Chocolate-Spinach Muffins image

3/4 cup unsweetened applesauce
3/4 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
3 oz. BAKER'S Unsweetened Chocolate, melted
1 egg white
1 tsp. vanilla
1 cup tightly packed baby spinach leaves
1 cup flour
1/2 cup sugar
1 tsp. each baking powder and baking soda
1/2 tsp. salt
2 Tbsp. miniature semi-sweet chocolate chips

Steps:

  • Heat oven to 350°F.
  • Blend applesauce, sour cream, melted chocolate, egg white, vanilla and spinach in blender until smooth.
  • Combine dry ingredients in medium bowl. Add applesauce mixture; stir just until dry ingredients are moistened. (A few lumps can remain.)
  • Spoon into 12 muffin pan cups sprayed with cooking spray. Sprinkle with chocolate chips.
  • Bake 18 to 20 min. or until toothpick inserted in centers comes out clean. Cool 10 min. Remove muffins from pan to wire rack; cool completely.
