TWO-BERRY TART
A buttery, crumbly crust filled with vanilla-flecked pastry cream is the perfect canvas for showcasing a pile of jewel-like raspberries and strawberries.

Steps:
- Pate Sucree Extra:Pulse flour, sugar, and salt in a food processor to combine. Add butter and pulse just until mixture resembles coarse meal, about 10 seconds. In a liquid-measuring cup, whisk together ice water and egg yolks. With machine running, add egg-yolk mixture in a slow, steady stream just until dough holds together without being wet or sticky, about 30 seconds. To test, squeeze a small amount together; if it is crumbly, add more ice water, 1 tablespoon at a time. Turn dough out onto a piece of plastic wrap and divide in half. Shape each half into a disk, wrap tightly, and refrigerate until chilled, about 1 hour.
- On a lightly floured surface, roll out one disk of dough to a 13-inch round (reserve remaining disk for another use). Fit into a 9-inch round fluted tart pan with a removable bottom. Freeze until firm, about 1 hour.
- Preheat oven to 350 degrees. Line tart shell with parchment, pressing it into corners and edges, then fill with dried beans, rice, or pie weights. Place on a rimmed baking sheet and bake until sides are golden, 20 to 25 minutes. Remove parchment and beans. Continue baking until crust is light golden-brown, 10 to 15 minutes more. Transfer to a wire rack and let cool completely.
- Pastry Cream:In a small bowl, sprinkle gelatin over 1 tablespoon water. Let stand until softened. In a medium saucepan, whisk together sugar, flour, cornstarch, and salt. Whisk in milk, eggs, orange zest, vanilla seeds and bean, and butter. Cook over high heat, stirring occasionally, until mixture comes to a boil. Let boil 1 minute, then remove from heat. Discard vanilla bean. Whisk in gelatin mixture.
- Strain pastry cream into a large heatproof bowl and cover with plastic wrap, pressing it directly onto surface to prevent skin from forming. Refrigerate until chilled, at least 2 hours and up to 2 days.
- Just before using, mix pastry cream with a rubber spatula until smooth. Fold in whipped cream until incorporated. Spread evenly into tart shell; refrigerate until set, about 2 hours.
- Topping:To serve, pile fruit over filling to cover completely.
STRAWBERRY TART

- Special Equipment: 1 pound dried beans, 10-inch tart pan
- For the crust:
- In the food processor combine the butter flour, almonds and salt and pulse, pulse, pulse until it looks like grated cheese, as I like to call the Parmigiano stage. Add the egg yolk and half the water and pulse; the dough should start to come together. If it does not, add the remaining water and pulse until the dough forms into a ball. Dump the "doughball" onto a floured work surface and using the heel of your hand, "schmear" it across the work surface. Repeat this process 1 to 2 more times, then form the dough into a disk, wrap it in plastic wrap and refrigerate for at least 30 to 45 minutes.
- *TIP- this can be done up to a week in advance or frozen for a longer time.
- Preheat the oven to 425 degrees F.
- To roll the crust:
- Remove the dough from the refrigerator about 10 minutes before rolling to let it soften. On a lightly floured work surface, roll the dough to 1/8 to 1/4 inch thick. Lay the dough in the tart pan. Make a small "doughball" with a little of the dough that is hanging over the edge of the tart pan. Dip the dough ball in flour and use is to carefully push the dough into the corners of the tart pan. Once the dough has been pushed into the corners of the tart pan, use the rolling pin to roll over the top edge of the tart pan to cut a clean crisp edge. Line the tart with aluminum foil, be sure to push it into the corners. This will keep the sides of the tart tall and straight and able to hold the filling. Fill the tart with the dried beans. Place in the preheated oven for 12 to 14 minutes. Remove the beans and foil and bake for another 4 to 5 minutes. The dough should be cooked through and lightly browned. Remove from the oven and cool.
- For the pastry cream:
- Place the heavy cream, 1/2 cup of the sugar and the vanilla bean seeds and pod in a saucepan. Whisk to combine and bring to a boil over low heat. While the cream is coming to a boil, combine the eggs and remaining 1/2 cup of sugar in a bowl and the cornstarch and milk in another bowl. Beat with a whisk to a homogeneous mixture, no big lumps of egg white! When the cream comes to a boil, remove it from the heat and discard the vanilla bean pod. *Whisk half of the cream into the egg/sugar mixture and then IMMEDIATELY whisk it back into the pan with the hot cream.
- *This is called tempering and will allow you to combine boiling cream and eggs without making scrambled eggs.
- Return the pan to a medium heat and gradually whisk in the cornstarch/milk mixture. Bring this to a boil to thicken the pastry cream. Stir frequently to prevent scorching. It is necessary to bring this mixture to a boil to cook the starch. If the mixture is not brought to a boil the mixture will feel starchy and gritty. The desired outcome is the consistency of vanilla pudding. YUM! Transfer the mixture to a bowl and chill. This can be done really quickly over an ice bath.
- To assemble the tart:
- Fill the tart shell with the chilled pastry cream. Top with the sliced strawberries. You can arrange the strawberries in circles or in lines; it's up to you! Just make it look pretty. Sprinkle with powdered sugar just before serving.
- Berry delicious!
ROASTED STRAWBERRY TART
Steps:
- Heat oven to 350°F. Line 9- by 13-inch pan with parchment paper, leaving overhang on 2 long sides.
- In bowl, whisk together preserves, honey, vanilla, and salt. Add strawberries and toss to coat. Transfer to prepared baking pan and roast, stirring once, until strawberries are tender and juices start to reduce, but not brown, 40 to 50 minutes. Remove from oven and let cool.
- Increase oven temp to 400°F and line baking sheet with parchment.
- On lightly floured surface, roll out puff pastry to 10-inch square, then transfer to prepared baking sheet. Using sharp knife, gently score border about 3/4 inch from edges, then use fork to prick pastry inside borders.
- Brush border with beaten egg, then bake, rotating halfway through, until golden and puffed, 18 to 20 minutes. If pastry puffs up during baking, once it's out of the oven (but while it's still warm), top with second piece of parchment paper, then baking sheet to flatten. Let cool completely.
- Meanwhile, make filling: Using electric mixer on low speed, combine cream and yogurt, then increase to medium-high speed and beat to form soft peaks. Add confectioners' sugar and vanilla and beat just to combine.
- Spread whipped yogurt mixture on top of baked puff pastry inside borders, then top with cooled roasted strawberries, spooning any juices over top. Serve any remaining berries on the side.
STRAWBERRY TART WITH PASTRY CREAM

