Easy Strawberry-Mandarin Asian Salad image

I whipped up this salad when I was making dinner for a date and it got rave reviews! Also works great as a main dish when you add grilled chicken.

6 cups romaine lettuce, chopped
1 cup strawberry, sliced
1 cup mandarin orange, drained
3/4 cup chow mein noodles
3 tablespoons slivered almonds
1/2 cup light balsamic vinaigrette salad dressing

Steps:

  • Combine all in a large salad bowl and mix well to coat salad with dressing. Voila!
  • Would be good with probably most viniagrettes but personally I make mine with Newman's Low-Fat Sesame Ginger Dressing! It really adds an asian twist and is relatively healthy.

10 ounces romaine lettuce (8 cups)
6 ounces cooked chicken breasts, chopped into bite size pieces
1 (15 ounce) can mandarin orange segments, drained or 2 medium oranges, peeled and segmented
2 cups sliced fresh strawberries
1/2 medium red onion, sliced
1/2 cup sliced almonds, toasted
1/2 cup creamy poppy seed dressing

Steps:

  • Toss romaine in large bowl with chicken, orange, strawberries, and onion.
  • Sprinkle with toasted almonds and drizzle with poppyseed dressing.
  • Variation: For a beautiful presentation, layer the ingredients in a clear glass bowl.

3 tablespoons thawed limeade concentrate
1/4 teaspoon pepper
3/4 pound boneless skinless chicken breasts, cut into thin strips
1 tablespoon canola oil
DRESSING:
1/2 cup white vinegar
1/3 cup sugar
1 teaspoon dried minced onion
1 teaspoon ground mustard
1/2 teaspoon salt
1 cup canola oil
1 tablespoon poppy seeds
SALAD:
1 package (6 ounces) fresh baby spinach
2 cups sliced fresh strawberries
1 cup fresh sugar snap peas, trimmed
1 small red onion, chopped
1/2 cup pecan halves, toasted

Steps:

  • In a large bowl, combine limeade concentrate and pepper; add the chicken. Cover and refrigerate for 2 hours., Drain and discard marinade. In a large skillet, saute chicken in oil until no longer pink., Meanwhile, in a blender, combine the vinegar, sugar, onion, mustard and salt. While processing, gradually add oil in a steady stream. Stir in poppy seeds., In a large serving bowl, toss spinach with strawberries, peas, onion, chicken and 1/2 cup dressing. Sprinkle with pecans. Refrigerate leftover dressing.
