I came up with this recipe when I had left over fresh kiwis that I needed to use. It is best served cold and best kept in fridge. This makes 2 double layer small cakes.

1 box instant 3.9 oz pudding mix (vanilla or cheescake)
1 box strawberry cake
3 eggs
1/3 c oil
1/3 c water
2 c cold milk
4 fresh kiwis
1 pkg fresh strawberries

Steps:

  • 1. Prepare instant pudding mix as directed on the box. Blend one kiwi and 1 cup of strawberries together and add to pudding mix. Place in fridge to set.
  • 2. Make strawberry cake as directed on the box. Spread into a 9x13 pan. Bake as directed on box. Let cool after baking then cut into 4 equal pieces.
  • 3. Place 1st layer of cake on serving dish. Apply pudding mixture and arrange sliced kiwi and strawberry on top of pudding. Place second layer of cake. Apply pudding mixture to entire top and sides of cake then garnish with sliced kiwi and strawberries.
  • 4. ***After step 2: To make this more gooey, poke holes in top of cake after it is cooled and apply a thin layer of your favorite flavor of fruit syrup- I used blackberry and it was wonderful!

1 box strawberry cake mix
3 eggs
2 stick real butter, melted, seperate
1 tsp vanilla extract
1 box (16 oz) powdered sugar
3/4 c fresh, chopped strawberries (make sure they aren't wet from washing them)
1 pkg (8 oz) cream cheese, room temperature

Steps:

  • 1. Preheat oven to 350 degrees F. Combine the cake mix, 1 egg, and 1 stick melted butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan. In a large bowl, beat the cream cheese until smooth. Add the 2 eggs, vanilla, and the other stick of melted butter and beat together. Next, add the powdered sugar and mix well. Fold in strawberries. Spread over cake batter and bake for 45 to 60 minutes. Make sure not to over bake as the center should be a little gooey.
  • 2. You can try this with PEACHES too!! I just get peaches in the can. Just make sure that you drain them really well and dice them. I usually add about 1 cup to the mixture. But you could proably add 1 1/2 cups.

1/2 cup Butter, softened
4 large Eggs, divided
1 (8 oz) package Cream Cheese, softened
1 (16 oz) box Confectioners Sugar
3/4 cup chopped fresh Strawberries
Sweetened Whipped Cream (optional)
Strawberry for garnish (optional)

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 9x13 baking pan. In a large bowl combine cake mix, butter and one egg. Press mixture into pan. In a separate bowl, beat cream cheese and 3 eggs at medium speed with an electric mixer until smooth. Gradually beat in confectioners sugar until well combined. Stir in the fresh strawberries. Pour cream cheese batter over the cake mixture. Bake for 35 minutes or until center is set. Cool completely, cut into squares to serve. Garnish with whipped cream and strawberries, if desired.

I had some left over Watermelon, and I didn't want it to go to waste, so I went to www.recipeland.com and found a Watermelon Cake recipe, well I jazzed it up a bit, and might actually try this cake with cantaloupe and Honey Dew too...

1 (18 1/2 ounce) package white cake mix
1 1/3 cups seedless watermelon, cubed
1 (4 ounce) package strawberry kiwi gelatin powder
3 egg whites
1 tablespoon oil (preferrably) or 1 tablespoon vegetable oil (preferrably)
1/4 cup watermelon juice
1/2 cup butter
2 cups powdered sugar
1 (8 ounce) package cream cheese, softened

Steps:

  • Cake:.
  • Grease and flour a bundt pan.
  • In a large bowl, combine dry cake mix, watermelon, gelatin powder, egg whites and oil.
  • Beat until smooth, takes about 3 minutes on high speed.(Some little chunks of watermelon are fine.)
  • Pour in prepared pan and bake at 350F degrees for about 35 minutes or until a toothpick inserted in cake comes out clean.
  • Cool on a wire rack, and frost with the Watermelon Frosting.
  • Frosting:.
  • Beat cream cheese and butter until fluffy.
  • Add sugar and watermelon juice, fold in with a spatula until completely blended.
  • Spread over cake.
  • Garnish with strawberries if desired, or any other fruit of your choice.