- Put the flour, butter, salt and baking powder in a food processor and pulse until the mixture is the texture of coarse cornmeal.
- Transfer it to a large bowl, add the sugar and egg and bring the dough together into a ball, without overworking it.
- Flatten the ball slightly, wrap it tightly in cling film and refrigerate for 30 minutes.
- While the dough is chilling, prepare the lemon pastry cream.
- In a medium bowl whisk together the sugar, egg yolks and grated lemon.
- Add the flour, a couple of tablespoons of milk taken from the total amount and continue beating until well combined.
- Place the remaining milk and lemon zest in a saucepan over medium heat until the milk just comes to a simmer.
- Remove from heat and discard the lemon zest.
- While whisking, slowly add the milk to the egg mixture and return the mixture to the saucepan.
- Cook over medium heat, stirring constantly, until the cream has reached the desired density.
- To prevent a skin from forming, press a sheet of cling film directly onto the surface of the pastry cream. Refrigerate until chilled.
- Finish the tart crust.
- Preheat the oven to 350°F (180°C).
- On a floured work surface, roll out the pastry about ¼ inch (0.5 cm) thick.
- Place it in a 10 inch (26 cm) tart pan and carefully press the dough along the bottom and sides of the pan. With a rolling pin or with your fingers, press along the edge of the pan to remove the excess dough.
- Using a fork, prick the bottom of the pastry shell.
- Bake the crust for 20 to 25 minutes or until golden brown.
- Transfer to a wire rack to cool completely before filling.
- Hull the strawberries and slice them ¼ inch (½ cm) thick.
- Remove the pastry cream from the fridge, whisk until smooth and spread an even layer in the crust.
- Starting from the outside and working your way to the center of the tart, place the strawberries, in an overlapping circular pattern.
- Sprinkle chopped pistachios on top.
- Serve the strawberry tart immediately or refrigerate until ready to serve.

STRAWBERRY CREAM-STUFFED PASTRIES RECIPE BY TASTY

- In a food processor or blender, puree the strawberries until smooth.
- Pour the strawberry puree through a sieve into a medium bowl to remove any seeds and clumps. Chill for 15 minutes, until the puree is cold.
- In a separate large bowl, beat the cream cheese and ½ cup (80 g) of powdered sugar together with an electric hand mixer. Mix in the milk and strawberry puree. Set aside.
- In a small bowl, whisk the beaten egg and water together. Set aside.
- Preheat the oven to 400˚F (200˚C).
- Roll a foot-long (30 cm) piece of aluminum foil into a tube. Repeat with 3 more pieces of foil to make 4 tubes total.
- On a cutting board, roll the puff pastry out to 13 inches (33 cm) by 13 inches (33 cm). Slice the puff pastry lengthwise into 1½ inch-wide (4 cm) strips.
- Wrap 2 of the strips around a foil tube, brushing the edges with egg wash and gently pressing together to adhere. Repeat with the remaining pastry strips and foil tubes.
- Balance the ends of the foil tubes over the edges of a roasting pan or baking sheet so the pastry isn't touching the surface of the pan. Brush egg wash all over the pastry spirals.
- Bake for 25 minutes, until golden brown.
- Let the pastry tubes rest at room temperature for 5 minutes. Gently remove the foil tubes. Transfer the pastry tubes to a baking sheet lined with parchment paper and bake for 5 more minutes. Let cool to room temperature.
- Fill a piping bag or zip-top bag fitted with a round tip with the cream cheese mixture. Pipe the cream cheese filling into the pastry tubes.
- Dust with powdered sugar and drizzle with chocolate syrup.
