Delicious Easy Spinach and Strawberry Salad With Feta image

This is a simple salad to put together but big on flavor! --- you can also make this using salad greens mixed with fresh spinach, I just purchase a smaller bag of prewashed spinach for this, prep time does not include washing and drying the fresh spinach, all salad ingredients may be adjusted to taste --- you will love this salad!

7 -10 cups fresh Baby Spinach (washed, dried and stems removed, or use as much as desired)
5 cups sliced fresh strawberries
1/4 cup toasted sliced almonds (candied almonds are good too!)
1/2 cup crumbled feta cheese (can use more)
1/2 cup vegetable oil
1/4 cup balsamic vinegar (or use raspberry wine vinegar or white wine vinegar)
1/4-1/3 cup white sugar
1 pinch paprika
1 -2 tablespoon poppy seed

Steps:

  • In a large bowl toss the spinach with the strawberries and toasted almonds.
  • In another small bowl whisk together all dressing ingredients, starting with 1/4 cup sugar and adding in more to taste, then pour over the spinach; toss to combine.
  • Sprinkle the feta over the top of salad.
  • Serve immediately.

2 cloves garlic, minced
1 teaspoon honey
1 teaspoon Dijon mustard
¼ cup raspberry vinegar
2 tablespoons balsamic vinegar
2 tablespoons brown sugar
1 cup vegetable oil
1 head romaine lettuce, torn
1 pint fresh strawberries, sliced
1 cup crumbled feta cheese

Steps:

  • In a skillet over medium-high heat, cook the almonds, stirring frequently, until lightly toasted. Remove from heat, and set aside.
  • In a bowl, prepare the dressing by whisking together the garlic, honey, Dijon mustard, raspberry vinegar, balsamic vinegar, brown sugar, and vegetable oil.
  • In a large bowl, toss together the toasted almonds, romaine lettuce, strawberries, and feta cheese. Cover with the dressing mixture, and toss to serve.

1 -2 cup Baby Spinach, loosely packed
4 strawberries
1 -2 tablespoon feta
1 teaspoon red onion
1 tablespoon raspberry balsamic vinegar
2 tablespoons extra virgin olive oil
white pepper
basil, blossoms

Steps:

  • Remove stems from Baby Spinach.
  • Wash, hull, halve and slice Strawberries.
  • Thinly slice Red Onion.
  • Crumble Feta.
  • Combine in a mixing bowl. Set aside.
  • In a blender, or small bowl, combine Extra Virgin Olive Oil and Raspberry Balsamic Vinegar. I use a 2 to 1 ratio, most recipes I have read call for more olive oil and less vinegar than what I use. Mix according to your own taste. Blend for 15 seconds or whisk together.
  • Pour dressing over salad and toss. You only need enough dressing to thinly coat everything. If you have extra in the bottom of the bowl leave it there lifting salad out with tongs. Drizzle any extra on a slice of crusty bread to eat with your salad.
  • Plate and top with fresh ground white pepper and basil blossoms.

1 head romaine lettuce, torn into bitesize pcs
1 pint strawberry, sliced
4 -8 ounces feta cheese, crumbled
1/2 cup sugar
1/2 cup white vinegar
1/2 cup olive oil (or vegi. oil)
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon dry mustard
1 garlic clove, crushed

Steps:

  • Combine vinegar and sugar in a glass dish or jar and microwave on high for 2 minutes.
  • Add oil, salt, paprika, dry mustard and garlic.
  • Shake/stir to combine and chill thoroughly.
  • Combine lettuce and strawberries, add dressing to taste and toss until well coated. Sprinkle with feta cheese.

1 teaspoon olive oil
1/8 teaspoon kosher salt
1/3 cup quinoa, rinsed well and drained
1 qt. loosely packed watercress (about 1 1/2 bunches, trimmed to about 5 in. long)
1 1/2 cups quartered or halved strawberries
1 large Persian cucumber or 1/4 English cucumber, halved lengthwise and thinly sliced into half-moons
1 small spring onion bulb or 2 green onions, cut into 2-in. slivers
1/4 pound feta
liberal sprinkle of sliced roasted almonds
DRESSING
3 tablespoons finely chopped strawberries
1 1/2 teaspoons finely chopped shallot
1 tablespoon finely chopped fresh basil leaves
2 tablespoons white balsamic vinegar
1/2 teaspoon kosher salt $
About 1/4 tsp. pepper $
2 tablespoons extra-virgin olive oil
2 tablespoons canola oil

  • 1. Make salad: Heat oil with salt in a small saucepan over medium heat until fragrant, 2 minutes. Add quinoa and toast, stirring often, until it starts to turn golden in spots -- 4-6 minutes. Stir in 2/3 c water, cover and simmer 15 minutes. Turn off heat and let sit 5 minutes. Pour onto a plate to cool. Can be refrigerated until the next day. 2. Meanwhile, put remaining salad ingredients except cheese and almonds in a wide bowl and set aside. 3. Gently toss quinoa with 2 T dressing. Place on salad plates in a mound. Mix dressing with strawberry/salad ingredients. Surround or cover (your choice) quinoa with salad and sprinkle feta and almonds on the top.

  • Prepare vinagrette by adding all ing in a bowl except oil. Pour oil in long slow steady stream while whisking. Season t.t. with s&p For walnuts melt sugar in a saucepan on med heat. Add walnuts cin and cloves and coat. Bake @ 350 until walnuts are heated through. 5-8 minutes. Dress salad in a bowl and top w/ walnuts, feta and strawberries.
