in the ginger ale. Serve in chilled glasses over ice. If desired, garnish with strawberries.

While making a pitcher of my Strawberry Mojitos, I had a request for one without any alcohol. It seemed to be a hit! You can adjust the taste by adding less or more of any ingredient. Refreshing and light, it's perfect on a hot summer day!

2 large limes, quartered
½ bunch mint leaves
7 strawberries, quartered
1 cup white sugar
3 cups carbonated water

Steps:

  • Squeeze the lime quarters into a sturdy glass pitcher. Toss the juiced limes into the pitcher along with the mint, strawberries, and sugar. Crush the fruits together with a muddler to release the juices from the strawberries and the oil from the mint leaves. Stir in the club soda until the sugar has dissolved.   • Mix soft drink mix, sugar and water. Pour into divided ice-cube tray. Place 1 whole strawberry in each cube. Freeze at least 4 hours or overnight.
